APPLE CRISP
One of the definitive desserts of fall, apple crisp is easy and economical. Test kitchen tip: Empire, Gala, or Braeburn apples are especially good in this recipe.

Steps:
- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.
APPLE CRISP FRENCH TOAST CASSEROLE

- For the French toast and caramelized apples: Preheat the oven to 275 degrees F.
- Spread the bread cubes on a large baking sheet and bake until lightly toasted, about 15 minutes. Let cool. Adjust the oven to 350 degrees F.
- Combine the sugar, apple cider and lemon juice in a large, high-sided saute pan and bring to a simmer over medium heat. Stir in the Gala and Granny Smith apples and cook, stirring occasionally, until softened and caramelized, about 15 minutes. Add the apple brandy if using; cook a few minutes longer. Using a slotted spoon, transfer the apples to a bowl (you don't want the apples to be too wet) and let cool. Reserve the apple cooking liquid for serving.
- For the streusel: Mix together the butter, salt and sugar in a large bowl until smooth. Add the flour, oats and cinnamon and mix until well combined. Refrigerate for 15 minutes. Squeeze the mixture in your hands to form larger and smaller clumps.
- For the casserole: Butter a 9-by-13-inch baking dish with some softened butter. Whisk the eggs, yolks, vanilla and cinnamon in a large bowl until smooth. Whisk in the half-and-half, then fold in the cooled apples. Add the bread and stir to coat, pressing down to make sure bread is totally submerged. Let sit for 10 minutes.
- Transfer the apple-bread mixture to the buttered baking dish, pressing down to make sure the top is an even layer. Scatter the streusel evenly over the top. Cover with foil and bake for 30 minutes. Uncover and continue baking until puffed and lightly golden brown, another 30 minutes or so. Remove from the oven and let cool slightly.
- Reheat the reserved apple cooking liquid. (If very thin, simmer briefly over medium heat until reduced to a syrup; if there isn't much, add some apple cider and simmer briefly.) Turn the heat to low and whisk in the cold butter, piece by piece, until emulsified. Serve with the French toast.

FRENCH APPLE CRUMBLE
I found this recipe while browsing through a favorite french blog of mine called Chocolate & Zucchini. It originally calls for 5 apples and two mangoes, and one day I'd love to try it with them. But for now I've only made it with the apples, and it's still sensational and easy. You'll notice there's no cinnamon in the recipe--I don't think the french relate apples with cinnamon the way we Americans seem to. You may add it if you wish, but I think they're on to something. It's amazing without any cinnamon.

- Preheat oven to 350.
- Cream butter and sugar till light and fluffy. (I just used a spoon.) Add in oatmeal, flour, and chopped almonds, and mix again until mixture resembles course crumbs. It's easiest to accomplish this by getting your (clean) fingers in there and really going at it.
- Grease a square 8 by 8 or 9 by 9 baking dish with cooking spray. Peel, core, and dice apples, tossing with the nutmeg before arranging in baking dish. I used a few dashes of lemon juice to stop the apples from browning while I chopped them. Sprinkle with crumble mixture and bake for about 40 minutes. You may want to cover with foil for the last 10 minutes or so to ensure that it doesn't get too brown.

This recipe was in a box of recipes I bought at a neighbors estate sale. The prep. time is a guess since I didn't time how long it took me to prepare it.

- For the filling:
- Combine dry ingredients.
- Add apples, vanilla and water.
- Mix well.
- Put in a greased 8x8 baking dish.
- Dot with butter.
- Let stand while preparing topping.
- For the topping:.
- Combine all ingredients.
- Mix until smooth.
- Drop batter in 9 portions on top of apple mixture.
- Batter spreads during baking.
- Bake at 375* for about 40 minutes or until applea are done and topping is a golden brown.
- Serve warm plain or with whipped cream if desired.
WARM FRENCH APPLE CRISP
Opening a couple of cans of fruit for a dessert suites me fine. The taste is terrific. Leftovers are good cold or can be heated up in the microwave. Don't forget the cheese. It adds a texture and taste that compliment the apples.
