Zucchini Noodles with Basil, Lime, and Ginger image

Spiralized zucchini noodles are tossed with fresh basil, lime, and ginger for a quick and refreshing side dish. I serve these with grilled chicken and pineapple skewers.

1 large zucchini
½ teaspoon salt
1 tablespoon extra-virgin olive oil
5 large basil leaves
1 (1 inch) piece ginger root, peeled and sliced
½ lime, juiced

Steps:

  • Cut zucchini in half to help it fit in the spiralizer. Run each half through the large teeth of a vegetable spiralizer. Put zucchini noodles into a glass bowl and sprinkle with salt. Toss with your hands to mix. Let rest for 10 minutes to remove excess water. Rinse and pat dry.
  • Heat oil in a skillet over medium-high heat. Add zucchini noodles, basil leaves, and ginger. Cook, tossing occasionally, until the noodles are tender but not mushy, about 5 minutes. Do not stir so zucchini noodles stay intact. Drizzle with lime juice and toss to coat. Serve hot.

Baked zucchini noodles in a savory sauce with creamy ricotta to top it off!

2 tablespoons extra-virgin olive oil
¼ cup diced onion
1 clove garlic, chopped
1 pound ground turkey
1 (16 ounce) jar marinara sauce
1 (16 ounce) can fire-roasted diced tomatoes
2 cups zucchini noodles
7 tablespoons ricotta cheese
¼ cup shredded mozzarella cheese
5 leaves basil, thinly sliced
1 pinch red pepper flakes, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat olive oil in an oven-safe skillet over medium heat. Add onion and garlic and saute until soft, 2 to 3 minutes. Add ground turkey and cook and stir until browned, crumbly, and no longer pink, 5 to 7 minutes. Pour in marinara sauce and diced tomatoes; let simmer until thick, about 10 minutes.
  • Squeeze zucchini noodles to get most of the water out. Add to the skillet and stir to combine. Add ricotta cheese in 1-tablespoon dollops around the skillet. Sprinkle mozzarella cheese on top.
  • Bake, uncovered, in the preheated oven for 20 minutes. Remove from the oven and let sit for 5 minutes to set up. Sprinkle with basil and red pepper flakes before serving.

2 small zucchini, about 1/3 pound
1/2 pound fine noodles
Salt to taste
2 tablespoons olive oil
Freshly ground pepper to taste
1/2 teaspoon chopped garlic
1/4 cup grated pecorino or Parmesan cheese

Steps:

  • Trim the zucchini but do not peel them. Cut them into 1/4-inch cubes. Put the noodles in a saucepan with salted water to cover and cook to the desired degree of doneness.
  • Heat the oil in a skillet and add the zucchini, salt and pepper. Cook over medium-high heat for about 2 minutes. Add the garlic and cook 30 seconds; do not brown. Set aside.
  • When the noodles are ready, drain quickly but thoroughly. Spoon the zucchini and cheese over them and toss quickly. Serve immediately.
