Most people wouldn't think of serving meat loaf for a holiday gathering, but think again! It's wonderful for a crowd because its hearty, zesty flavor appeals to all. -Vera Sullivan, Amity, Oregon

Number Of Ingredients 28

3 large eggs
1 cup dry bread crumbs
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/4 cup ketchup
2 teaspoons minced fresh parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1 garlic clove, minced
2 teaspoons salt
1/2 teaspoon pepper
5 pounds lean ground beef (90% lean)
3/4 pound thinly sliced deli ham
3/4 pound thinly sliced Swiss cheese
TOMATO PEPPER SAUCE:
1/2 cup finely chopped onion
2 celery ribs, chopped
1/2 cup chopped green pepper
1 garlic clove, minced
1 to 2 teaspoons olive oil
2 cups chopped fresh tomatoes
1 cup beef broth
1 bay leaf
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon dried thyme
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a large bowl, combine the first 11 ingredients. Crumble beef over mixture and mix lightly but thoroughly. On a piece of heavy-duty foil, pat beef mixture into a 17x15-in. rectangle. Cover with ham and cheese slices to within 1/2 in. of edges. , Roll up tightly jelly-roll style, starting with a short side. Place seam side down in a roasting pan. Bake, uncovered, at 350° until a thermometer reads 160°, 1-1/4 to 1-1/2 hours., In a large saucepan, saute the onion, celery, green pepper and garlic in oil until tender, 3-5 minutes. Add tomatoes, broth, bay leaf, sugar, salt and thyme. Simmer, uncovered, for 30 minutes. Discard bay leaf. , Combine cornstarch and water until smooth; stir into sauce. Bring to a boil; cook and stir until thickened, about 2 minutes. Drain meat loaf. Serve with sauce.

2 eggs, lightly beaten
3/4 cup seasoned bread crumbs
1/2 cup spaghetti sauce or ketchup
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/2 teaspoon dried oregano
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)
16 slices part-skim mozzarella cheese, divided
1/4 pound thinly sliced deli ham
Additional spaghetti sauce, warmed, optional

Steps:

  • In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. , On a piece of heavy-duty foil, pat beef mixture into a 12x10-in. rectangle. Layer with six cheese slices, ham and six more cheese slices., Roll up jelly roll-style, starting with a short side and peeling foil away while rolling. Seal seam and ends. Place seam side down in a greased 13x9-in. baking dish. , Bake, uncovered, at 350° for 70 minutes or until no pink remains and a thermometer reads 160°. Top with remaining cheese; bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing. Serve with additional spaghetti sauce if desired.

1 cup crushed cornflakes
1/2 cup finely chopped onion
3 tablespoons finely chopped celery
1 teaspoon salt
1/2 teaspoon ground mustard
1/2 teaspoon rubbed sage
1/4 teaspoon pepper
1-1/2 pounds ground beef
1 cup sour cream
1 cup finely shredded cheddar cheese
1/2 cup sliced pimiento-stuffed olives

Steps:

  • In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. On a large piece of heavy-duty foil, pat beef mixture into a 14x10-in. rectangle. Spread sour cream to within 1/2 in. of edges. Sprinkle with cheese and olives. , Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling. Seal seam and ends. 2 eggs
1/4 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon seasoned salt
1 teaspoon onion powder
1 cup quick-cooking oats
1 carrot, shredded
2 tablespoons chopped fresh parsley
1-1/2 pounds ground beef
1 pound ground pork
1/2 cup ketchup

Steps:

  • In a large bowl, beat eggs. Add milk, Worcestershire sauce, seasoned salt and onion powder; mix well. Stir in oats, carrot and parsley. Combine beef and pork; add to egg mixture and mix well. Press into a 9x5-in. loaf pan. Top with ketchup. Bake at 350° for 1-1/2 hours or until no pink remains and a thermometer reads 160°; drain.

Number Of Ingredients 14

2 eggs large
2 pounds ground beef (or part sausage)
1 (14 1/2-ounce) can tomato whole, cut up and juice reserved
3/4 cup crushed pork rind
1/2 cup onion finely chopped
2 tablespoons parsley chopped
1 teaspoon salt
1/8 teaspoon black pepper
1 cup brown sugar packed
1/4 cup cider vinegar
1/4 cup pineapple juice
2 1/2 tablespoons mustard prepared
3 pineapple slices canned
3 red maraschino cherries

Steps:

  • 1. Preheat oven to 350°. In a large mixing bowl, beat eggs with a fork. Add beef, tomatoes with juice, crushed pork rinds, onion, parsley, salt, and pepper. Mix until well blended. Shape into a 9 x 5-inch oval. Place in an ungreased 12 x 8 x 2-inch baking pan.2. Bake 1 hour. 3. Meanwhile, combine brown sugar, vinegar, pineapple juice, and mustard in a small saucepan. Simmer 10 minutes, stirring occasionally. Remove meat loaf from oven drain off fat. Arrange pineapple and cherries on top of loaf. Brush glaze on meat loaf and fruit keep remaining glaze warm. Bake 30 minutes longer. Slice and serve with remaining glaze.
