Steps:
- Heat oven to 300°F.
- Spray large baking sheet with cooking spray. Cook caramels, butter and water in large saucepan on low heat until caramels are melted, stirring frequently.
- Combine popcorn and nuts in large bowl. Add caramel mixture; toss to coat. Spread onto prepared baking sheet.
- Bake 20 min., stirring after 10 min. Spoon onto sheet of waxed paper; cool completely. Break into clusters.

FAST AND EASY CARAMEL POPCORN
This recipe is sure to be a hit with friends and family. It's super easy and there's not much of a mess to clean up afterwards. My kids love watching the mixture foam after adding the baking soda. We all start eating it right away but I do prefer it after it has had time to cool. It's a real treasure to create! P.S. You might want to break it up with your hands as it starts to cool.

Steps:
- Place popped corn in brown bag.
- Melt margarine, brown sugar and syrup in microwave on high for 5 min stirring once every 1/2 minute
- Stir in baking soda, mixture will foam!
- Pour over popcorn in bag and shake well.
- Place in microwave on high for 1 inches Shake again, heat for one more minute.
- Shake, pour into bowl to cool and then enjoy!

EASY CARAMEL POPCORN
This is habit-forming, it is soooo good and so simple to make, you can also use unskinned almonds or use whatever nut you desire --- you may also add 1/3 cup molasses for a stronger caramel flavor :)

Steps:
- Set oven to 250 degrees F.
- Put the popped corn in a large bowl.
- Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
- Then boil for 5 minutes WITHOUT stirring (this is important DO NOT stir for 5 minutes!).
- Remove from heat and stir in baking soda and vanilla.
- Add in the nuts and stir to combine.
- Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
- Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
- Remove from oven then cool.
- Break into pieces.
- Store in a tightly covered tin box.
- Delicious!

- Preheat oven to 350.
- Pop the popcorn and distribute it evenly between 2 large baking sheets with rims.
- Divide the peanuts in half and sprinkle on top of the popcorn.
- In a heavy saucepan melt butter over medium heat. Stir in brown sugar and molasses.
- Bring to a boil and boil for 5 minutes.
- Remove from heat and drizzle over the 2 sheets of popcorn, distributing it as evenly as possible.
- Bake in oven for 15 minutes, gently turning the popcorn with a large spatula every 3 minutes.
- As it bakes, the caramel will melt and cover the popcorn evenly.

- Pop the popcorn kernels using your preferred method. I like to use a popcorn machine because it makes perfectly popped kernels without burning any of them or letting the popcorn get tough (something that used to happen to me when I made popcorn on the stove).
- Spray a metal bowl with non-stick spray (you could also use butter or a flavorless oil to grease the bowl). Do NOT use a plastic or glass bowl when making caramel corn. The hot caramel can melt plastic and cause glass to shatter.
- Combine the water, granulated sugar, brown sugar, corn syrup, and butter into a large saucepan with high sides and cook over medium-high heat. Stir the mixture with a silicone spatula until the sugar dissolves and then add the candy thermometer. Stop stirring and let the mixture continue to cook. If you notice the caramel cooking unevenly, swirl the sugar mixture rather than stirring it to evenly distribute the cooked caramel. Stirring caramel can sometimes cause crystallization to occur and the caramel will be grainy (not what we want).
- Immediately pour the caramel over the popcorn in the metal bowl and gently, but quickly, fold the caramel into the popcorn. Avoid pouring the caramel onto the sides of the metal bowl because this will cool the caramel prematurely and it won’t sufficiently cover the popcorn. Continue folding until the popcorn is completely covered.
