I like to use all sorts of different marshmallow shapes and flavors to mix things up. These chocolate-dunked pops are always a hit at local bake sales. -Teri Rasey, Cadillac, Michigan

Number Of Ingredients 6

2 cups semisweet chocolate chips
3 teaspoons shortening, divided
36 lollipop sticks
1 package (10 ounces) large marshmallows (about 36)
1/2 cup white baking chips
Optional toppings: assorted nonpareils, colored sugars, small or crushed candies and flaked coconut

Steps:

  • In a microwave, melt chocolate chips and 2 teaspoons shortening; stir until smooth., Insert one lollipop stick into each marshmallow. Dip marshmallows in melted chocolate, turning to coat; allow excess to drip off. Place on waxed paper., In a microwave, melt white baking chips with remaining shortening; drizzle over chocolate. Decorate with toppings if desired. Let stand until set., Use to stir servings of hot cocoa. Store in an airtight container.

1 cup powdered sugar, sifted (confectioner's sugar)
water
marshmallows
candy cane (or peppermint candies)
chocolate sprinkles
colored hard candies
red and blue candy sprinkles
green sprinkles
flavored colored coarse sugar

Steps:

  • Stir together powdered sugar with water, a teaspoon at a time(3-4 teaspoons total), until it is the consistency of a thin glaze.
  • Dip half of marshmallow in glaze, lightly shaking to remove excess.
  • Roll glazed end of marshmallows in finely crushed candy canes(or peppermint candies, sprinkles, etc.).
  • Place on waxed paper coated side up to set.
  • Thread on skewers and serve with drink of choice.

2 eggs
1/2 cup butter, melted
1 cup sugar
2 ounces unsweetened chocolate, melted
1/2 teaspoon peppermint extract
1/2 cup flour
1/2 cup almonds, Ground
2 tablespoons butter
1 tablespoon heavy cream
1 cup confectioners' sugar (sifted)
1 teaspoon peppermint extract
1 ounce semisweet chocolate
1 tablespoon butter

Steps:

  • Preheat oven to 350.
  • Grease a 9 inch square baking pan.
  • Beat eggs.
  • Add melted butter and sugar.
  • Beat well.
  • Add melted chocolate and peppermint.
  • Beat.
  • Add flour and nuts.
  • Mix well.
  • Pour ingredients into prepared pan and bake 25-30 minutes until toothpick inserted in center comes out clean.
  • Remove from oven and set on trivet or rack to cool.
  • Prepare filling.
  • In small bowl, thoroughly blend butter and cream.
  • Add sugar and peppermint.
  • Mix well.
  • Spread evenly over cooled baked layer.
  • Prepare frosting.
  • Melt chocolate and butter together in small pan over low heat.
  • When filling is completely firm, spread frosting mixture on top.
  • Refrigerate until chocolate is firm.
  • Cut into 3/4 by 2 1/4 inch strips.

6 strawberries
4 kiwi fruits
12 marshmallows
6 paddle pop sticks
melted chocolate (optional)

Steps:

  • Prepare the 6 strawberries by washing and hulling them.Place onto a plate.
  • Thickly slice the Kiwi Fruit and place on the plate with the strawberries.
  • Count out the marshmallows and place into a bowl.
  • Thread Ingredients onto the sticks with the strawberry being centre and marshmallows and kiwi fruit either side of it.
  • Drizzle slightly cooled melted chocolate on the fruit for that dded sweet taste kids will love! Store in the Fridge or eat Straight Up!

  • Line a large jelly roll pan with parchment paper. Skewer the marshmallows through the middle, 2 per stick. Set the sticks on the pan and set aside.
  • Set up a double boiler on the stove. I place a small sauce pan on the stove and fill it with a few inches of water. Then I place a glass heat safe bowl on top (make sure the water isn’t touching the bowl). Then I heat it on medium low heat—do not let the water boil.
  • Place chocolate in the bowl (either white or dark). Stir occasionally. Once chocolate is melted, add coconut oil and stir well. Then add the extract and mix once more.
  • Begin to dip the marshmallows. I like to lower them into the bowl, one stick at a time, and use the spoon to scoop up the chocolate onto the sides of the marshmallow. Start with a thin coat (you will dip a second time). Using the spoon, wipe away any drips and carefully set the stick down on the parchment, setting down without moving to prevent a foot from forming. Repeat with all remaining sticks, you will not use all of the chocolate. Set the tray into the freezer for 10 minutes to let the chocolate set.
