This is my "when I'm home all day" recipe. I use the dough cycle and bake it in 2 loaf pans but you can just use the whole wheat cycle and bake it in the machine as well. I love this bread.

1 1/4 cups water
1/4 cup butter
1 egg
2 1/2 tablespoons sugar
1 1/2 teaspoons salt
2 2/3 cups bread flour
1 1/3 cups whole wheat flour
2 teaspoons yeast

Steps:

  • Add ingredients in the order given to bread machine.
  • Set on dough cycle if baking in oven, otherwise set on whole wheat/2 lb.
  • After dough cycle is done remove dough from pan and flour a work surface lightly. Flour the top surface of the dough.
  • Punch down the dough, rolling it into a length equal to 2 greased loaf pans. This might take some work, the dough holds a lot of air. Squeeze and roll the air bubbles out.
  • When you have a roll double the length of of a pan cut it in half and place in the greased pans. Cover with a tea towel and set aside in a warm place to rise until doubled in size.
  • Rising usually takes about 45 minutes.
  • Preheat oven to 350 degrees.
  • Bake loaves for 20 to 25 minutes, until browned. Turn out onto a rack and cool.

2 teaspoons dry yeast
1 cup lukewarm water
1 tablespoon sugar or 1 tablespoon honey
1 1/2 teaspoons salt
3 cups flour
cornmeal
cooking oil

Steps:

  • Dissolve yeast in water with sugar.
  • Let froth.
  • Add salt& flour, mix well.
  • Knead, adding more flour as necessary.
  • Let rise till doubled.
  • Punch down.
  • Divide into 6 equal portions& let rise for 15 minutes.
  • Preheat oven to 475F.
  • Roll each bread to 1/2-inch.
  • Sprinkle cornmeal on greased cookie sheet& bake for 4-5 minutes on each side or until puffed up.
  • Wrap immediately in a moist dishtowel for three to four minutes.
  • (You can double your recipe and freeze or refrigerate the bread) 2.
  • Defrost your pita's and heat them up in a frying pan turning often so they don't burn.

Another simple basic bread recipe for the thermomix. This dough can be made into a loaf or divided up for dinner rolls.

200 g water
400 g bread flour (white, or a mix of whole wheat and white)
1 (1/4 ounce) packet instant yeast (or 30g fresh yeast)
1 teaspoon salt
1 teaspoon sugar
50 g olive oil

Steps:

  • Lightly oil a loaf pan, or line a baking sheet with parchment paper.
  • Place water in TM bowl. Cook 4 minutes/50 degrees/speed soft.
  • Add all remaining ingredients. Mix 20 seconds/speed 3 to combine. The mixture should form a ball and the dough will begin to clean the sides of the TM bowl. If the dough is too dry (a common problem if using heavy organic flours) add more water a teaspoon at a time, mixing for two or three seconds after each addition.
  • Set the timer for 1 minute 30 seconds. Set to Closed Lid position. Press Wheat button. The mixture should end up soft and pliable and slightly tacky.
  • Remove TM lid. Turn TM bowl upside down and undo base unit. The dough will drop out, bringing the blades with it. Remove blades and gather the dough into a ball.
  • Press dough lightly into the prepared pan, or shape rolls as desired. Brush the loaf or rolls with olive oil.
  • Cover with a tea towel and set in a warm place to rise until doubled, about one hour.
  • Bake at 425 degrees F 20-30 minutes for a loaf, 10-12 minutes for rolls - the cooked bread should be golden brown, and sound hollow when tapped.

6 tablespoons warm water
1 1/2 teaspoons active dry yeast
1 teaspoon sugar
8 ounces all-purpose flour
2 teaspoons baking powder
1 pinch salt
2 -3 tablespoons cooking oil (30 -44 ml)

Steps:

  • Mix together warm water, yeast,sugar in bowl.
  • Sift together flour. baking powder, & salt into another bowl.
  • Stir to mix & make a well in centre.
  • Add yeast mixture & enough water to make a smooth , malleable but firm dough.
  • dough must not be too sticky or too stiff.
  • Cover dough with cloth and allow to stand for 1 hour allowing dough to rise.
  • when risen, pinch off golf size portions of the dough
  • Form into balls in your hands.
  • Roll out balls (1 by one )on a floured board into thin flat circles.
  • Brush or spray griddle with oil & heat until hot.
  • Cook the roti one at a time until brown on both sides for about 1 1/2 - 2 mins per side.
  • As you cook the roti, make sure the griddle stays coated with oil.
  • Keep warm until ready to serve.
  • To serve fill centre of roti with curry of choice, fold over, wrap, eat & enjoy.

1 1/4 ounces tequila
1 ounce triple sec
3 1/4 ounces cranberry juice
5 ice cubes
granulated sugar

Steps:

  • Moisten rim of margarita or martini glass with some cranberry juice.
  • Hold glass inverted and dust exterior portion with some granulated sugar so it sticks to the juice on the outside rim.
  • Add ice cubes to a cocktail shaker and top with tequila, triple sec, and cranberry juice.
  • Replace lid and shake vigorously.
  • Pour into prepared glass and serve.
  • Salud!

5 cups all-purpose flour or 5 cups unbleached hard-wheat flour
1/4 cup granulated sugar
2 teaspoons salt
1 package active dry yeast
1 1/2 cups milk
1/4 cup butter
2 eggs
1 egg white, lightly beaten with
1 tablespoon water
sesame seeds

Steps:

  • In a large mixing bowl combine 1 cup of the flour, sugar, salt, and dry yeast.
  • Heat the milk and butter in a pan just until the milk is warm.
  • The butter does not need to melt.
  • Add the eggs and the warm milk mixture to the flour mixture.
  • Mix very well until thoroughly moistened, and beat with a wooden spoon for about 5 minutes.
  • Stir in the remaining flour to form a stiff dough.
  • Turn out on a floured board, and knead the dough until it is quite smooth and elastic, about 5 minutes.
  • Work into a ball, place in a buttered bowl, and turn to coat with butter on all sides.
  • Cover and let rise in a warm, draft-free place until light and doubled in bulk, 1 to 1 1/2 hrs.
  • Punch the dough down and divide into six equal portions.
  • Roll each of these portions into a thin cylinder about 8 to 10 inches long.
  • Take three strips and braid them together.
  • Place the braid on a baking sheet, which should be buttered or sprinkled with cornmeal.
  • Braid the remaining three strips and place about six inches away from the other loaf.
  • For a more spectacular loaf, make a braid of three large strips and then a braid of three smaller strips, and put one on top of the other.
  • Cover the loaves and let rise in a warm, draft-free space until doubled in bulk, which will take another 1 1/2 hrs.
  • Brush with the egg white and water, sprinkle lavishly with sesame seeds.
  • If you've made two smaller loaves, bake in a preheated 375 F oven for 35-40 minutes or until golden brown.
  • The single, larger loaf will need a good hour in the oven.
