From Lean and Luscious by Bobbie Hinman and Millie Snyder. I started making this recipe years ago in college and it's still one of my favorites. Baking the meatloaf on a rack lets the fat drain away, so this is a bit drier than traditional spongy meatloaf.

3/4 cup tomato sauce
1/2 teaspoon dried oregano
1/8 teaspoon garlic powder
1/4 teaspoon dried basil
1/8 teaspoon pepper
1 lb lean ground beef
1/4 cup seasoned Italian breadcrumbs, plus
2 tablespoons seasoned Italian breadcrumbs
1 (10 ounce) package frozen chopped spinach, thawed and drained well
4 ounces shredded mozzarella cheese (1 cup)
1 tablespoon grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, combine tomato sauce and spices.
  • In a large bowl, combine beef, crumbs and 1/2 cup of the tomato sauce mixture. Mix well. Spread meat on a piece of wax paper, forming a rectangle about 8 x 10 inches.
  • Spread spinach over half the meat. Top with Mozzarella cheese, still only covering half the meat.
  • Fold meat over so that spinach and cheese are inside. Seal edges.
  • Transfer meat to a rack in a shallow baking pan. Top with remaining tomato sauce. Sprinkle with Parmesan cheese.
  • Bake 1 hour.

I was inspired by a Chicken Asiago Sausage I recently tried. I had ground chicken and I added spices that you might add to a homemade sausage. Turned out pretty tasty and no one needed an invite for lunch. The aroma of this meat loaf cooking brought them to the kitchen before it was ready to serve. Hope you enjoy!

1 Tbsp olive oil, extra virgin
1/2 large onion, chopped
2 c fresh spinach, packed
1 1/2 lb chicken, ground
1 c dry bread crumbs (panko)
1/2 to 1 tsp poultry seasonsing
1 tsp salt
1 tsp pepper
1/2 tsp cayenne pepper
1/2 tsp thyme
1 tsp garlic powder
1 large egg
1/4 c milk
1/2 c asiago cheese, shredded
1/2 c sun dried tomatoes, in oil, chopped
1/2 c spaghetti sauce

Steps:

  • 1. Preheat oven to 375 degrees. Spray 5 x 9-inch loaf pan with vegetable oil.
  • 2. In a large skillet, heat olive oil over medium heat; add onions and sauté for about 5 minutes or until tender. Add spinach and cover; wilt (should only take about 2 minutes). Once wilted, cut into small pieces (with kitchen scissors).
  • 3. In a large bowl add ground chicken and all other ingredients (except the spaghetti sauce); stir in spinach mixture until combine.
  • 4. Pack meatloaf mixture into prepared loaf pan; bake 55 minutes to 1 hour until internal temperature reaches 165 degrees. NOTE spread spaghetti sauce over top of meat loaf the last 15 minutes cooking time. NOTE: I used a thermometer to test for doneness.
  • 5. Remove from oven and let set for about 10 minutes and then serve.

I had some spinach for a salad, but I can never finish those big bags before they turn slimy, so this recipe from meals.com was the perfect way to use the rest of the spinach. The recipe calls for frozen spinach, but fresh works just fine, 2 or 3 cups of it, chopped up in the food processor. I also used 1/3 cup Italian seasoned bread crumbs in place of the bread slices, the ingredient list, however, is being posted in it's original state.

  • Preheat oven to 350.

  • In a larger bowl, mix beef, bread crumbs, egg white, salt pepper, and 1/2 the tomato sauce mixture until well combined.
  • Press meat mixture onto a sheet of wax paper, making a rectangle approx.
  • 8 x 10 inches.
  • Spoon spinach over half.
  • Place mozzarella cheese over spinach, being careful not to place too close to the edges, or your filling will leak out.
  • Fold meat over so that spinach and cheese are inside.
  • Pinch edges to seal.
  • Place meat in shallow baking pan, on a rack or strips of aluminum foil, or some means of keeping the loaf off the pan to allow the juices to drain.
  • Top with remaining tomato sauce and the parmesan cheese.
  • Bake, uncovered, for 1 hour.
  • Let rest for 5 to 10 minutes before slicing.
  • (try the leftovers on a sandwich or kaiser roll).

3/4 cup ketchup, divided
1 teaspoon garlic powder

1/2 cup onion, chopped
1 tablespoon water

Steps:

  • Mix ground turkey, cereal, egg whites, 1/2 Celsius of ketchup, garlic powder and Italian seasoning. Stir in spinach, pepper and onion. Salt and pepper to taste if desired.
  • Shape into a loaf. Place in greased baking pan.
  • MIx remaining ketchup and water. Spread evenly over meatloaf.
  • Bake at 350 for 50 minutes. Let stand 10 minutes before cutting.

1 cup onion, finely chopped
1 garlic clove, large, finely minced
1/2 teaspoon fennel seed

