Fireman Bob's Roast Beef with a Garlic Crust image

In keeping with Tradition once again... This Roast of Beef will delight any crowd that you will encounter... Hope you Enjoy!!!!

Number Of Ingredients 10

3 to 4 lb prime rib roast
1/4 c olive oil
4 clove garlic - peeled and crushed
1 1/2 c bread crumbs
1/2 c chopped fresh parsley
1 tsp salt
1/2 tsp black pepper
1 tsp rosemary, dried
1 tsp thyme, dried
1 1/8 tsp red pepper flakes

Steps:

  • 1. With a paper towel, wipe the Roast dry and place on wire rack in a deep roasting pan. Heat oil in a skillet, add garlic. Saute 2 minutes, pressing juice from garlic into oil, after, discard garlic. Mix in bread crumbs, parsley, salt, pepper, rosemary, thyme, and red pepper flakes. Combine all together and press mixture onto roast, coating well.
  • 2. Roast at 205 degrees F. until meat thermometer registers 140 degrees for rare, ( 18 to 20 minutes per pound ). 160 degrees for medium ( 20 to 22 minutes per pound ). or 170 degrees for well done ( 22 to 24 minutes per pound ).
  • 3. Remove Roast from oven. Allow Roast to stand 15 to 20 minutes before carving Garnish with parsley. ENJOY!

6 pound(s) chicken leg quarters
12 clove(s) garlic - chopped fine
4 tablespoon(s) olive oil, extra virgin
1 tablespoon(s) course sea salt
1 tablespoon(s) fresh cracked black pepper
1 tablespoon(s) smoked paprika
1 large lemon - zested and juiced

Steps:

  • In a Large bowl, combine the oil with the chicken, then add the remainder of ingredients
  • Cover with foil and place in fridge for 2 hours
  • On your HOT grill, place chicken and let cook for 2 minutes on each side, then turn grill to low and allow the chicken to cook till juices run clear, about 30 to 40 minutes, turning occasionally to prevent burning.
  • Serve with a green salad and crusty bread... ENJOY !!!

This has always been a staple on Sundays at the Fire Department. It only takes a short time to prepare and a long time cooking, ( low and slow ) because that is what Sundays are for, Low Key and Slow Day to relax...

5 to 6 lb beef chuck, boneless
24 clove garlic
salt and pepper to taste
1 Tbsp cumin seeds
1 sprig(s) thyme, leaves
1 tsp lemon pepper sprinkled on roast
2 can(s) beef broth
6 to 8 potatos cut in half
6 to 8 carrots cut into 1 inch pieces
2 large onions sliced to 1/4 inch
1/2 hot pepper diced

Steps:

  • 1. Rinse the roast off with water... Cut 1 inch slits in the roast and place 1 to 2 cloves of the garlic in the hole. Place these cloves all throughout the roast so there is cloves every where in the roast. Place roast in large Oven Roasting Pan.
  • 2. Take all the other spices and place on roast. Take the Potatos and Carrots and Onions and set in raosting pan.
  • 3. Place the Pan in the oven and cook at 195 degrees for 6 hours. Sit back and enjoy the most wonderful Sunday meal ever.

GARLIC-RUBBED SKIRT STEAK AND VIDALIA ONIONS WITH PEANUT ROMESCO



Garlic-Rubbed Skirt Steak and Vidalia Onions with Peanut Romesco image

In this age of seasonless grocery stores, where strawberries and squash are always available, Vidalia onions remain a spring treat, with a harvest from late April through mid-June. Every spring, without fail, many Southerners buy a big mesh sack of these sweet onions and store them knotted in panty hose in a cool, dry place for as long as they'll last. Here their unique sweetness provides a great complement to rich steak and tangy romesco sauce. The sauce makes about 2 cups and can be easily doubled for a crowd. Skirt steak is a thin, long cut of beef from the diaphragm muscles of the cow (when purchasing, you may need more than one steak, as they are generally sold in pieces). It is very lean and fibrous with an intense beefy flavor, and is often used in fajitas (the Spanish word fajita means "belt" or "cummerbund," referring to the long beltlike shape of the steak). Skirt steak is best cooked over very high heat and should only be cooked to rare or medium-rare for the tenderest texture; when you serve, cut across the grain of the meat. You may use other steaks such as flank or hanger in this recipe with equally delicious results.

