QUICK AND EASY YORKSHIRE PUDDING
A great, quick and easy recipe for Yorkshire pudding. Everybody loves 'em!

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, beat eggs with milk. Stir in flour. Set aside.
- Divide butter evenly into the twelve cups of a muffin tin, about 1/2 teaspoon per cup. Place tin in oven to melt butter, 2 to 5 minutes. Remove tin from oven, and distribute batter evenly among buttery cups.
- Bake in preheated oven 5 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake 25 minutes more or until puffed and golden.

FAST AND EASY PUDDING
This pudding doesn't have eggs. It has a butterscotch sauce. I made it a few years ago. For me that's a 4 star. The recipe is from Jean Paré.

Steps:
- Pour the first 6 ingredients in a bowl. Stir. Add milk. Stir. Pour in a baking dish of 2 L (2 pints). Level the top.
- In the same bowl, combine the 4 other ingredients (water to brown sugar). Stir. Pour slowly on the dough, in the baking dish. DON'T STIR.
- Cook in the oven at 350 F, uncovered, for about 30 minutes. Serve warm.

EASY VANILLA PUDDING
This was a recipe my mom would make when we were young. I think she originally got it from the back of the cornstarch box. To make this chocolate pudding, increase the sugar to 2/3 cup and add 2-3 Tbs cocoa with the cornstarch.

- Mix together 1/4 cup brown sugar, flour, baking powder, salt, raisns and milk in a greased casserole dish.
- Sprinkle remaining brown sugar and nutmeg on top of batter and dot with butter.

- Mix flour, milk, and eggs together in a bowl; let sit for 2 hours.
- Preheat oven to 400 degrees F (200 degrees C). Divide the vegetable oil among 6 large muffin cups and place in oven for 5 minutes.
- Spoon flour mixture into the prepared muffin cups. Increase oven temperature to 425 degrees F (220 degrees C).
- Bake in the preheated oven until browned, about 10 minutes.
