6 ounces espresso
5 cups milk

Steps:

  • Melt york peppermint patties in a saucepan with one of the shots of express, add additional shots one at a time until patties are melted.
  • SLOWLY add milk.
  • Pour over ice and top with canned whipped topping and sprinkles.

Oh My Arctic Char! image

I'm a huge fish fan and I'm always looking for new ways to make fish. I couldn't find any recipe that sounded tasty on the net for arctic char so I decided to try my cooking talent and come up with my own recipe. My husband and I couldn't believe how delicious this turned out, all of the flavors balanced perfectly. He wasn't hungry that night and ended up eating majority of the fish, haha! This recipe will not disappoint.

1 (10 ounce) fillet arctic char, rinsed and patted dry
1 pinch sea salt to taste
1 lime, zested and juiced
¼ cup olive oil
¼ cup sherry wine
3 sprigs rosemary, leaves stripped
2 cloves garlic
ground black pepper to taste
1 teaspoon cayenne pepper, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking dish with aluminum foil.
  • Season arctic char with salt, place in prepared baking dish, and sprinkle with lime zest.
  • Combine lime juice, olive oil, sherry, rosemary, and garlic in a food processor; pulse until garlic is finely chopped. Spread mixture over fish and season with black pepper and cayenne pepper.
  • Bake in the preheated oven until fish flakes easily with a fork, 12 to 15 minutes, basting with pan juices about halfway through. When the fish is close to being cooked, switch the oven to broil for remaining two minutes or until browned.

18g ground espresso, or 1 espresso pod
250ml milk
1 tsp drinking chocolate
large cup, 300-350ml capacity

Steps:

  • Make around 35ml espresso using a coffee machine and pour into the base of your cup. Add the drinking chocolate and mix well until smooth.
  • Steam the milk with the steamer attachment so that it has around 4-6cm of foam on top. Hold the jug so that the spout is about 3-4cm above the cup and pour the milk in steadily. As the volume within the cup increases, bring the jug as close to the surface of the drink as possible whilst aiming into the centre. Once the milk jug is almost touching the surface of the coffee, tilt to speed up the rate of pour. As you accelerate, the milk will hit the back of the cup and start naturally folding in on itself to create a pattern on the top.

ARCTICBERRY CRUSTED VENISON WITH CAULIFLOWER RAGOUT, MOCHA REDUCTION



Arcticberry Crusted Venison with Cauliflower Ragout, Mocha Reduction image

20-ounce venison loin
Vegetable oil, for searing
1/2 cup Arctic berry chutney
1/2 cup panko bread crumbs
2 tablespoons green coffee beans
1/2 head fennel, halved, cored and thinly sliced
1 tablespoon fennel seeds
1/2 tablespoon olive oil
2 cups veal stock
1/2 tablespoon bitter cocoa powder
Cauliflower Puree, recipe follows
1 head cauliflower
1 cup vegetable stock
Salt and pepper
1/2 cup cream
1/2 cup butter
1/2 lemon

Steps:

  • For the Venison:
  • Preheat the oven to 400 degrees F.
  • Cut the venison into 5-ounce pieces. Heat a large saute pan over high heat. When the pan is hot, add the oil and heat. Add the venison and sear until brown on both sides, about 2 minutes per side. Transfer the pan to the oven and cook to rare, about 5 minutes. Remove from the oven. Spread the chutney on the venison and then press the panko into the chutney so it sticks. Return to the oven and cook to medium rare, about 5 more minutes.
  • For the Mocha Sauce:
  • Crush the coffee beans and toast lightly in a hot pan. Remove from the heat and set aside. Clean and slice the fennel. In a pot, toast fennel seeds on low heat to golden brown. Add the olive oil and fennel and sweat until soft. Add coffee beans and veal stock and bring to a simmer for 15 to 20 minutes. Strain. Whisk in the cocoa powder and cook for 2 minutes. Place the cauliflower puree on 4 plates. Top with a venison steak and finish with a little of the sauce.
  • Clean and trim the cauliflower into small bouquets.
  • Cook the scraps and 1/2 of the white parts in vegetable stock until soft, about 10 to 15 minutes. Add the cream. Remove from the heat and puree. Season, to taste, with salt and pepper.
  • Saute the remaining cauliflower bouquets in a hot saute pan with a little butter. When the cauliflower just starts to get tender, but is still crunchy, add the puree and mix well. Season, to taste, with lemon and salt and pepper.

ICED MOCHA

Combine the richness of chocolate milk with a hit of espresso and a whipped cream topping to make a moreish iced mocha - it's like a dessert in a glass

150ml milk
25g milk or dark chocolate buttons
ice
35ml freshly made espresso
30ml double cream, whipped (optional)
pinch cocoa powder or cinnamon, or both (optional)

Steps:

  • Pour 50ml of the milk into a small pan and add the chocolate buttons. Mix well until melted, then leave to cool.
  • Half-fill a large, tall glass with ice, then pour in the cooled chocolate milk and the remaining 100ml milk and stir to combine.
  • Top up with more ice, then slowly pour in the espresso. Finish with a dollop of whipped cream and a dusting of cocoa powder or cinnamon - or both, if you like.

200g milk or dark chocolate with coffee, broken into chunks
300ml pot double cream
1 tsp vanilla extract
2 tbsp crème fraîche

Steps:

  • Melt the chocolate in the microwave for 2 mins, stirring halfway through, or over a pan of gently simmering water. Leave to cool a little.
  • Using an electric whisk, whip the double cream with the vanilla in a bowl until lightly whipped. Fold in the cooled, melted chocolate until fully combined.
  • Split the mixture between four small bowls or ramekins and serve topped with a dollop of crème fraîche. If you aren't serving straight away, chill in the fridge and then add the crème fraîche just before bringing to the table.

  • Use an espresso machine or manual espresso maker to make two shots of espresso (or try our Aeropress Espresso). Place the chocolate chips into the mug and pour the espresso on top.
  • Place the milk and maple syrup in a pitcher. Hold the steaming wand just below the surface of the milk until it doubles in size and is very foamy. Lower the steaming wand slightly until the milk reaches 150 degrees Fahrenheit (use a thermometer or judge by when your hand can’t hold the pitcher for more than a few seconds).
  • Heat the milk and maple syrup to 150 degrees Fahrenheit, which is “scalding”: hot to the touch but not simmering. Measure with a food thermometer, or you can approximate by testing with your finger. Use a milk frother, French press or whisk to froth the milk until it’s very foamy. For a mocha you’ll want a good amount of froth. We recommend reading How to Froth Milk if this is your first time frothing. For the French press method, note that it’s useful to have at least 1 cup to have more milk to work with: this makes enough for 2 drinks.
  • Swirl the milk container a few times. Pour milk and foam into center of the chocolaty espresso. If desired, top with chocolate shavings for garnish.
