5 LAYER MEXICAN DIP
This is one of my favorite recipes. Great for football games, tailgates, or any party. Very EASY to make!

Steps:
- Heat refried beans in a microwave-safe bowl in a microwave oven until hot, stirring frequently, about 3 minutes. Spread beans onto the bottom of a serving platter; refrigerate until the beans are cooled completely, about 10 minutes.
- Spread guacamole in a layer atop the beans. Spread sour cream atop the guacamole. Sprinkle cheese over the sour cream; top with tomatoes.
- Cover platter with plastic wrap and refrigerate until cold, about 30 minutes.

HOT MEXICAN BEAN DIP
Warm, spicy bean dip that will be a hit with everyone!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix cream cheese, sour cream, refried beans, and taco seasoning in a bowl. Fold jalapeno pepper into the dip; spread into a 9x13-inch baking dish.
- Bake in preheated oven for 30 minutes. Top with shredded cheese and continue cooking until the cheese has melted, about 5 more minutes.

MEXICAN RICE AND BEANS

- Heat the oil in a large Dutch oven. Add the garlic, green onions and jalapeno and cook for 3 to 4 minutes. Reduce the heat to low and add the rice. Cook, stirring to make sure the rice doesn't burn, about 3 minutes. Add the chicken broth, cumin, salt, pepper, turmeric, beans, diced tomatoes and diced tomatoes and green chiles and stir together. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer until the rice is not quite done, about 15 minutes.
- Meanwhile, preheat the oven to 350 degrees F.
- Top the rice and beans with the cheese, then bake with the lid off until the cheese is melted and the rice is fully cooked, about 15 minutes more. Top with chopped cilantro before serving.
FIVE-STAR MEXICAN BEAN DIP OR CASSEROLE
At a loss about what to make for dinner or as a snack, and you don't want to go to the store? This is super quick and delicious, and you can eat it as a meal or a bean dip. This is a great way to use up the bottoms of all the tortilla chip bags. If you don't have taco seasoning mix, there are lots of recipes on zaar to make your own. - Preheat oven to 350.
- Crush tortilla chips and sprinkle into a greased 13x9x2" baking dish.
- In a large bowl, combine pinto beans, corn, tomatoes, tomato sauce, and taco seasoning.
- Mix well and pour over tortilla chips.
- Sprinkle with shredded cheese evenly over top.
- Bake for 25 to 30 minutes.
- Serve with your choice of optional garnishes.

- Brown bacon. Add onion and cook while you get other ingredients ready. Drain half or more of juice from each can of beans, except for pork and beans. Combine all ingredients in very large casserole dish. Stir in the bacon and onion. Bake, uncovered, for 1 hour at 350°F Can also add cut up smoked kielbasa, sliced pepperoni or cooked italian sausage prior to cooking in oven. I've also done this in the crockpot instead of the oven by cooking for 8-10 hours on low.

WARM MEXICAN BEAN DIP WITH TORTILLA CHIPS

Steps:
- Fry the chopped onion in olive oil until soft. Add soft brown sugar, wine vinegar and Cajun seasoning. Cook for 1 min then add the mixed beans and chopped tomatoes with garlic. Simmer for 10-15 mins until the sauce has thickened then season.
- Scatter handful grated cheddar onto tortilla chips. Microwave on High for 1 min until cheese has melted. Serve alongside the dip (top with some chopped avocado if you like). Make ahead and reheat dip before guests arrive.

- Preheat oven to 350°. Melt butter in oven safe skillet over medium high heat. Add in onion, garlic, and jalapeno. Saute until soft, approximately 5 minutes. Once soft, stir in spices and cook for 30 seconds.
- Turn slow cooker on low. Either follow directions from step #1 above or place butter, onion, jalapeno, and garlic in a microwave safe dish. Microwave on high for 2-3 minutes, stirring every 30 seconds. Once soft add the spices in and microwave for 30 more seconds. Add ingredients to slow cooker.
