CHAMPAGNE PUNCH WITH BRANDY AND CITRUS
Eye-opening notes of lemon, lime, and grapefruit keep this festive punch from heading into ultra-sweet territory-and fresh mint seconds the motion. "Once the Champagne has been added," says Scott Peacock, "serve the drinks as soon as possible to experience the maximum tickle of bubbles."

Steps:
- Bring sugar and water to a boil in a small saucepan, stirring until sugar has dissolved, then transfer to a bowl and cool syrup completely (or quick-chill by setting bowl in an ice bath and stirring occasionally until cool).
- Stir together juices, wine, Cognac, mint, fruit, and cooled syrup in a large pitcher. Chill, covered, until cold, about 1 hour. Stir in Champagne.

- Combine zests, sugar, and vanilla seeds. Muddle zests with a muddler or a wooden spoon to release the oils, and let sit 1 hour. Add juices, and stir to dissolve sugar; stir in brandy. Pour punch through a fine sieve into a bowl. Refrigerate at least 1 hour and up to overnight. Combine brandy mixture and Prosecco in a 4-quart punch bowl, and add ice ring. Serve immediately.
- An ice ring will keep punch cold without diluting it. Pour water into a large ring mold or Bundt pan, and freeze. If desired, first place thin citrus wheels or fresh herb sprigs in mold, then add enough water to partially cover. Freeze; when frozen, add more water (or punch) to fill mold. Freeze. Just before serving, unmold, and float, decorative side up, in punch.

- In a large jug, mix together the rum, brandy, the orange juice, grenadine, pineapple juice and sugar syrup with the cinnamon stick. Cover and chill until needed.
- When ready to serve, either warm through in a pan if you’re serving hot, then transfer the punch to a bowl, or, if you’re serving it cold, add ice cubes. Slice up the orange and stick cloves into the top or bottom slice. Float these on top of the punch.
- Warm a couple of ladlefuls of brandy in a saucepan until it steams. Pour it over the orange slices and set fire to the brandy using a long match. Once the flames have died down, ladle the punch into glasses garnished with halved orange slices.
