How to Make Fermented Giardiniera image

Fermented Giardiniera is a tasty Probiotic-Rich Italian Pickle Relish condiment that's perfect for topping on sandwiches, salads, and more!

1 head Cauliflower florets
6 Carrots, peeled (sliced into 1/4" rounds)
1 Red bell pepper (sliced into 2" long strips)
2-3 Jalapeño peppers (sliced into rings with membrane and seeds removed)
1 Yellow onion, peeled (sliced into 2" long strips)
2 tablespoons Coarse ground Celtic sea salt (if you're using fine ground sea salt, just use 1 tablespoon)
Chlorine-free water (enough to cover vegetables)

Steps:

  • Mix all the ingredients together, except the salt, and pack into a 1/2 gallon-sized jar.
  • Tamp down the vegetables to make sure they are packed into the jar tightly.
  • Sprinkle salt into jar on top of the vegetables.
  • Add water to just cover the vegetables, but do not fill the jar to the top.
  • Place a weight on top of the vegetables and put a lid on the jar. (See video.) Place jar in a bowl to catch any overflow during the fermentation process.
  • Place jar in an undisturbed warm area and check vegetables each day. If using a traditional jar lid and not a "pickle pipe," unscrew lid every day to "burp" the jar and allow the carbon dioxide to be released.
  • After two days, begin to taste the vegetables to see if they are to your liking. Remember to always use clean utensils, and do not reinsert any utensils back into the jar if they have been used in your mouth.
  • Once the ferment is to your liking, remove the weight, put a storage lid on the jar, and refrigerate. The Giardiniera will stay fresh in the refrigerator for approximately 6 months.

3 cups water
3 tablespoons kosher salt
1 ½ cups cauliflower (broken into small pieces)
1 stalk celery (sliced)
1 carrot (sliced)
2 serrano peppers (or to taste)
1 red bell pepper (sliced)
½ onion (sliced)
2 cloves garlic (minced)
½ cup green olives (with pimentos, sliced)
½ cup white wine vinegar (or white vinegar)
½ cup light olive oil (or vegetable oil)
½ teaspoon oregano
¼ teaspoon chili flakes

Steps:

  • Mix water and kosher salt in a medium bowl. Add cauliflower, celery, carrots, serrano peppers, bell peppers, onion, garlic, and green olives. Toss to combine and refrigerate overnight.
  • Drain vegetables and rinse very well. Place in a large jar.
  • Whisk together vinegar, olive oil, oregano, and chili flakes. Pour over the vegetables and refrigerate at least 3 days before eating.
  • Keep up to 1 month.

1 boneless beef chuck eye roast (about 3 1/2 pounds)
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
1 medium onion, roughly chopped
1 tablespoon dried Italian seasoning
2 teaspoons crushed red pepper
6 cloves garlic, roughly chopped
1/2 cup dry red wine
3 cups beef stock
2 sprigs fresh thyme
4 green bell peppers, seeded and cut into strips
2 tablespoons olive oil
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
6 soft, hinged sub or hoagie rolls
Homemade Hot Giardiniera, recipe follows
1/4 cup table salt
1 cup small-diced carrots
1 cup tiny cauliflower florets
4 to 8 serrano peppers, sliced 1/4 inch (depending on heat level desired)
2 cloves garlic, minced
1 stalk celery, diced small
1 red bell pepper, diced small
2 cups canola oil
1 tablespoon dried oregano
1/2 teaspoon freshly ground black pepper

Steps:

  • For the pot roast: Position a rack in the middle position and preheat the oven to 300 degrees F.
  • Liberally sprinkle the entire roast with salt and pepper. Heat the vegetable oil in a Dutch oven over medium-high heat. Brown the roast on all sides until golden and caramelized; reduce the heat if the fat begins to smoke. Transfer the roast to a plate and reduce the heat to medium. Add in the onions and saute, stirring occasionally, until just beginning to brown, 8 to 10 minutes. Add the Italian seasoning and crushed red pepper and saute until fragrant, another minute. Add the garlic and saute until fragrant, about 30 seconds. Deglaze with the red wine and cook until reduced by half. Add in the stock and thyme and bring to a simmer. Adjust the seasoning of the jus. Place the roast back into the pot with any accumulated juices and place in the oven. Cook the roast, turning every 30 minutes, until very tender, 3 3 1/2 to 4 hours. Increase the oven heat to 350 degrees F.
  • Transfer the roast to a cutting board and tent with foil. Strain the jus through a fine mesh strainer into a bowl and return back to the pot. Bring to a simmer and adjust the seasoning if necessary. Once cooled a bit, pull the meat into smaller chunks, return to the reduced jus and reserve until ready to build the sandwiches.
  • For the sweet peppers: Toss the pepper strips with the olive oil, granulated garlic and some salt and pepper on a baking sheet. Bake, stirring halfway through, until lighter in color and soft, about 20 minutes.
  • For the sandwich build: Place some beef on a roll, then some sweet peppers and then some Homemade Hot Giardiniera. Pour a small dish of reduced jus. Take the whole sandwich and quickly dunk in hot jus. Using two hands, go the hell to town.
  • Day One: Combine 2 cups water and the salt in a glass or non- reactive bowl. Mix until the salt is dissolved. Add the carrots, cauliflower, serranos, garlic, celery and bell peppers to the salt water and stir to combine. Cover and refrigerate overnight.
  • Day Two: Drain and rinse the vegetables. In a clean bowl, mix together the canola oil with the oregano and pepper. Add the vegetables and mix to combine. Cover and refrigerate overnight. Giardiniera will only get better with time. After 2 days at the most in the bowl, you can place in air-tight Mason jars and keep in the fridge for at least 2 to 3 weeks. Makes 3 to 4 cups.

