1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs eggs
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda

Steps:

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
  • In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
  • Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

Steps:

  • Heat oven to 325 degrees F.
  • Mix all ingredients with large spoon until well blended.

  • Bake 20 min. or until lightly browned. (Do not overbake.)

1 cup peanut butter
1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 tablespoons fruit preserves, any flavor

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together peanut butter, sugar, egg, and vanilla until well blended. Drop by teaspoonfuls onto ungreased cookie sheets. Use a fork to make a criss-cross pattern on the top. Make a small hole in the top of each cookie using the handle of a wooden spoon. Fill the holes with preserves.
  • Bake for 8 to 11 minutes in preheated oven. Allow to cool for a couple of minutes on the cookie sheets before transferring to wire racks to cool completely.

I got this recipe out of Flat Belly Diet! Family Cookbook by Liz Vaccariello. They are really easy to make and taste delicious. My kids eat them up!

1 c brown sugar, lightly packed
1 c crunchy peanut butter
1/2 tsp baking soda
1 tsp vanilla extract
1 egg, lightly beaten
flour, for rolling

Steps:

  • 1. Preheat oven to 350 degress Farenheit.
  • 2. Add all ingredients in a medium - large mixing bowl. Use mixer to mix until completely combined.
  • 3. Using flour on your hands, roll mix into small balls and place on large baking sheet.
  • 4. Using a fork, press into balls, making a criss-cross pattern.
  • 5. Bake for 10-12 minutes, depending on your oven. Let cool on baking sheet for 2 minutes before tranferring to cooling rack.
  • 6. Enjoy!