2 pounds skirt, hanger, or flank steak
6 garlic cloves, mashed to a paste with salt (see Cook's Note)
2 tablespoons pure olive oil
2 or 3 large sweet onions, preferably Vidalia, sliced
1/2 cup roasted peanuts
1 (12-ounce) jar roasted red bell peppers
1/2 cup tomato puree
2 garlic cloves, plus more for garnish
1 slice country white bread, toasted and crumbled
1 tablespoon smoked paprika
1/3 cup sherry vinegar
2/3 cup extra-virgin olive oil, plus more for garnish
Coarse kosher salt and freshly ground black pepper

Steps:

  • To prepare the steak, using paper towels, pat the steak dry and place in a large bowl; slather the garlic paste and olive oil all over the meat, turning to coat. Add the onions. Cover and refrigerate for at least 30 minutes or up to overnight.
  • To make the romesco sauce, grind the peanuts in a food processor. Add the roasted peppers, tomato puree, garlic, bread, and paprika. Process into a paste. Add the vinegar and pulse to blend. With the motor running, gradually pour the oil through the feed tube in a steady stream until the mixture thickens like mayonnaise. Taste and adjust for seasoning with salt and pepper and then transfer to a serving bowl.
  • When ready to grill the steak, scrape any excess garlic off the beef and discard. If using a charcoal grill, prepare the fire using about 6 pounds of charcoal and burn until the coals are completely covered with a thin coating of light gray ash, 20 to 30 minutes. Spread the coals evenly over the grill bottom, position the grill rack above the coals, and heat until medium-hot (when you can hold your hand 5 inches above the grill surface for no longer than 3 or 4 seconds). If using a gas grill, turn all the burners to High, close the lid, and heat until about 500 degrees F, 10 to 15 minutes. If using a grill pan, heat the pan over medium-high heat.
  • Cut the steak into one or more pieces if it is very large. Grill the meat and onions over direct heat until char lines appear, the meat is done to taste, and the onions are tender and charred, 3 to 5 minutes per side. (A vegetable basket will help keep the onions from falling through the grates if you're cooking over a gas or charcoal grill.) Let the steak rest for 5 minutes before slicing it across the grain. Serve the steak and onions with the romesco sauce on the side.
  • Cook's Note: To prepare the garlic paste, place the unpeeled garlic on a cutting board, broad-side down, set the flat side of a chef's knife on top, and give the knife a quick whack with the palm of your hand to crush each clove. Remove the papery skin and trim away the tough basal plane at the end of the clove. Halve the garlic and remove any of the green shoot, if present, as it is bitter. Coarsely chop the garlic, then sprinkle it with a pinch of coarse salt. (The salt acts as an abrasive and helps grind the garlic.) Using the side of the knife like an artist's palette knife, press firmly on the cutting board and crush the garlic a little at a time. Repeat until the garlic is a fine paste.

