Want a curry without too many calories? Use fat-free Greek yogurt instead of cream for a healthy korma that will give your local takeaway a run for its money

1 onion, chopped
2 garlic cloves, roughly chopped
thumb-sized piece ginger, roughly chopped
4 tbsp korma paste
4 skinless, boneless chicken breasts, cut into bite-sized pieces
50g ground almonds, plus extra to serve (optional)
4 tbsp sultanas
400ml chicken stock
¼ tsp golden caster sugar
150g pot 0% fat Greek yogurt
small bunch coriander, chopped

Steps:

  • Put 1 chopped onion, 2 roughly chopped garlic cloves and a roughly chopped thumb-sized piece of ginger in a food processor and whizz to a paste.
  • Tip the paste into a large high-sided frying pan with 3 tbsp water and cook for 5 mins. Add 4 tbsp korma paste and cook for a further 2 mins until aromatic.
  • Stir 4 skinless, boneless chicken breasts, cut into bite-sized pieces, into the sauce. Add 50g ground almonds, 4 tbsp sultanas, 400ml chicken stock and ¼ tsp golden caster sugar.
  • Give everything a good mix, then cover and simmer for 10 mins or until the chicken is cooked through.
  • Remove the pan from the heat, stir in a 150g pot Greek yogurt and some seasoning, then scatter over a small bunch of chopped coriander and more ground almonds, if using. Serve with brown or white basmati rice.

Kurma is a creamy, mild curry from North India. This is the Kerala Muslim version of the northern classic, taught to me by a Mappila woman named Haseena Sadick. Her version has rich, layered flavors, and it's thickened with a coconut and cashew paste.

1/4 cup grated unsweetened coconut
1 1/2 tablespoons raw cashew pieces
1 tablespoon white poppy seeds (optional)
5 tablespoons vegetable oil
1 1/2 cups thinly sliced shallots or onion
2 teaspoons minced garlic
2 teaspoons minced ginger
2 teaspoons finely chopped fresh green chilies (serrano or Thai)
1 cup chopped tomato
3 tablespoons coarsely chopped cilantro leaves, plus more for garnish
6 teaspoons coriander
1 teaspoon cumin
1/2 teaspoon black pepper
1/4 teaspoon cayenne
1/4 teaspoon turmeric
1 teaspoon Garam Masala (see below)
1 1/2 tablespoons salt
2 tablespoons plain yogurt
2 pounds boneless skinless chicken thighs and breasts, trimmed and cut into 1-inch pieces
4 whole pieces star anise
2 teaspoons fennel seeds
2 teaspoons ground cinnamon
2 teaspoons ground clove
2 teaspoons ground cardamom
1 teaspoon ground nutmeg

Steps:

  • In a mini food processor or blender combine the coconut, cashews, poppy seeds, and 1/3 cup water. Grind thoroughly to form a smooth paste like pesto. (A mini processor works best for this.) Set aside.
  • In a wide deep pan heat 3 tablespoons of the oil over medium-high heat. Fry 1 cup of the shallots until light brown. Stir in the garlic, ginger, green chili, and fry for 1 minute. Add the tomato, 3 tablespoons cilantro, ground masala, Garam Masala, salt, and 1/2 cup water; fry until the tomato breaks down and forms a paste.
  • Add the yogurt and stir until it dissolves. Add the chicken and bring to a boil. Reduce the heat to medium-low, cover, and simmer for 30 minutes, until the chicken is cooked through.
  • Fry the remaining 1/2 cup shallots in the remaining 2 tablespoons oil until very brown and crisp. Remove them to a plate.
  • Add the coconut and cashew paste to the chicken and simmer for 10 more minutes. Check the salt.
  • Place the star anise in a coffee grinder and grind to a fine powder. Measure out 2 teaspoonfuls, reserving the rest for another use.
  • Grind the fennel seeds in the coffee grinder to form a fine powder.
  • Combine all the ingredients and store in an airtight jar away from the light. It will keep for 6 months.

1 teaspoon salt
1 teaspoon turmeric
1 teaspoon ground cumin
1 pound chicken, cooked
1 cup water
1 1/2 teaspoons garam masala, or to taste
1/4 pint heavy cream
2 teaspoons finely chopped coriander

Steps:

  • Heat oil in a large deep frying pan adding chopped onions and fry for 4 to 5 minutes on a medium heat until the onions are slightly brown. Add the garlic and ginger and cook for a further 1 or 2 minutes. Add the salt, turmeric and ground cumin.
  • Turn up the heat and further cook for another 1 minute then add the chicken. It is very crucial that spices are mixed within the pan at this point and stirred to ensure that the chicken cooks with texture and flavor. Add water after stirring the chicken into the spices. Turn down the heat slightly and stir in the garam masala and cream cook for a further 5 minutes. Serve sprinkled with green coriander.

1 pound boneless skinless chicken
2 tablespoons vegetable oil
1/2 cup finely chopped onion
1 teaspoon grated fresh ginger
1 to 2 cloves garlic, finely chopped
1 jar (15 ounces) Patak's® Korma Curry Cooking Sauce
1/4 cup chopped roasted cashews for garnish

Steps:

  • Dice chicken into 3/4-inch pieces. Set aside.
  • Heat oil in a heavy skillet on medium-high heat. Add onions and fry until golden brown. Stir in ginger and garlic. Add chicken pieces and fry until chicken starts to turn white, about 5 to 7 minutes.
  • Stir in the simmer sauce and bring to boil. Reduce heat, cover and simmer for about 10 minutes; stir occasionally.
  • Transfer to a serving dish. Garnish with the cashews. Serve with rice or flat bread.

