CREAM CHEESE FIESTA SPREAD



Cream Cheese Fiesta Spread image

Salsa, fruit spread, cilantro, avocado, olives and cheese bring sensational flavor and texture to this party spread.

1 package (8 ounces) cream cheese or fat-free cream cheese
1/4 cup salsa
1/4 cup apricot preserves or orange marmalade
1 tablespoon chopped fresh cilantro
1 tablespoon finely shredded Cheddar or Monterey Jack cheese
1 tablespoon chopped avocado
1 tablespoon chopped ripe olives
Assorted crackers, if desired

Steps:

  • Place block of cream cheese on serving plate with shallow rim.
  • Mix salsa and preserves; spread over cream cheese. Sprinkle with remaining ingredients except crackers. Serve with crackers.

1/4 cup apricot preserves
1/4 cup sliced ripe olive
1 tablespoon chopped fresh cilantro, if desired

Steps:

  • Place block of cream cheese on serving plate with shallow rim.
  • Mix salsa and preserves; spread over cream cheese. Sprinkle with olives and cilantro. Serve with crackers.

Number Of Ingredients 13

- 1 lb. ground beef
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 1 garlic clove, minced
- 1 tsp. salt
- 1 tbsp chili powder
- 1/2 tsp. ground cumin
- 2 tbsp. ketchup
- 1 can refried beans, 16 oz
- liquid hot pepper seasoning to taste
- 2 oz. sharp natural cheddar cheese, grated, about 1/2 cup
- sliced stuffed olives, optional
- ritz crackers

Steps:

  • Brown beef with next three ingredients; drain fat. Add next four ingredients. Mash in beans. Heat, stirring frequently. Add liquid hot pepper seasoning to taste. Garnish with cheese and if desired, sliced olives. Serve warm with Ritz crackers. Makes about 3 1/2 cups

1 package (8 ounces) cream cheese, softened
1/4 cup shredded Colby-Monterey Jack cheese
3 to 4 tablespoons minced fresh cilantro
2 to 3 tablespoons grated onion
1 tablespoon chili powder
1 teaspoon dried minced garlic
1/2 teaspoon garlic salt
1/4 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon ground cumin
1/8 to 1/4 teaspoon hot pepper sauce
1/4 cup minced fresh parsley
Assorted crackers

Steps:

  • In a small bowl, beat cream cheese. Add the cheese, cilantro, onion, chili powder. garlic. garlic salt. oregano, red pepper flakes, cumin and hot pepper sauce. Cover and refrigerate for at least 1 hour. , Shape into a ball. Roll in parsley. Cover and refrigerate for 8 hours or overnight. Serve with crackers.

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 pkg. (8 oz.) KRAFT Mexican Style Finely Shredded Four Cheese, divided
1 can (4 oz.) chopped green chiles, undrained
1-1/4 cups BREAKSTONE'S or KNUDSEN Sour Cream, divided
1/4 tsp. ground red pepper (cayenne)
1/4 cup chopped red bell peppers
2 Tbsp. fresh cilantro sprigs

Steps:

  • Heat oven to 350ºF.
  • Beat cream cheese in large bowl with mixer until creamy. Reserve 1/4 cup shredded cheese. Add remaining shredded cheese to cream cheese along with the chiles, 1/2 cup sour cream and ground red pepper; mix well.
  • Spread cream cheese mixture onto bottom of 2-qt. casserole sprayed with cooking spray.
  • Bake 20 min. or until dip is heated through and lightly browned around edge. Top with remaining sour cream, reserved shredded cheese, chopped bell peppers and cilantro before serving.

Number Of Ingredients 9

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup KRAFT Mexican Style Finely Shredded Four Cheese, divided
1 pkg. (1-1/4 oz.) TACO BELL® Taco Seasoning Mix
3/4 cup sour cream
1/2 cup chopped avocados
2 Tbsp. sliced black olives
1 Tbsp. chopped red peppers
2 thin wheat snack crackers
round buttery crackers

Steps:

  • Mix cream cheese, 1/2 cup shredded cheese and seasoning mix; spread into Christmas tree shape on 10-inch plate. Top with sour cream to within 1/4 inch of edges. Sprinkle remaining shredded cheese around edges. Refrigerate 1 hour.
  • Remove cheese spread from refrigerator about 15 min. before serving. Decorate with avocados, olives and peppers to resemble garland, lights and ornaments. Place crackers at bottom of tree for the trunk.
  • Serve with the round buttery crackers.

After it's cooked you can spread a very thin layer of sour cream on top, just enough to help adhere your choice of toppings, such as diced peppers, tomatoes, cilantro, green onion, etc. To make a nice presentation on your Christmas buffet, cut stars out of red and green peppers and spread over the top.

1 envelope fiesta ranch dip mix
2 cups shredded Mexican cheese blend, divided
Sliced ripe olives, chopped, tomatoes, sliced green onions and shredded lettuce, optional
Tortilla chips

Steps:

  • In a shallow 1-1/2-qt. microwave-safe dish, combine the sour cream, beans, chilies and dip mix. Stir in 1 cup cheese. Cover and microwave on high for 2 minutes; stir. , Cover and microwave 1-1/2 minutes longer or until heated through; stir until blended. Sprinkle with remaining cheese. Top with the olives, tomatoes, onions and lettuce if desired. Serve with tortilla chips.