1 cup ricotta cheese

1 box frozen spinach, defrosted in the microwave
1 1/3 pound (1 package) ground turkey breast
1 medium onion, finely chopped, divided
3 cloves garlic, chopped
1 large egg
1 3/4 cups milk, divided
3/4 cup bread crumbs, 3 handfuls
1/2 cup grated Parmigiano-Reggiano, 2 palm fulls
Coarse salt and black pepper
Extra-virgin olive oil, for drizzling
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup chicken stock
1 (10-ounce) sack shredded provolone or blend of Italian cheeses, available on dairy aisle
1/2 teaspoon freshly grated nutmeg, eyeball it
1/4 cup parsley leaves, chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Wring defrosted spinach dry in a clean kitchen towel. Place turkey in a bowl and make a well in the middle of it. Add the spinach, all but 3 tablespoons of the onion, all of the garlic, 1 large egg, about 1/4 cup milk, bread crumbs, grated Parmesan, salt and pepper. Mix well. Form into 12 large balls and drizzle with extra-virgin olive oil. Arrange on a nonstick cookie sheet and roast 20 minutes, or until cooked through.
  • While balls are in the oven, heat a small sauce pot over medium heat. Add a drizzle of extra-virgin olive oil and 2 tablespoons butter. Melt butter, add remaining finely chopped onion and cook 2 minutes then whisk in flour. Cook flour 1 minute, then whisk in 1 1/2 cups milk and 1 cup stock. Bring liquid up to a boil then stir in shredded provolone or blended Italian cheeses. Season the sauce with salt, pepper and nutmeg, turn heat to lowest setting.
  • Place 3 balls on dinner plates and top with sauce, garnish with parsley.

Steps:

  • Preheat oven to 350 degrees. Spray a large baking dish with nonstick cooking spray.
  • In a large skillet, brown the ground beef and onion. Add the spinach, garlic powder and dry mustard, and cook until the meat is done.
  • In a large bowl, combine the softened cream cheese, heavy cream, Parmesan, nutmeg, salt and pepper to taste and mix well.
  • Combine the cream cheese mixture and the meat mixture in the large bowl.
  • Spoon the entire combined mixture into the large baking dish. Top with the 4 or 6 blend shredded cheese.

I happened to have some extra cooked beans on hand from last nights "Recipe #282862" and "Recipe #279612" so I threw them in too. It came out fantastic.

  • Preheat oven to 350 degrees farenheit.
  • In a large bowl combine all ingredients except the mozzarella.

50g salted butter
50g light muscovado sugar
50g golden syrup
50g plain flour
50g glacé cherries, chopped
75g flaked almonds
50g pistachios, chopped
2 oranges, zested
175g dark chocolate

Steps:

  • Heat oven to 180C/160C/gas 4. Line two baking sheets with baking parchment.Melt the butter, sugar and golden syrup in a small saucepan over a low heat, stirring frequently. Remove from the heat and whisk in the flour then add the cherries, flaked almonds, pistachios and orange zest.
  • Scoop 10 flat tbsp of the mixture onto the baking sheets, leaving room for them to spread. You will need to do these in batches. Bake for 10 mins until golden. Leave to cool for 2 mins until firm enough to lift onto a wire rack. Cool completely. Repeat with the remaining mixture.
  • Melt the chocolate in a bowl over a simmering saucepan of water or in the microwave in 30 second bursts. Turn the florentines over on the wire rack. Spoon chocolate onto the base of each florentine and gently spread to the edges. When the chocolate is firm enough to hold its shape, use a fork to draw wavy lines across the chocolate. Leave to set and then store in an airtight container.

2 lbs ground beef
1/2 lb ground pork
1 onion, minced
1 tablespoon fresh minced garlic (or use 1-1/2 teaspoons garlic powder)
1/2 cup chili sauce (or use 1/4 cup of each!) or 1/2 cup ketchup (or use 1/4 cup of each!)
1/2 cup seasoned dry bread crumb (more if needed)
1/4 cup milk
2 eggs, slightly beaten
3 tablespoons Worcestershire sauce (one more tablespoon won't hurt!)
1/2-1 teaspoon dried oregano
1 -2 teaspoon dried basil
2 teaspoons seasoning salt (can use white salt)
1 teaspoon fresh ground black pepper (or to taste)
1/2-3/4 cup ketchup
brown sugar (start with 2 tablespoons and add in more to taste)
3 -4 tablespoons butter
1/2 lb fresh sliced mushrooms
1 medium onion, chopped
1 teaspoon dried thyme (rubbed between fingers to release the oils)
2 cups fresh breadcrumbs
2 tablespoons fresh parsley
1/2 teaspoon salt (or to taste)
fresh ground black pepper (to taste)

Steps:

  • Set oven to 350°F.
  • Prepare a 9 x 5-inch baking pan and a baking sheet covered with foil to place underneath to catch any drippings.
  • Using clean hands mix together all meatloaf ingredients except the 1/2 to 3/4 cup ketchup and the brown sugar, until well combined in a large bowl (adding in a little more breadcrumbs if needed).
  • Pack the mixture into prepared pan.
  • Place the pan on a foil-lined baking sheet to catch any spills.
  • Bake for about 1 hour.
  • Mix together ketchup with enough brown sugar to taste (start with 2 tablespoons adding in as much brown sugar as you desire to reach desired sweetness).
  • After the 1 hour of baking, remove the meat loaf (at this point you can carefully drain off some of the fat if desired) and spread the ketchup/brown sugar mixture over the top.
  • Place back in the oven and bake for another 15-20 minutes, or until the meat loaf is pulling away from the sides of the pan.
  • OPTIONAL for the stuffing mixture; melt butter in a skillet over medium heat; add in mushrooms, onion and thyme, cook stirring until the mushrooms brown and loose their moisture.
  • Add in the soft breadcrumbs and cook until lightly browned.
  • Season with salt and pepper.
  • Spread evenly onto the bottom layer of beef mixture, then press down slightly.
  • Top with layer of beef mixture and bake as stated.

1 ½ pounds ground beef
2 cloves garlic, chopped

1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (8 ounce) container cottage cheese
¼ cup chopped onion

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente; drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a skillet over medium heat, brown the ground beef until evenly brown; drain excess fat. Season with oregano, salt and pepper. Stir in tomato sauce and water. Remove from heat, and stir in cooked noodles.