6 tablespoon(s) extra virgin olive oil
2 pound(s) lean pork, cut 1 " pieces
2 large red onion, chopped course
2 large carrots, peeled and cut 1 " pieces on the diagonal
2 bunch(es) green onions, cut 1 " pieces on the diagonal
2 large leeks, cut 1" pieces on the diagonal
2 large red bell peppers, seeds and ribs removed, and cut 1" pieces
2 large green bell peppers, seeds and ribs removed, and cut 1" pieces
2 small heads broccholii, chopped course
2 small califlower, chopped course
1/4 cup(s) fresh chives, cut 1 " pieces
1 pound(s) fresh pea pods, whole
2 cup(s) corn starch
" PASTE MIXTURE "
1 teaspoon(s) cayenne or to taste
4 tablespoon(s) dark soy sauce
4 tablespoon(s) chili paste, your choice
1/4 cup(s) red wine vinegar
10 clove(s) fresh garlic, chopped fine
2 large shallots, chopped fine
1/4 cup(s) sesame oil
1/4 cup(s) dark brown sugar

Steps:

  • After cutting the pork, place in large bowl with corn starch and coat all of the pork and set aside
  • Combine cayenne, dark soy sauce, chili paste, red wine vinegar, garlic, shallot, sesame oil, and brown sugar into a mixing bowl and mix, forming a paste.
  • Heat wok until almost smoking.
  • Add oil and CAREFULLY swirl to coat.
  • Add the pork, red onion, carrots, green onions, leeks, red and green bell peppers, broccoli, cauliflower, chives, and pea pods.
  • Stir-fry briskly, keeping the ingredients moving around all the time. ( depending on the " size " of your wok, this may have to be done in 2 or 3 batches )
  • Stir-frying briskly keeps the ingredients from burning as the heat is kept high.
  • Once the pork has browned, add the " paste mixture " to the wok.
  • Stir-fry for another 2 to 3 minutes or until pork is cooked though. Serve immediately with rice, or pasta
  • ENJOY !!!

1 1/2 pound(s) ground pork - mild, medium or hot your choice
6 clove(s) fresh garlic - minced
6 large eggs
3 cup(s) freshly grated romano cheese
1 teaspoon(s) cinnamon yes cinnamon !!!
1/2 cup(s) fennel seeds
4 1/2 cup(s) italian flat leaf parsley - chopped fine
1 tablespoon(s) red pepper flakes
1 jar(s) roasted red peppers - drained and chopped
* * * - salt and fresh ground black pepper to taste
6 cup(s) day old italian bread, crumbled
4 1/2 cup(s) lukewarm water - *** use only enough to make mixture moist
1/4 cup(s) extra virgin olive oil
1 can(s) tomato juice - enough to fill pan half way
2 can(s) (small) tomato paste

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, cinnamon, fennel seeds, parsley, red pepper flakes, roasted red peppers, and salt and pepper. Mix all together very tenderly ( don't over mix , just bring together )
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape when rolled into meatballs. NOTE: *** Only use enough water to get moist consistency ***
  • Shape into 24 meatballs.
  • Place the extra virgin olive oil, tomato juice, tomato paste in a large 9 x 13 oven pan. Stir to make a sauce.
  • Place meatballs in pan and cover. NOTE: *** You will want to use 2 pans so meatballs have room and not touching each other *** Cook 2 hour at 250 degrees or until done.   • Enro Gay... " Hello, Bob... the meatballs were a huge success. I reduced the recipe by using 4 pounds meat (2 ground beef, 1 veal and 1 pork sausage) and used dry Italian bread crumbs in place of day-old bread (and adjusting other ingredient amounts to match). Since these were made for homemade meatball subs, I made them much smaller and cooked them a short time in the oven before transferring to my slow cooker. "

  • Small onion, fine chopped Small green pepper, fine chopped 2 cloves garlic, fine chopped 3 Tbsp EVOO 6 ounce tomato paste 1/4 cup dry red wine 3/4 cup chicken broth 2-15 ounce cans tomato sauce 1 tsp dried oregano 3/4 tsp dried basil 1 tsp sugar Salt and fresh ground pepper to taste
  • Saute onion and green pepper in EVOO for a couple minutes, add the garlic and cook another minute. Then add the tomato paste and wine, stirring for another minute or so. Then add the chicken broth, tomato sauce and spices, stirring to combine. Bring to a boil, then simmer covered for about 3 hours... YUMMY!
