PANCIT MOLO (FILIPINO WONTON SOUP)



Pancit Molo (Filipino Wonton Soup) image

Despite its name, this Pinoy pancit dish has no noodles, just wonton-like dumplings in place of the noodles. It is a soup dish served as a snack or as an appetizer before lunch or dinner. Use my recipe for homemade wonton wrappers (see Footnote).

1 ½ pounds ground pork
1 pound uncooked medium shrimp, peeled and deveined
1 (8 ounce) can sliced water chestnuts, drained
salt and ground black pepper to taste
1 (16 ounce) package wonton wrappers, or as needed
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 cooked chicken breast, shredded
1 ¼ quarts chicken broth
1 small head bok choy, cut into bite-sized pieces
2 green onions, chopped

Steps:

  • Mix pork, shrimp, water chestnuts, salt, and pepper together in a large bowl. Reserve 1/3 of the filling mixture for the soup. Wrap about 1 tablespoon of the remaining filling in a wonton wrapper. Repeat until all of the filling is used up.
  • Heat olive oil in a large pot over medium-high heat. Add onion and garlic; saute until onion is translucent, about 5 minutes. Stir in the chicken and the reserved filling. Mix well. Add chicken broth; season with salt and pepper. Bring to a boil. Drop the filled wontons into the soup one by one. Boil until wontons float to the top, 3 to 5 minutes. Add bok choy; boil until tender, about 2 minute more. Garnish with green onions.

Almondigas is a hearty Filipino soup consisting of meatballs and thin, salted Chinese noodles made from wheat flour that cook quickly.

Number Of Ingredients 11

1 lb (450 g) lean ground pork
2 green onions, finely chopped, plus more for garnish
1 egg, beaten
3 tbsp (25 g) all-purpose flour
Salt and freshly ground black pepper
1 tbsp (15 ml) olive oil
2 cloves garlic, minced
1 onion, chopped
8 cups (1.9 L) chicken broth
1 tbsp (15 ml) fish sauce
2 oz (57 g) misua noodles, Japanese somen noodles, capellini noodles or angel hair pasta

Steps:

  • In a large bowl, combine the pork, green onions, egg and flour. Season with salt and pepper. Mix together well, then form into 1-inch (2.5-cm) meatballs. Set aside.
  • Heat the oil in a pot over medium-high heat. Add the garlic and onion. Sauté until the onion begins to soften, about 2 minutes.
  • Add the broth and fish sauce, and bring to a boil. Drop the meatballs into the boiling broth and simmer for 10 to 15 minutes, or until the meatballs are cooked. Add the misua noodles and cook until soft, about 3 minutes. Season with fish sauce (or salt) and pepper, to taste.
  • Garnish with the chopped green onions. Serve hot.

FILIPINO PORK NOODLE SOUP IN INSTANT POT



Filipino Pork Noodle Soup in Instant Pot image

You can make this soup on the stove top just increasing the cooking time to 3 1/2 hours.

1 Tbsp vegetable oil
2 Tbsp shrimp paste
3 Tbsp sugar
8 clove garlic minced
1 medium onion diced
2 lb pork butt
2 Tbsp kosher salt
8 oz angel hair pasta
1 bunch green onions thinly sliced for garnish

Steps:

  • 1. Select saute on Instant Pot. Add the oil, and shrimp paste and combine the paste with the oil. Add the onion and garlic and saute until the onion is translucent. Add 8 cups of water the pork butt and salt. Turn the pot off and secure the lid. Select manual and toggle up to 60 minutes.
  • 2. While the pork is cooking cook the angel hair pasta in salted water and drain. When the cooking is done on the pork release with quick release.
  • 3. Remove the pork and shred it with two forks. Strain the broth and discard the solids. To serve add pasta to the bottom of bowl. Top with pieces of pork. Ladle the broth over the meat and pasta. Garnish with green onions.

PORK NOODLE SOUP WITH GINGER AND TOASTED GARLIC



Pork Noodle Soup With Ginger and Toasted Garlic image

This soup, based mostly on pantry staples, can be made with a variety of proteins, noodles and greens depending on what you have on hand. Snow pea leaves are exceptional here, which can be found in many Asian grocers year-round, but spinach, Swiss chard or other dark leafy green would work well. Don't skip the raw onion, the soup's finished complexity depends on it.

3 tablespoons neutral oil, grapeseed, vegetable or canola
8 garlic cloves, thinly sliced
1 pound ground pork
1 1/2 teaspoons red-pepper flakes, plus more to taste
Kosher salt and black pepper
4 cups chicken broth
3 tablespoons soy sauce or tamari, plus more to taste
1 large bunch pea leaves or spinach, thick stems removed, leaves coarsely chopped
1 tablespoon finely grated fresh ginger (from about a 1 1/2-inch piece)
6 ounces rice noodles (thick- or thin-cut), cooked and drained
1/2 medium red, yellow or white onion or 3 scallions, thinly sliced
1 cup cilantro, leaves and tender stems, coarsely chopped

Steps:

  • Heat vegetable oil in a large, heavy-bottomed pot over medium.
  • Add garlic and cook, stirring occasionally, until the slices become nicely toasted and golden brown, 2 or 3 minutes. Using a slotted spoon, remove garlic and set aside.
  • Add pork and red-pepper flakes to the pot, and season with salt and pepper. Cook, using a wooden spoon or spatula to break up large pieces, until the pork is well browned and in small bite-size pieces, 5 to 8 minutes.
  • Add chicken broth, soy sauce and 4 cups water. Bring to a simmer and cook for about 5 to 8 minutes or so, until the pork is very tender and the broth tastes impossibly good. (Give it a taste and season with salt, pepper, red-pepper flakes and soy sauce, if you want.) Add pea leaves, half of the onion slices, and all of the ginger. Stir to wilt the leaves.
  • To serve, ladle soup over noodles and top with remaining onion, cilantro and toasted garlic.

1/2 cup chopped celery
1/2 cup chopped onion
1 tablespoon olive oil
1/2 teaspoon minced garlic
7 cups water
1-1/2 cups cut fresh asparagus (1-inch pieces)
1/2 cup chopped cabbage
1-1/2 teaspoons minced fresh parsley
3/4 teaspoon dried tarragon
Dash cayenne pepper, optional
2 packages (3 ounces each) pork ramen noodles
2 cups cubed cooked pork

Steps:

  • In a Dutch oven, saute celery and onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the water, asparagus, cabbage, parsley, tarragon and cayenne if desired. Bring to a boil., Coarsely crush the noodles. Add the noodles with the contents of the seasoning packets to the pan. Bring to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until the noodles and vegetables are tender. Add pork; heat through.

1/2 large onion, diced
2 tablespoons oil
2 garlic cloves, minced
4 cups chicken broth
1/4 lb angel hair pasta
1 egg, scrambled
1 tablespoon soy sauce
2 teaspoons fresh ground pepper
fresh cilantro, chopped
lime, wedges

Steps:

  • Sauté pork with garlic and onion in oil until fully cooked.
  • Add broth and pepper and bring to a boil.
  • Add noodles and pepper and bring to a boil.
  • When noodles are ready, reduce to a simmer and add soy and scrambled egg.
  • Allow to thicken slightly and serve - garnish with cilantro and fresh squeezed lime.
