2 1/2 pounds beef tenderloin, trimmed and tied
7 tablespoons unsalted butter, at room temperature, divided
Kosher salt and freshly ground black pepper
3/4 cup chopped shallots (3 large)
14 ounces mushrooms, such as cremini and/or shiitakes, stems discarded and caps sliced 1/4 inch thick
1/2 cup ruby Port wine, such as Sandeman
3/4 cup crème fraîche
3 ounces Roquefort or other strong blue cheese, crumbled
1 tablespoon minced fresh parsley

Steps:

  • Preheat the oven to 500˚. Line a sheet pan with aluminum foil.
  • Place the beef on the prepared sheet pan and pat dry with paper towels. Spread 1 tablespoon of the butter all over the beef with your hands. Sprinkle the beef all over with 1 1/2 teaspoons salt and 1 teaspoon pepper. Roast for exactly 25 minutes for rare (120˚) and 30 minutes for medium rare (125˚). Remove the beef from the oven, cover tightly with aluminum foil and allow to rest for 20 minutes.
  • Meanwhile, make the sauce. Heat 2 tablespoons of the butter in a large (12-inch) sauté pan. Add the shallots and sauté over medium heat for 3 to 4 minutes, until tender but not browned. Add the remaining 4 tablespoons of butter and heat until sizzling. Add the mushrooms and sauté, stirring frequently, for 5 to 7 minutes, until lightly browned. Add the Port, 1 teaspoon salt and 1/2 teaspoon pepper and cook for 2 to 3 minutes. Add the crème fraîche and cook for one minute, until slightly thickened. Reduce the heat to low and add the Roquefort, stirring just until it melts. (If the sauce is too thick, add another splash of Port.)
  • Before serving, reheat the sauce and sprinkle with the parsley. Remove the strings from the roast and slice thickly. Spoon on the sauce, sprinkle with salt and serve hot.

2 tablespoons bleu cheese crumbles (recommended: Treasure Cove)
1/4 cup plain bread crumbs
2 teaspoons fines herbs (recommended: Spice Islands)
1/2 teaspoon olive oil, plus 1 tablespoon
4 (6-ounce) filet mignon steaks
Salt and freshly ground black pepper, for seasoning, plus 1/2 teaspoon black pepper
1/2 cup cognac
1 cup organic beef stock (recommended: Swanson)
1 teaspoon crushed garlic (recommended: Christopher)
1/4 cup frozen chopped onion (recommended: Ore-Ida)

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with foil; set aside.
  • In a small mixing bowl, combine bleu cheese, bread crumbs, herbs, and 1/2 teaspoon of olive oil; set aside.
  • Add 1 tablespoon olive oil to a large saute pan and heat over medium-high heat. Season steaks with salt and pepper and to add pan, but do not crowd. Sear 1 to 2 minutes per side just to brown. Remove pan from heat and transfer steaks onto prepared baking sheet.
  • Top each steak with 1/4 of blue cheese mixture. Finish cooking steaks in preheated oven for 4 minutes for medium-rare, 6 minutes for medium, and 8 minutes for well done.
  • Return pan to stove and deglaze with cognac by scraping bits from bottom of pan. Add remaining ingredients and bring to a boil over high heat. Reduce liquid by half.
  • Serve steaks hot with sauce.

1/4 pound blue d'Auvergne or other creamy blue cheese
2/3 cup sour cream
1/3 cup mayonnaise
1 1/2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 loaf health or 7-grain bread
1 1/2 pounds rare fillet of beef thinly sliced, recipe follows
1 bunch arugula
Kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter, at room temperature
1 1/2 pounds whole fillet of beef trimmed and tied
2 tablespoons melted butter
1 tablespoon salt
1 tablespoon coarsely ground black pepper

Steps:

  • For the dressing, mash the blue cheese with a fork and blend with the sour cream, mayonnaise, Worcestershire sauce, salt, and pepper.
  • To make the sandwiches, cut the bread into 8 slices, each slice 1/4 inch thick. Spread 4 of the slices thickly with the dressing. Top with slices of beef and arugula and sprinkle with salt and pepper. Spread the rest of the slices of bread very lightly with butter and place, butter-side down, on top of the beef.
  • Preheat oven 500 degrees F.
  • Melt 2 tablespoons of unsalted butter.
  • Place beef on a baking sheet and pat the outside dry with a paper towel. Using a pastry brush coat the beef with the melted butter. Sprinkle evenly with salt and pepper. Roast for 25 minutes at 500 degrees F for medium rare.
  • Remove the beef from the oven, cover tightly with aluminum foil, and allow to rest at room temperature for 20 minutes before slicing.

For the Duxelles:
4 tablespoons butter, divided
1 tablespoon olive oil
1 medium onion, finely chopped
8 ounces button mushrooms, chopped
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup chicken livers, finely chopped
2 cloves garlic, minced
1 teaspoon dried marjoram leaves
2 tablespoons beef broth
For the Beef:
24 ounces filet mignon, sliced in 8 3-ounce servings
For Assembling:
1 17-ounce package thawed frozen puff pastry, two sheets
1 egg, beaten