1 tablespoon oil
4 cinnamon sticks
4 -8 cardamom pods
6 -10 cloves
1 onion, sliced thinly
2 garlic cloves, crushed
2 chicken breast halves, cut into 4 pieces
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/2 teaspoon crushed dried hot pepper
1/2 cup tomato sauce
1/2 cup water
1/2 cup buttermilk
1/2 teaspoon ground cumin
1 tablespoon fresh coriander, chopped (or 1/2 tsp dried)

Steps:

  • Heat oil over medium-high heat, and add cinnamon, cardamom and cloves.
  • When the aroma is released, reduce heat, and add the onion and garlic, cook until onion is softened.
  • Add chicken and cook for about 5 minutes, then add salt, ground cinnamon, ground cardamom, ground cloves and hot pepper.
  • Mix well so the spices cover the chicken.
  • Add tomato sauce and water, cover and cook for 10 minutes.
  • Add buttermilk, ground cumin and coriander, cover and cook for 5 minutes.
  • Serve with rice or naan bread.

PADMA LAKSHMI'S CHICKEN KORMA



Padma Lakshmi's Chicken Korma image

Don't be put off by the number of ingredients in this lovely korma (and quite different from other kormas posted) from Padma Lakshmi's "Tangy Tart Hot & Sweet." Most of them require little preparation, although this is definitely a time when you will want to assemble all ingredients ahead of time to ease preparation. All of the spices can be found at Indian markets or spice markets. The tamarind pulp can be purchased in compressed bricks at ethnic markets; Lakshmi prefers Thai tamarind as it tends to be less dry. Serve the stew on a bed of plain basmati rice. By way of the Chicago Tribune. A lot of the prep can be done while the chicken is marinating, thus shortening the total cooking time.

2 lbs boneless skinless chicken breasts, cut into stew chunks
2 tablespoons white wine vinegar
1 ounce tamarind pulp (a golf ball sized piece)
1 cup boiling water
10 green cardamom pods (seeds removed from pods, pods discarded)
6 cloves
3 star anise, whole
1/2 teaspoon black peppercorns
4 plum tomatoes, each cut into 8 pieces
1 pint half-and-half
3 tablespoons sesame oil
3 -4 hot red chili peppers, dried
3 black cardamom pods
1 cinnamon stick
3 garlic cloves, minced
9 shallots, thinly sliced
1/2 cup raw cashews, crushed in a mortar and pestle
1 inch piece gingerroot, minced
1 teaspoon garam masala
1 teaspoon salt

Steps:

  • Combine the chicken and vinegar in a large bowl; cover; refrigerate 30 minutes.
  • Place tamarind in a small bowl; cover with boiling water; let stand 20 minutes.
  • Combine the green cardamom seeds, cloves, star anise and peppercorns in a mortar and pestle or spice grinder; grind until combined.
  • Mix the ground spices into the tamarind gravy; set aside.
  • Combine the tomatoes and half-and-half in a food processor or blender; puree; set aside.
  • Heat the oil in a deep, heavy skillet over medium heat; stir in the red chilies, black cardamom and cinnamon stick and cook 2 minutes.
  • Add the garlic, shallots, cashews and ginger; cook, stirring, 6-8 minutes.
  • Add the reserved tamarind and ground-spice mixture; cook, stirring, 2 minutes.
  • Add the reserved tomato mixture; turn heat to medium-low.
  • Stir in the garam masala; cook, until mixture thickens, about 15-20 minutes. Season with the salt.
  • Add the chicken; cook, stirring, 7 minutes.
  • Note: When soaking the tamarind, push down on the pulp with the back of a spoon; the tamarind will begin to break down; after soaking time is over, break up the tamarind with fingers or a spoon, then push the mixture through a fine-mesh sieve.

  • Cover and cook for 3 minutes on HIGH power level.
  • Add cashew paste, garam masala powder and salt.
  • Cook for 12 minutes on MEDIUM HIGH power level.
  • Drizzle cream, sprinkle garam masala powder and garnish with fried onions.
  • Serve immediately and enjoy!

40 g cashews
3 garlic cloves
4 cm fresh ginger
1 onion, peeled and quartered
10 g oil
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon salt
1/2 teaspoon turmeric powder
1/4 teaspoon chili powder (optional)
140 g cream (or hung yogurt)
200 g water
1 tablespoon tomato puree
2 bay leaves, fresh
6 cardamom pods
4 whole cloves
5 cm cinnamon sticks
1 teaspoon oil
1000 g chicken, boneless and skinless cut into bite sized pieces
1 teaspoon garam masala (optional)

Steps:

  • Grind nuts 8 sec/speed 9. Leave in bowl.
  • Set blades to speed 5. Drop onion, ginger and garlic onto turning blades. Scrape down.
  • Add oil, cook 3 minutes/100 degrees/speed 3.
  • Add cumin, coriander, salt, turmeric and chili powder. Cook 6 minutes/100 degrees/speed 2.
  • Add cream (or yogurt), water and tomato puree. Blend 10 seconds/speed 9.
  • Cook 6 minutes/100 degees/speed 2.
  • In the meantime, gently crush together the whole spices (bay leaves, cardamom, cloves and cinnamon).
  • Add the 1 teaspoon of oil to a small fry pan. Cook the crushed spices over medium high heat until fragrant.
  • Add the cooked spices to the TM bowl. Add the chicken meat and push it down into the sauce. Cook 15 minutes/100 degrees/reverse speed soft for breast meat, or 20 minutes/100 degrees/reverse speed soft for thigh meat.
  • Stir in garam masala if using.
