Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish or jelly roll pan with parchment paper.
- Mix oats, walnuts, brown sugar, dried fruit, all-purpose flour, whole wheat flour, wheat germ, cinnamon, and salt together in a bowl.
- Whisk oil, honey, egg, and vanilla extract together in a separate bowl; stir into oats mixture until batter is just mixed. Spread batter into the prepared baking dish.
- Bake in the preheated oven until golden brown around the edges, 20 to 25 minutes. Cool slightly on a wire rack; cut into 12 bars while still warm using a pizza cutter.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Spread oats and coconut flakes onto a rimmed baking sheet.
- Bake in the preheated oven for 8 minutes; stir oats and coconut and rotate baking sheet. Continue baking until oats and coconut are toasted, about 8 more minutes.
- Whisk honey, coconut oil, vanilla extract, and cinnamon together in a bowl until smooth. Add oat mixture to honey mixture and stir until evenly coated.
- Line the baking sheet with a silicone liner or parchment paper. Spread oat mixture evenly onto baking sheet.
- Bake in the oven until granola is toasted, 8 to 15 minutes. Stir granola and transfer liner and granola to a wire rack to cool completely.

GRANOLA BREAD
A hearty, flavorful breakfast loaf perfect for those rushed, on-the-go breakfast eaters.

Steps:
- In the bowl of a stand mixer using whisk attachment, mix yeast with the water until yeast is dissolved. Replace whisk attachment with paddle attachment and add in honey, oil and cinnamon.
- Replace paddle attachment with dough hook. Add flours, granola and raisins and mix until flour is fully incorporated and dough begins to pull from the sides. No kneading is necessary. Pour dough in a lightly-greased large bowl, cover and let rise about 2 hours or until doubled in size.
- Cover bowl with risen dough lightly with plastic wrap and refrigerate overnight.
- Take refrigerated dough and shape into an oval using your hands. Place oval-shaped dough in a lightly-greased 8 x 5-inch loaf pan. Cover and let rise about 2 hours or until doubled in size.
- Preheat oven to 375°F. Once dough has risen, bake on middle rack about 30-40 minutes or until golden brown on top. Allow to cool completely on wire rack before slicing.

HONEY, GRANOLA, & YOGURT BREAD
I got this recipe with the booklet that came with my Breadman Machine. It makes a moist, slightly dense, chewy loaf that I really enjoy. I sometimes add in some raisins, depending on how many raisins were in the granola. The cooking time will depend on the cycle of your bread machine.

- In a small saucepan, combine the remaining 1 cup water, honey, and butter. Place over medium heat until butter is melted. Remove from heat and let cool for about 5 minutes (to about 120-130°F).
- Meanwhile, in the bowl of a stand mixer fitted with a dough hook, combine the yeast, whole wheat flour, rye flour, and salt. Pour in the warm water mixture and mix until combined. Add the rolled oats, flaxseed, sunflower seeds and soaked bulger wheat and mix until combined.
- Add the all-purpose flour a few tablespoons at a time until the dough clears the bowl (you may not use all 1 ½ cups of the flour). Continue kneading in the mixer until the dough is smooth and elastic, about 3-4 minutes. This dough is heavier than many bread dough, but you should be able to pull it a bit without it immediately breaking.
