Quick and Easy Yorkshire Pudding image

A great, quick and easy recipe for Yorkshire pudding. Everybody loves 'em!

3 eggs
1 cup milk
1 cup all-purpose flour
2 tablespoons butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, beat eggs with milk. Stir in flour. Set aside.
  • Divide butter evenly into the twelve cups of a muffin tin, about 1/2 teaspoon per cup. Place tin in oven to melt butter, 2 to 5 minutes. Remove tin from oven, and distribute batter evenly among buttery cups.
  • Bake in preheated oven 5 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake 25 minutes more or until puffed and golden.

This pudding doesn't have eggs. It has a butterscotch sauce. I made it a few years ago. For me that's a 4 star. The recipe is from Jean Paré.

1 cup all-purpose flour
1/3 cup brown sugar
2 tablespoons margarine, soften
2 teaspoons baking powder
1/8 teaspoon salt
1/3 cup raisins
1/2 cup skim milk
1 3/4 cups warm water
1/2 teaspoon cinnamon
1 teaspoon vanilla
2/3 cup brown sugar, packed

Steps:

  • Pour the first 6 ingredients in a bowl. Stir. Add milk. Stir. Pour in a baking dish of 2 L (2 pints). Level the top.
  • In the same bowl, combine the 4 other ingredients (water to brown sugar). Stir. Pour slowly on the dough, in the baking dish. DON'T STIR.
  • Cook in the oven at 350 F, uncovered, for about 30 minutes. Serve warm.

EASY VANILLA PUDDING

This was a recipe my mom would make when we were young. I think she originally got it from the back of the cornstarch box. To make this chocolate pudding, increase the sugar to 2/3 cup and add 2-3 Tbs cocoa with the cornstarch.

  • Mix sugar, cornstarch, and salt into a saucepan. Gradully stir in milk.
  • Bring to a boil over medium heat. Boil 1 minute, sitrring constantly.
  • Remove from heat. Stir in butter and vanilla. Chill.

Steps:

  • Mix together 1/4 cup brown sugar, flour, baking powder, salt, raisns and milk in a greased casserole dish.
  • Sprinkle remaining brown sugar and nutmeg on top of batter and dot with butter.
  • Pour on the boiling water.
  • Bake at 375 for 30 minutes.

1-1/2 cups milk

Steps:

  • In a saucepan, combine the sugar, cocoa and cornstarch. Gradually stir in milk until smooth. Bring to a boil over low heat, stirring constantly. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in vanilla. Pour into two serving dishes. Cover and refrigerate until chilled. Garnish with whipped topping if desired.

  • Mix flour, milk, and eggs together in a bowl; let sit for 2 hours.