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. In a large skillet, heat 2 tablespoons of butter and the olive oil over medium heat. Add the onion and mushrooms and season with salt and pepper.
  • Cook and stir over medium heat until the mixture is browned, and the moisture evaporates, or about 8 to 12 minutes.
  • Add the chicken livers, garlic, and marjoram. Stir and cook for 4 to 5 minutes longer.
  • Add the beef broth, cook and stir for 3 to 4 minutes until all the liquid evaporates. Remove the skillet from the heat.
  • In ​a nonstick skillet, melt the remaining butter over medium heat. Working in batches, sear the filet mignons on all sides, leaving the centers medium-rare. Depending on their thickness, the fillets need to cook from 3 to 4 minutes per side: 3 minutes per side for a 1.5-inch-thick medallion; 3.5 minutes per side for a 1.7-inch-thick medallion; and 4 minutes per side for a 2-inch-thick medallion. Once seared, remove from the heat and reserve.
  • Roll out the 2 sheets of puff pastry on​ a lightly floured surface. Cut out 8 (4.5-inch) squares. Refrigerate the leftover puff pastry and save it for other recipes.
  • Divide the mushroom duxelles between all squares and spread to cover.
  • Top each square with a seared medallion of filet mignon. Brush the edges with the beaten egg and then bring the edges together and seal, forming a tight pocket.
  • Place the Wellingtons seam-side down on a rimmed baking sheet and brush with more beaten egg.
  • Bake for 15 to 25 minutes or until the pastry is golden brown. Let cool on wire racks for 10 minutes before serving.

1 bunch spinach or 1 lb frozen spinach
2 ounces butter
3 lbs filet of beef
2 sheets frozen puff pastry, thawed
8 ounces blue cheese, softened
1 egg, lightly beaten

Steps:

  • To prepare spinach: Cut tough stalks from spinach. Wash leaves well. Drop leaves into boiling water. Cook for 30 seconds or until leaves are just softened. Drain and refresh in cold water. Pat dry with paper towel and set aside.
  • If using frozen spinach, thaw. Squeeze out excess water before placing on pastry.
  • Heat butter in large pan. Add filet of beef. Brown well on all sides. Cool. Retain pan juices.
  • Preheat oven to 400°F.
  • Place pastry on a flat surface. Overlap edges by a ½ inch. Press together well to seal. Arrange spinach over pastry leaving a 2 ½ inch border. Spread or crumble cheese over spinach. Place beef in centre of pastry and season - be sparing with the salt as the cheese will impart its own saltiness. Fold in narrow end of pastry. Fold remaining pastry over to enclose beef. Turn seam to underside and place on a lightly greased baking pan. Brush top with egg.
  • Bake for 25-30 minutes or until puff pastry is golden. Rest, tented with foil, for 10 minutes before slicing.

  • Preheat a grill to high heat.

1 tbsp olive oil
800g piece of lean fillet steak (ask for a piece from the middle of the fillet with an even thickness)
25g butter
1 banana shallot , finely chopped
1 garlic clove , chopped
500g button mushrooms , very finely chopped in a food processor
2 tsp chopped soft-leaf thyme
12 slices prosciutto
50g Claxton blue cheese or stilton , crumbled
25g walnuts , roughly chopped
500g pack all-butter puff pastry
plain flour , for dusting
1 egg and 1 yolk, beaten
seasonal vegetables , to serve
1 banana shallot , finely chopped
1 garlic cloves , chopped
150ml red wine
1 large thyme sprig
2 bay leaves
600ml beef stock
2 tbsp plain flour , mixed to a paste with 3 tbsp water

Steps:

  • Heat the oil in a large frying pan and fry the steak for 8-10 mins, turning to brown it all over. Remove from the pan and leave to cool. To make the gravy, add the shallot and garlic to the pan juices and cook, stirring, until softened and golden. Pour in the wine, add the herbs and leave to bubble for 2 mins. Pour in the stock and stir in the flour paste, stirring all the time until the gravy has thickened. Cover and cook for 5 mins over a low heat, then strain into a bowl or small freezer container, pushing through as much liquid left in the shallots as you can.
  • Wash the pan, then melt the butter and cook the shallot and garlic until softened. Add the mushrooms and thyme, and fry for 10 mins, stirring frequently, to drive off as much moisture as possible. Season with black pepper and sparingly with salt. Cool.
  • Lay a couple of sheets of cling film on the work surface, side by side and slightly overlapping, then arrange the prosciutto down the centre in two overlapping rows. Spread the mushroom mixture on top, then scatter evenly with the cheese and walnuts. Place the steak on top, then tightly wrap the prosciutto round it, using the cling film to help you. Finally, tightly wrap in the cling film and chill for 30 mins.
  • Roll out the pastry on a lightly floured surface until you think it is large enough to completely wrap round the steak roll. Unwrap the meat, place on top of the pastry and brush round it with the egg mixture. Tightly roll up in the pastry, trimming the excess as you bring the pastry together down the length and ends, sealing well. If you want to add decoration, cut out leaf shapes from the trimmings and use the egg mixture to stick them to the pastry. Chill until ready to cook. Will keep for 2 days. (If freezing, wrap in new cling film, then foil, and freeze along with the gravy and egg glaze. The day before, take everything out of the freezer and put in the fridge, unwrapping the steak roll and covering it loosely with kitchen paper.)
  • Heat oven to 220C/200C fan/gas 7 with a baking sheet inside. Place the (completely thawed) meat on a piece of baking parchment and brush with the egg glaze. Place on the hot baking sheet and cook for 45-50 mins. Insert a meat thermometer into the centre of the beef: for rare it should be 50C, for medium-rare 55C, and for medium 60C. Cover loosely with foil and leave to rest for 15-20 mins. Trim off the pastry end, then thickly slice and serve with the gravy, heated in a pan, and seasonal vegetables.
