Oatmeal Flax Waffles, Good for You & Gluten Free image

Toasty and delicious Oatmeal Flax Waffles will make your weekend. Even better this Oatmeal Flax Waffle recipe is gluten-free and, with a quick adaptation, could be vegan.

Number Of Ingredients 9

1 cup oat flour (see note above)
½ cup ground flax
2 teaspoons baking powder
½ teaspoon salt
¾ cup buttermilk (vegan alternative: soy or almond milk)
5 tablespoons butter, melted (vegan alternative: coconut oil)
2 large eggs (vegan alternative: 1/4 cup coconut yogurt)
2 tablespoons honey
1 teaspoon vanilla

Steps:

  • Combine dry ingredients, oat flour, baking powder, and salt, in a large bowl and whisk to remove any lumps. In a second bowl, whisk wet ingredients: buttermilk, melted butter, eggs, honey, and vanilla.
  • Add wet ingredients to the dry ingredients and fold together until just mixed, but lumpy. Rest better for about 10 minutes while the oat flour soaks up some of that moisture. Preheat waffle iron.
  • Batter will rise, stir batter quickly, just once or twice to knock it down to a more liquid state. Spray waffle iron with non-stick spray. Ladle batter onto hot waffle iron, to fill the center cavity, but not overflow, then close the lid. (Gypsy Note: Every waffle iron is different, I know my waffles are done when they stop steaming. My waffle maker has a little green light indicator that tells me when it thinks they're done. It's not always right. I look for even golden colour and crisp, firm waffle divots.)
  • When done, transfer to a cooling rack or baking sheet. Repeat the process until you've used up all your batter.

1-1/2 cups all-purpose flour
1 cup quick-cooking oats
3 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 large eggs, lightly beaten, room temperature
1-1/2 cups whole milk
6 tablespoons butter, melted
2 tablespoons brown sugar
Assorted fresh fruit and yogurt of your choice

Steps:

  • In a large bowl, combine flour, oats, baking powder, cinnamon and salt; set aside. In a small bowl, whisk eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended. , Pour batter into a lightly greased waffle iron (amount will vary with size of waffle iron). Close lid quickly. Bake according to manufacturer's directions; do not open during baking. Use fork to remove baked waffle. Top with fresh fruit and yogurt.

4 cups quick oats
4 cups bread flour
1 cup flax seed meal
1/2 cup ground pecans
5 teaspoons baking soda
3 teaspoons baking powder
5 teaspoons salt
1/2 cup sugar
8 eggs
8 cups buttermilk
1/2 cup butter
1/4 cup flax seed oil
4 teaspoons vanilla

Steps:

  • grind oats.
  • grind pecans.
  • sift together all dry ingredients.
  • beat eggs, buttermilk and vanilla then add melted butter & oil.
  • gradually add dry ingredients to just moistened.
  • let mixture set for 15 minutes.
  • bake in waffle iron.

Then my mom made it for me growing up, and now I make these waffles myself (but with a couple of healthy changes) They still taste just as good as the did when I was a kid. We serve them sometimes for breakfast, but in our family waffles have almost always been served for dinner. When you can't think of anything else to make.

1 1/2 cups whole wheat flour
1 1/2 cups white flour
1/2 teaspoon stevia or 4 tablespoons sugar
6 teaspoons baking powder
4 tablespoons flax seeds
1/2 teaspoon salt
4 eggs
3 cups milk
1/4 cup olive oil or 1/4 cup melted butter

Steps:

  • Mix dry ingredients.
  • Mix wet ingredients separately.
  • Mix dry and wet together whisk until smooth.
  • Pour about 3/4 of a cup of batter at a time onto the waffle iron.
  • You will begin to see steam coming out of the iron.
  • Cook the waffles until the steam is almost gone.
  • Any waffles we don't eat right away get put into the freezer, and we pop them in the toaster for a quick breakfast or snack.
