1 pkg (16 oz.) ziti pasta
2 can(s) (10 oz. ea.) refrigerated alfredo sauce
8 oz sour cream
2 eggs, slightly beaten
15 oz ricotta cheese
1/2 c grated parmesan cheese, divided
1/4 c grated romano cheese
1/4 c minced fresh parsley
1 3/4 c shredded part-skim mozzarella cheese

Steps:

  • 1. Cook ziti according to package directions; drain and return to the pan.
  • 2. Stir in Alfredo sauce and sour cream. Spoon half of this mixture into a lightly greased 3-qt. baking dish.
  • 3. In a small bowl, combine the eggs, ricotta, 1/4 cup of the Parmesan cheese, the Romano cheese and parsley; spread over pasta. Top with remaining pasta mixture; sprinkle with mozzarella and remaining Parmesan.
  • 4. Cover and bake in a preheated 350-degree oven for 25 minutes or until thermometer reads 160 degrees.
  • 5. Uncover; bake 5-10 minutes more or untl bubbly. Serve immediately.

1-1/2 pounds (about 7-1/2 cups) uncooked ziti or small tube pasta
2 jars (24 ounces each) marinara sauce
1 jar (15 ounces) Alfredo sauce
2 cups shredded part-skim mozzarella cheese, divided
1/2 cup reduced-fat ricotta cheese
1/2 cup shredded provolone cheese
1/2 cup grated Romano cheese
TOPPING:
1/2 cup grated Parmesan cheese
1/2 cup panko bread crumbs
3 garlic cloves, minced
2 tablespoons olive oil
Optional: Minced fresh parsley or basil, optional

Steps:

  • Preheat oven to 350°. Cook the pasta according to the package directions for al dente; drain., Meanwhile, in a large saucepan, combine the marinara sauce, Alfredo sauce, 1 cup mozzarella and the ricotta, provolone and Romano. Cook over medium heat until sauce begins to simmer and cheeses are melted. Stir in cooked pasta; pour mixture into a greased 13x9-in. baking dish. Top with remaining mozzarella cheese., In a small bowl, stir together Parmesan, bread crumbs, garlic and olive oil; sprinkle over the pasta., Bake, uncovered, until mixture is bubbly and topping is golden brown, 30-40 minutes. Let stand 10 minutes before serving. Garnish with fresh parsley or basil if desired.Freeze option: Cool the unbaked casserole; cover and freeze. To use, partially thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Preheat oven to 350°. Cover casserole with foil; bake 50 minutes. Uncover; bake until heated through and a thermometer inserted in center reads 165°, 15-20 minutes longer.

1/2 cup chopped green pepper
1/2 cup shredded carrots
2 garlic cloves, minced
2 cans (14-1/2 ounces each) Italian diced tomatoes
1 can (15 ounces) crushed tomatoes
1 cup vegetable broth
1/8 teaspoon crushed red pepper flakes
8 ounces uncooked ziti or small tube pasta
1 cup (8 ounces) part-skim ricotta cheese
1/2 cup shredded provolone cheese
1/4 cup loosely packed basil leaves, thinly sliced
1 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese

Steps:

  • In a large nonstick skillet coated with cooking spray, cook the onion, green pepper and carrots until crisp-tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth and pepper flakes; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. , Cook ziti according to package directions; drain. 1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
1 1/4 cups shredded provolone cheese
1 1/4 cups shredded mozzarella cheese
1 1/4 cups shredded swiss cheese
2 tablespoons grated parmesan cheese
2 egg yolks, beaten
8 ounces ziti pasta
salt
ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Butter a 2 quart ovenproof casserole dish; set aside.
  • Cook pasta in a large pot of boiling salted water until al dente. Drain.
  • Meanwhile, bring half-and-half, basil, and crushed red pepper to a simmer in a heavy, large saucepan over medium high heat. Add cheeses 1 handful at a time, stirring constantly until cheeses are melted and smooth. Remove from heat, and stir in egg yolks. Season with salt and black pepper to taste. Mix in pasta. Spoon into prepared dish.
  • Bake until heated through, approximately 10 minutes. Serve hot.

While the pasta is cooking combine the ricotta, provolone, mozzarella, Parmesan, pepper, parsley, and basil in a medium bowl.
  • Drain the pasta and return it to the pot. Pour some sauce into an 8×8″ baking dish, just enough to coat the bottom. Add about a third of the cooked pasta, and top it with some sauce. Using a tablespoon, drop scoops of the cheese mixture over the top of the sauce, about 5-6 scoops.
  • Top the cheese with another layer of pasta followed by some sauce. Scoop the remaining cheese over the top of the sauce and add the rest of the pasta. Add the rest of the sauce over the top. It may seem like there is way too much cheese, so be generous with your scoops. Once the ziti is baked those scoops of cheese will turn into the most decadent pockets of ooey-gooey cheese.
  • Top the ziti with the rest of the shredded provolone and mozzarella cheese. Cover the baking dish with foil and transfer it to the oven. Bake the ziti for 15 minutes. Remove the foil and bake it for another 5 to 10 minutes, or until the cheese on top is melted and the ziti is bubbling around the edges. Let the ziti rest for a few minutes before serving with extra grated parmesan cheese on the side.