GRILLED GIARDINIERA SALAD

Vegetable oil, for oiling the grill grates
2 cups white wine vinegar
3 tablespoons kosher salt
1 tablespoon sugar
1 teaspoon dried oregano
1 teaspoon whole peppercorns
4 cloves garlic, smashed
3 cups mini rainbow peppers
4 medium carrots, peeled
4 serrano peppers
1 small head cauliflower, cut into 1-inch-thick steaks
2 stalks celery, leaves reserved
3/4 cup olive oil
1 tablespoon Dijon mustard
1 cup ricotta salata, grated
1 cup pitted black olives, halved
Grilled Italian sausage and hoagie rolls for serving, optional

Steps:

  • Preheat a grill for cooking on high heat. Clean and oil the grates with vegetable oil.
  • Combine the vinegar, salt, sugar, oregano, peppercorns, garlic and 1 cup water in a small pot. Bring to a simmer, whisking occasionally, to make sure the sugar and salt are dissolved. Let cool completely.
  • Place the rainbow peppers, carrots, serrano peppers and cauliflower steaks directly on the grill (do not grill the celery; keep it raw!). Grill until charred with grill marks, about 5 minutes a side. Set aside to cool on a wire-racked sheet pan. Once cooled, it's time to chop!
  • Slice the carrots and celery 1/2-inch-thick on a sharp 45-degree angle bias. Keep the rainbow peppers and serranos whole. Cut the cauliflower florets off the woody stems and trim into individual 1-inch florets.
  • Place the chopped veggies into a 1-gallon resealable bag or container. Pour the vinegar mixture directly on the veggies. Stir around and let sit in the fridge at least 3 hours, but ideally overnight.
  • Drain the veggies from the brine and place on a paper towel-lined sheet pan. Reserve the brine. Arrange the pickled veggies in groups on a large, long platter, in other words, carrots, then peppers, then celery. Whisk together 3/4 cup of the brine with the olive oil and Dijon in a bowl until combined. Season to taste. Drizzle the vinaigrette over the veggies and top with the ricotta salata, celery leaves and olives. Or serve the veggies directly on freshly grilled Italian sausage or sausages sandwiches and top with ricotta salata, olives and celery tops!

2 cups white wine vinegar
1/4 cup sugar
Kosher salt
2 bay leaves
2 teaspoons fennel seeds
1/2 teaspoon red pepper flakes
1/2 head cauliflower, cut into small florets
1 small bulb fennel, cored and sliced, plus 1/4 cup chopped fennel fronds
1 small red onion, thinly sliced
2 small carrots, halved lengthwise and thinly sliced
4 cloves garlic, crushed

Steps:

  • Bring the vinegar, sugar, 1 tablespoon salt, the bay leaves, fennel seeds, red pepper flakes and 1 cup water to a boil in a medium saucepan. Add the cauliflower, fennel, red onion, carrots and garlic. Reduce the heat and simmer until the vegetables are crisp-tender, 8 to 10 minutes. Let the vegetables cool in the brine, then refrigerate until chilled. Store in an airtight container in the refrigerator for up to 4 days.

FRIED MEATBALL SANDWICHES WITH GIARDINIERA



Fried Meatball Sandwiches with Giardiniera image

Jeff's Homemade Hot Giardiniera adds heat and zip to this meaty sandwich. You can substitute store-bought giardiniera.

5 large eggs
1 1/2 cups grated Pecorino Romano
1 cup fresh parsley leaves, chopped
2 cloves garlic, minced
Kosher salt and freshly cracked black pepper
3 pounds ground chuck
1 pound ground pork
1 pound ground veal (if you don't like veal, just use more beef)
1 cup panko breadcrumbs
Olive oil, for frying
8 slices provolone
4 ciabatta buns, split
One (32-ounce) jar your favorite marinara sauce, warmed
1 jar roasted red peppers, sliced into strips
1 cup Homemade Hot Giardiniera, roughly chopped (or store-bought)

Steps:

