Papaya (Fruta Bomba, Lechoza), known by several different names in Latin America, is a good source of vitamin A. Try cutting it in different shapes, blending it into shakes, or baking it, as in this simple but tasty dessert. From Diabetic Cooking for Latinos by Olga V. Fuste.

1 medium peeled, sliced, papaya
1/2 c orange, apple, or lime juice
ground cinnamon
1 c reduced-fat vanilla ice cream

Steps:

  • 1. Heat oven to 350F. Place papaya slices on a non-stick baking sheet.
  • 2. Sprinkle with juice and cinnamon and bake for 15 minutes.
  • 3. Top each slice with 1/4 cup ice cream and serve.

This recipe was taken from a Pacific Island web site for the ZWT-7 tour of the South Pacific. It sounds like a tasty quick and easy to make dish.

2 papayas, small, ripe, peeled, seeded, and cut in half lengthwise
1/2 cup sugar
1/4 cup water
1 1/2 cups coconut milk (canned, bottled, or fresh)

Steps:

  • Preheat oven to 375°F
  • Place the papayas, cut side up, in a shallow baking dish.
  • Sprinkle with the sugar and add the water.
  • Bake uncovered in the middle of the oven for 1½ hours, or until the papayas are tender but still keep their shape.
  • Every half hour, pull out the oven rack and baste the papayas with the liquid from the dish.
  • For the last 5 minutes of baking raise the heat to 400°F and bake until the syrup gets thick and becomes the color of caramel.
  • Turn off the heat and pour the coconut milk into the center of the papayas.
  • Leave the papayas in the oven until the milk gets warm, about 5 minutes.
  • Serve immediately, or refrigerate and serve cold, they are good either way.

3 papayas, firm but ripe (the sweeter Hawaiian variety is probably best here)
1 vanilla bean, cut into 6 pieces
6 teaspoons butter
12 teaspoons brown sugar

Steps:

  • Preheat the oven to 350 deg F.
  • Peel the papayas, split them in half lengthwise and remove the seeds.
  • Arrange the prepared papayas, cut side up, in a large baking dish filled with approximately 1/2 inch of water.
  • Place one piece of vanilla bean, 1 tsp butter and 2 teaspoons brown sugar in the center of each papaya half.
  • Bake for 45 minutes, or until tender.

2 papyas; if green when purchased allow to ripen 1-2 days to a green-yellow color. Soft to the touch.
1/4 cup fine bread stuffing
1/4 cup Parmesan cheese
1 cup onion, finely diced
1 tomato, skinned & chopped
2 Tbs. butter
Salt & pepper

Steps:

  • Preheat the oven to 400 degrees. Mix the stuffing and parmesan cheese together in a bowl and set aside. Cut papayas in half length-wise, remove and throw away black seeds. Dig the meat out of each half with a spoon leaving the remaining shell intact for refilling later, chop the meat coarsely then set aside. Skin and chop the tomato and set aside. Finely dice the onion. Heat the butter in a skillet until it bubbles then add the onions and cook until clear not brown. Add the papaya meat. Add the tomato. Stir the whole mixture together. Season with salt and pepper. Cook over medium heat, stirring gently from time to time. When mixture is thick, after several minutes, turn off the fire. Place the papaya shells in a casserole dish in a half-inch of water so they won't burn. Spoon the cooked mixture into the shells evenly. Top each off with the bread crumb-parmesan mixture. Dot each with butter. Bake in the oven for 30 minutes or until the tops are brown.

  • Preheat oven to 350F and put a little bit of water in a baking pan.

Malaysian Baked Papaya With Ginger image

A different version of baked papaya than the previous one I posted. This version has a crunchy filling/topping with pistachios, raisins, and ginger. If you don't care for raisins too much (like me), feel free to reduce the amount or leave them out entirely. If you need to leave out the pistachios, just sub in extra cookie crumbs to make up for some texture and volume. For another variation, use Greek yogurt in place of the heavy cream, and almonds in place of the pistachios. Adapted from Thai & Asian cookbook, untried by me. Posted for ZWT

2 ripe papayas (not too soft, for better presentation)
2 pieces stem ginger in syrup, drained (reserve 1 tbs of ginger syrup)
8 amaretti cookies, coarsely crushed (or whatever type of sweet biscuit you prefer)
3 tablespoons raisins (optional)
1 lime, juice and finely chopped zest of
1/4 cup chopped pistachios
1 tablespoon light muscovado sugar (or light brown sugar)
4 tablespoons heavy cream, plus extra for serving (the extra can be lightly sweetened and whipped or liquid, as you prefer)

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut the papayas in half lengthwise and scoop out the seeds. Place the halves (cut side up) in a large glass baking dish and set them aside while you prepare the filling/topping.
  • Cut the stem ginger into thin matchsticks. Combine the ginger with the crushed amaretti and raisins in a medium mixing bowl. Stir in the lime juice, lime zest, and two-thirds of the nuts. Add the sugar and 4 tbs of cream. Mix well.
  • Divide the filling evenly amongst the papaya halves. Drizzle with the reserved ginger syrup and sprinkle with the reserved chopped nuts. Bake for about 25 minutes, or until papaya is tender. Serve slightly warm with the extra cream.

1/4 teaspoon cayenne pepper
1 lime, cut into 4 wedges

Steps:

  • Preheat oven to 450 degrees. Stir together sugar and ginger in a small bowl. Arrange papaya halves, cut sides up, in a 10-by-13-inch baking dish. Sprinkle sugar mixture evenly over halves.
  • Bake, brushing papaya edges with melted sugar mixture (it will collect in well of fruit) 2 or 3 times, until mixture is bubbling and papaya edges are beginning to darken, 35 to 40 minutes.
  • Sprinkle each serving with a pinch of cayenne. Serve with lime wedges.
