FRANCISCO'S YUCCA SOUP

Francisco Dos Santos, one of the chefs in the Westport studio commissary, prepares this savory soup using yucca root, a South American staple.

Number Of Ingredients 14

3 whole boneless skinless chicken breasts
4 garlic cloves, finely chopped
Coarse salt and freshly ground pepper
12 cups water
2 to 3 tablespoons extra-virgin olive oil
4 teaspoons corante (Brazilian paprika)
1 large onion, thinly sliced (about 2 1/2 cups)
6 medium plum tomatoes, coarsely chopped (about 3 cups)
2 pounds yucca, peeled and cut into 1/2-inch cubes
4 cups Homemade Chicken Stock Homemade Chicken Stock
1/4 cup finely chopped fresh flat-leaf parsley
Pinch ground coriander
Pinch ground cumin
1 bunch scallions, white and light green parts, thinly sliced crosswise (about 1 cup)

Steps:

  • In a large stockpot, combine chicken, 1 garlic clove, a large pinch of salt, and a pinch of pepper. Cover with 12 cups water. Bring to a boil. Reduce to a simmer, and cook, skimming occasionally, until chicken is cooked through, about 10 minutes. Remove chicken, and let stand until cool enough to handle. Strain poaching liquid through a fine sieve; set aside. When chicken is cool, tear into bite-size pieces; set aside.
  • In a large stockpot, heat oil over medium heat. Add remaining 3 garlic cloves, and cook for 2 minutes. Stir in paprika, a pinch of salt, and a pinch of pepper. Cook, stirring, for 1 minute. Add onion and tomatoes, and cook 2 minutes more. Add yucca, and cook, stirring occasionally, for 5 minutes. Add stock and poaching liquid. Bring to a boil. Cover and reduce to a simmer. Cook, stirring occasionally, for 25 minutes.
  • Add reserved chicken, parsley, a pinch of salt, a pinch of pepper, coriander, cumin, and scallions. Simmer, stirring occasionally, until chicken has fallen apart and yucca is soft and partially dissolved, 1 to 1 1/2 hours more. Taste and adjust for seasoning.

I grew up in the Canal Zone and sancocho is a must for large family meals. Sancocho is a Latin chicken soup with cilantro and yuca (or cassava). Keep in mind, there are a variety of recipes out there this is just the one my nanny used to make us.

9 cups water
1 whole chicken
2 plantains, peeled and cut into 2-inch pieces
1 onion, chopped
½ cup chopped fresh cilantro
5 cloves garlic, chopped
1 ½ teaspoons salt
3 pounds yuca (cassava) roots, peeled and cut into 1-inch cubes
6 small red potatoes, quartered
1 (15.25 ounce) can corn, drained

Steps:

  • Combine water, chicken, plantains, onion, cilantro, garlic, and salt in a large pot. Bring to a boil. Reduce heat to medium; cook until chicken is longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).
  • Remove the chicken and let cool. Add yuca, potatoes, and corn to the soup; cook over medium heat until yuca and potatoes are softened, about 30 minutes.
  • Discard chicken skin and bones. Place meat back into the soup; stir to combine.

Like French fries? Then you will love this Latino version of an American favorite! Treat yuca just like you treat potatoes. Yuca can also be used to make a scrumptious alternative to home fries for breakfast.

2 pounds yuca, peeled, and cut into 4 inch sections
2 quarts vegetable oil for frying
salt to taste

Steps:

  • Place the yuca into a large pot, and add water to cover. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the yuca can be pierced easily with a fork, 20 to 30 minutes. Drain, and allow to steam for several minutes until cool enough to handle. Cut the yuca into french fry-sized sticks, discarding the fibrous core.
  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Fry the yuca in batches until golden brown and crispy, about 5 minutes per batch. Remove with a slotted spoon, and drain in a paper towel-lined bowl. Toss with salt to taste, and serve hot.

CRISPY YUCA FRIES



Crispy Yuca Fries image

Thanks to their superior fiber content and lower glycemic index, these crispy yuca fries are often presented as a healthier alternative to fried potatoes, but you might find the roles reversed. They really are that good and do a great job of bridging the gap between regular fried potatoes and sweet potato fries. Serve with ketchup or any kind of aioli.

1 yuca (cassava) root
olive oil for frying

Steps:

  • Peel most of the yuca, trimming off the tough end. Cut yuca in thirds. Stand each section on its end and carefully cut lengthwise into quarters.
  • Place yuca in a saucepan of cold water. Bring to a boil over high heat; reduce heat to medium and simmer until just barely tender, 5 to 6 minutes. Drain yuca on a paper towel-lined plate. Let cool to room temperature.
  • Heat olive oil in a skillet over medium-high heat. Add yuca and fry until golden brown and crispy, 2 to 3 minutes per side. Transfer to a paper towel-lined plate and let rest for a few minutes before serving.
