Authentic Mexican Refried Beans Recipe (Frijoles Refritos) image

Mexican refried beans or frijoles refritos are a Mexican food staple that everyone should master. You'll love this easy authentic refried beans recipe because it's better than canned or restaurant refried beans. This recipe makes THE best refried beans!

2 cups homemade pinto beans ((include some cooking liquid or boiling broth too))
3 tablespoons olive oil (or vegetable oil of choice)
⅓ cup of finely chopped white onion
2 to 3 whole dried chiles de arbol (or dried/fresh chile of choice)
large pinch sea salt (adjust to taste (kosher salt may also be used))

Steps:

  • Heat the oil in a large frying pan, once it's hot add the onion and cook until browned and crispy (this gives it a great taste, or you can just sauté until tender.) Next add the dried or fresh chiles and cook just until they brown or begin to blister -- this happens quickly so be ready to proceed.
  • Next add the boiled beans -- be careful because it will splash, allow to fry for about 3 minutes. Next add about ¼ cup of the broth and then begin mashing the beans until you achieve the desired texture. The broth will help with the mashing and you'll need to add a little bit of the broth to help you achieve the texture you desire.
  • Continue to "fry" for about 5-8 minutes or until they have the consistency you want. Remember to adjust the consistency to your needs by cooking longer to thicken or adding more broth/water to thin out. Taste and add salt as desired.

57 ounces ketchup
11 ounces molasses
6 ounces distilled white vinegar
5 1/2 ounces Worcestershire sauce
1 1/4 cups brown sugar
1/4 cup liquid smoke
1/8 cup salt
1 1/4 cups brown sugar
10 ounces honey
1 cup sweet chili sauce
11 tablespoons ground pepper
7 tablespoons kosher salt
3 tablespoons seasoning salt
1 tablespoon granulated garlic
1 rack St. Louis cut pork ribs
3/4 cup pork seasoning, such as Townsend Spice Co.

Steps:

  • For the Firehole BBQ Sauce: Bring ketchup, molasses, vinegar, Worcestershire, sugar, liquid smoke, salt and 1/4 cup water to a simmer in a saucepan, then turn off the heat and let cool.
  • For the rib glaze: Add the sugar, honey and sweet chili sauce to the full batch of Firehole BBQ sauce and bring to a rolling boil. Turn off the heat.
  • For the Firehole brisket rub: Stir together the pepper, salt, seasoning salt and granulated garlic.
  • For the ribs: Preheat a smoker for cooking at about 300 degrees F.
  • Trim any loose or excess fat from ribs.
  • Season ribs with pork seasoning and 1/4 cup brisket rub.
  • Place in smoker meaty-side up and let smoke for 2 hours. Pull ribs off smoker and place on a piece of foil. Brush all over with rib glaze and wrap in foil. Place back in the smoker for 1 more hour, then let rest 15 to 30 minutes.

1 1/2 lbs dark brown sugar
18 ounces favorite barbecue sauce
1 small onion (minced finely)
6 ounces bacon bits

Steps:

  • In large Crockpot combine baked beans, brown sugar, barbeque sauce, and onion.
  • Set crockpot on high for 1 hour. At end of first hour dip off excess liquid before stiring.
  • Set Crockpot to med and continue cooking for 5 more hours (at end of each hour dip off excess liquid before stirring).
  • Add bacon bits before last hour of cooking.

1 pound (2 cups) pink, red, or pinto beans, soaked overnight in 6 cups water
1/2 pound smoked ham, salt pork, or slab bacon, cut up
1 large onion, coarsely chopped
2 garlic cloves, sliced
1 small bay leaf
2 cups solid-pack or fresh-peeled tomatoes
1/2 cup chopped green pepper
2 teaspoons chili powder
2 tablespoons brown sugar
1/2 teaspoon dry mustard
1/4 teaspoon crushed oregano leaves
salt (optional)

Steps:

  • Drain beans and add fresh water to 2 inches above beans. Add meat, onion, garlic, and bay leaf. Heat to boiling and cover tightly. Cook over low heat for 1 1/2 hours or until beans are almost tender. Add all remaining ingredients, except salt, and more water if necessary. Simmer, uncovered, for 2 hours, stirring once or twice. Taste and add salt, if necessary. There should be enough liquid left on the beans to resemble a medium-thick gravy. If desired, the beans may be baked, covered, at 325° after the first step is completed. Note: Long, slow cooking helps to give a rich, full flavor. May be made ahead and refrigerated, then reheated, even on a barbecue grill.

1 rounded tablespoon salt
3 quarts water
1/2 pound salt pork
2/3 cup blackstrap molasses
1 teaspoon dry mustard
1 can tomato

Steps:

  • Using a galvanized pail, soak the beans overnight. Pour off the top water and with it any floaters, twigs, etc. Swirl the beans for a time. This will allow any rocks to go to the bottom just like nuggets in a miner's pan. Lift the beans using the fingers of the two hands as a strainer. Transfer to a heavy iron pot, or Dutch oven, equipped with a well-fitting lid. Add salt and cold water. Bring slowly to a boil and keep boiling for 3 hours, adding water if the level drops beyond what appears to be a safe point. Slice the salt pork into 1-inch-wide strips and cut crosswise, forming squares of fat attached to rind. Add the pork, molasses, mustard, and tomatoes. Cover and bake at 350° about 2 hours, checking water level periodically.
