FESTIVE MEAT LOAF PINWHEEL

Steps:
- In a large bowl, combine the first 11 ingredients. Crumble beef over mixture and mix lightly but thoroughly. On a piece of heavy-duty foil, pat beef mixture into a 17x15-in. rectangle. Cover with ham and cheese slices to within 1/2 in. of edges. , Roll up tightly jelly-roll style, starting with a short side. Place seam side down in a roasting pan. Bake, uncovered, at 350° until a thermometer reads 160°, 1-1/4 to 1-1/2 hours., In a large saucepan, saute the onion, celery, green pepper and garlic in oil until tender, 3-5 minutes. Add tomatoes, broth, bay leaf, sugar, salt and thyme. Simmer, uncovered, for 30 minutes. Discard bay leaf. , Combine cornstarch and water until smooth; stir into sauce. Bring to a boil; cook and stir until thickened, about 2 minutes. Drain meat loaf. Serve with sauce.

- In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. , On a piece of heavy-duty foil, pat beef mixture into a 12x10-in. rectangle. Layer with six cheese slices, ham and six more cheese slices., Roll up jelly roll-style, starting with a short side and peeling foil away while rolling. Seal seam and ends. Place seam side down in a greased 13x9-in. baking dish. , Bake, uncovered, at 350° for 70 minutes or until no pink remains and a thermometer reads 160°. Top with remaining cheese; bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing. Serve with additional spaghetti sauce if desired.

- In a large bowl, beat eggs. Add milk, Worcestershire sauce, seasoned salt and onion powder; mix well. Stir in oats, carrot and parsley. Combine beef and pork; add to egg mixture and mix well. Press into a 9x5-in. loaf pan. Top with ketchup. Bake at 350° for 1-1/2 hours or until no pink remains and a thermometer reads 160°; drain.

- 1. Preheat oven to 350°. In a large mixing bowl, beat eggs with a fork. Add beef, tomatoes with juice, crushed pork rinds, onion, parsley, salt, and pepper. Mix until well blended. Shape into a 9 x 5-inch oval. Place in an ungreased 12 x 8 x 2-inch baking pan.2. Bake 1 hour. 3. Meanwhile, combine brown sugar, vinegar, pineapple juice, and mustard in a small saucepan. Simmer 10 minutes, stirring occasionally. Remove meat loaf from oven drain off fat. Arrange pineapple and cherries on top of loaf. Brush glaze on meat loaf and fruit keep remaining glaze warm. Bake 30 minutes longer. Slice and serve with remaining glaze.
