KOURABIEDES - GREEK CHRISTMAS COOKIES
Kourabiedes are delicious, melt-in-your-mouth butter almond cookies and a staple in Greek households during Christmas time.

Steps:
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper
- Add butter and 1 cup powdered sugar to bowl of electric mixer. Beat on medium speed with the paddle attachment until very light and fluffy (about 15-20 minutes).
- Add egg yolk, brandy, and vanilla. Beat until well incorporated.
- Add roasted almonds beat until mixed in.
- Sift flour and baking powder in a large bowl. Gradually add flour to butter mixture until a dough forms.
- Roll the dough into 2 tablespoon-size balls, or roll out dough and cut into crescents, stars, or whatever shape you like.
- Place cookies on prepared baking pan and bake 20-25 minutes until light golden, rotating pan half way.
- Use a sieve to evenly spread about half of the powdered sugar in a large deep baking pan. Once cookies are out of the oven, spray with blossom water. Then, carefully place each cookie in powdered sugar lined pan. Cover cookies with remaining powdered sugar.
- Cool completely and transfer to serving platter.
- Enjoy!

Steps:
- Preheat the oven to 400 degrees Fahrenheit.
- Grease cookie sheets.
- In a medium bowl, cream together the butter, sugar and egg until smooth.
- Stir in the vanilla and almond extracts.
- Blend in the flour to form a dough. You may have to knead it by hand at the end.
- Take about a teaspoon of dough at a time and roll it into balls, logs or S shapes.
- Place cookies 1 to 2 inches apart onto the prepared cookie sheets.
- Bake for 10 minutes in the preheated oven, or until lightly browned and firm.
- Allow cookies to cool completely.
- Dust with confectioners' sugar.

GREEK BUTTER COOKIES
Steps:
- Preheat oven to 350 degrees. Using an electric mixer, beat butter until creamy. Add egg, vanilla, baking powder, 4 teaspoons confectioners' sugar and walnuts. Add half the flour, and mix well.
- Turn dough onto a board or counter. Knead in the remaining flour until the mixture is smooth and no longer sticky. Divide dough into quarters, and roll one-quarter into a log about an inch in diameter. Cut diagonally into 1 1/2-inch pieces. Put the pieces on a lightly greased cookie sheet 1 1/2 inches apart. Repeat with the remaining dough.
- Bake cookies 25 to 30 minutes, or until the bottoms are lightly browned. Cool, and then dust generously with confectioners' sugar.

- Preheat oven to 375 degrees. Line baking sheets with parchment paper or baking mats; set aside.
- In a stand up mixer fitted with paddle attachment, beat together the butter and sugar on medium speed for 5 minutes. Add in the eggs, vanilla, and almond extract, and mix to combine, scrapping down sides of bowl with a rubber spatula. Add the flour and mix on slow until just combined.
- Use a cookie scoop to measure out equal portions of cookies and place on baking sheet leaving about an inch and a half between each cookie. You can either bake as is or roll into balls.
- Bake for 12-14 minutes until dough is just set. The cookie will not brown much and will remain a light color. Let cool on cookie sheet for 5 minutes before removing to a wire rack and cooling completely.