  • For the meatballs: Preheat the oven to broil.
  • In a large mixing bowl, whisk together the eggs, Romano, parsley, garlic, and some salt and pepper until it is all incorporated.
  • Add in the ground meats and breadcrumbs and, using your God-given hands, get after it and mix away. Do not overwork the meat or it will turn "meat-loafy." You want it loose and supple.
  • Using your hands again, make 4 loose patties to match the size of your bread. (The mixture will form at least 10 patties, depending on how big your buns are. But I like to make some patties for sandwiches and then roll the rest to make meatballs, which I then freeze so I have meatballs at the ready.)
  • Heat some oil in a large cast-iron pan (or use a griddle pan) over medium heat. In batches, fry the patties until golden brown, 4 to 5 minutes per side.
  • For the sandwich build: Place the buns split-side up on a rimmed baking sheet. Add 1 slice of provolone to each side of the buns and broil in the oven until the cheese is brown and bubbly, 1 to 2 minutes, but keep watch!
  • Add the patties to the bottom buns, spoon over some marinara, top with some red pepper strips and pile on some giardiniera. Then close the sandwiches and eat the hell out of them.
  • Serve with more marinara sauce on the side.

3-1/2 cups sugar
3 cups water
4-1/2 teaspoons canning salt
1 tablespoon dried oregano
1 tablespoon fennel seed
2 small heads cauliflower, broken into small florets (about 12 cups)
4 large carrots, sliced
4 celery ribs, cut into 1/2-inch slices
48 pearl onions, peeled and trimmed (about 1-1/4 pounds)
4 large sweet red peppers, cut into 1/2-inch strips
4 serrano peppers, seeds removed and thinly sliced
10 bay leaves
20 whole peppercorns
10 garlic cloves, thinly sliced

Steps:

  • In a large stockpot, combine vinegar, sugar, water, canning salt, oregano and fennel seed. Bring to a boil. Add cauliflower, carrots, celery and onions; return to a boil. Remove from heat; add peppers., Carefully ladle hot mixture into 10 hot 1-pint jars, leaving 1/2- in. headspace. Add a bay leaf and 2 peppercorns to each jar; divide garlic slices among jars. Remove air bubbles and adjust headspace, if necessary, by adding more hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

Fermenting Vessel can be Harsch Crocks, German Crocks, Vegetable Fermentation Masters to simple glass or ceramic bowls, canning jars with weights to hold the food under the liquid .

2 cups thinly sliced carrots
2 cups thinly sliced red bell peppers
1 1/2 cups thinly slice onions
2 cups thinly sliced celery
4 cups cauliflower florets
2 cups thinly sliced green tomatoes
2 thinly sliced red jalapenos (keep seed for more heat)
3 long green chili pepperoncini peppers
3 -5 garlic cloves, peeled and sliced super thin
fresh thyme sprig
2 bay leaves
3 tablespoons unrefined salt
6 cups filtered mineral water (using chlorinated tap water will prevent the beneficial bacteria to grow.)

Steps:

  • Prepare brine by dissolving the salt in water.
  • Mix all the ingredients except the brine in a large bowl.
  • Add them to the Fermenting Vessel of choice (check description above) packing them down as you go.
  • Fill each jar with the brine, leaving 1½ -2 inches of headroom-the space at the top, between the rim of the jar and the top of the vegetables. Weight the vegetables so they are completely submerged in the brine.
  • Cover the top of the vessel with a lid, coffee filter, paper towel, cheese cloth, or tea towel to keep bugs out and odors inches.
  • Be sure to secure towels with a very tight rubber band or the ring from the canning jars.
  • Place the jar out of direct light.
  • Ferment at room temperature 4 days before checking the flavor. If you prefer the flavor more sour, continue fermenting.
  • If to your taste transfer the jars to the refrigerator.
  • Burp the jars once daily (to release any built-up gasses) the giardiniera does continue to ferment while in the refrigerator.
  • This doesn`t need to be done in my home because we help ourselves to it daily.

  • Prepare the vegetables - Cut or break off cauliflower pieces into smaller florets. Slice the carrots on an angle into 1/4" thick slices. Cut the half onion into 1/2" wide slices. Remove the seeds from the jalapeño and cut it into ringlets. Cut the bell peppers into long flat slices approximately 1/2" wide. Peel the garlic and slice each clove in half. I'm such a fan of these Shun knives. Pricey but beautiful and so worth it. Their nicest most beautiful knife is this one.
  • Layer the vegetables - place the prepared vegetables, including the garlic and peppercorns, into the fermentation vessel(s). It's nice to use glass for this since it's truly beautiful to view through the glass. This is your chance to get artistic with the layering of the ingredients if you like. For this recipe, I used a 1/2 gallon Mason Jar. If you want to double the recipe, use two jars or combine into a fermentation crock. Although I often use a 1 gallon jar for many of my ferments, this giardiniera puts off a little more scent during the fermentation process so best to use a fermentation vessel that has some sort of airlock to keep the scent at bay.
  • Add salt water - Pour enough water in to reach to the top of the veggies. No need to fully submerge as the vegetables will begin to release some of their own liquid during the fermentation process and the water will eventually more than amply cover the veggies.
