1/2 cup butter (softened)
1 cup white sugar
2 eggs (room temperature)
1 Teaspoon vanilla
2 cups all purpose flour
1 Teaspoon baking soda
1 Teaspoon baking powder
1/4 Teaspoon salt
1 cup sour cream
2 cups diced apples
3/4 cup chopped walnuts
11/2 Teaspoon cinnamon
3/4 cup dark brown sugar
3 Tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees. Grease a 13x9 inch pan.
  • Place the butter and sugar in a large bowl, beat until well incorporated. Add the eggs and vanilla, beat until light and fluffy.
  • Sift the flour,baking soda, baking powder and salt together. Add the dry ingredients alternately with the sour cream, (Example...add 1/3 of the dry ingredients, beat until just incorporated, add 1/2 the sour cream, beat until just incorporated. Add 1/3 more flour, beat until just incorporated, add the last half of the sour cream, beat until just incorporated, add the last 1/3 of the flour, beat until just incorporated.)
  • Stir in the diced apples. Spread the batter evenly into your prepared pan. Sprinkle the topping over top, bake at 350 degrees for 35 to 40 minutes or until a toothpick inserted comes out clean.

TOPPING:
1/2 cup packed brown sugar
1/2 cup chopped pecans
2 tablespoons butter, softened
1 teaspoon apple pie spice

Steps:

  • In a bowl, cream butter and sugar. Beat in eggs and vanilla. Combine flour, baking soda and salt; add alternately with sour cream to the creamed mixture. Fold in apples. Spoon into a greased 9-in. square baking pan. In a small bowl, mix topping ingredients; sprinkle over batter. Bake at 350° for 35-40 minutes or until done.

1 cup sugar

1 tsp vanilla
1 cup sour cream

1 Tbsp all purpose flour
1 tsp cinnamon
½ cup walnut pieces
1 Tbsp unsatled butter, melted
2 cup apples, sliced, such as Mutsu or Granny Smith

Steps:

  • Preheat oven to 350° F. Cream butter and sugar until smooth. Add eggs one at a time, stirring well after each addition. Add vanilla and stir in sour cream. In a separate bowl, combine dry ingredients and stir into wet ingredients until just incorporated.
  • In another bowl, combine all ingredients for topping. Toss half of the topping with the sliced apples. Scrape the coffee cake batter into a greased 8-inch round cake pan and level. Cover cake with apples and sprinkle remaining topping over. Bake for 55 to 60 minutes, until a tester inserted in the center of the cake comes out clean.
  • Serve warm or at room temperature.
  • Yield: 1 8-inch round cake

Easy apple coffee cake made with yellow cake mix, fresh apples and lots of cinnamon sugar swirled in. This easy apple cinnamon cake will become your favorite fall cake and your house will smell like Cinnabon!

2 apples (diced into small pieces (I recommend granny smith, honey crisp, or gala))
1/2 cup brown sugar
1 1/2 tbsp cinnamon
1 cup sour cream
3/4 cup vegetable oil
4 large eggs
1 tsp vanilla extract
1 box yellow cake mix (15.25 oz (can use a gluten free mix!))
2 cups powdered sugar
3 tbsp milk or more in needed
1 tsp vanilla extract

Steps:

  • Preheat the oven to 350º F. Spray a 9x13 inch pan with non-stick cooking spray. Set aside.
  • Dice the apples into small pieces. Set aside.
  • In a small bowl, combine the brown sugar and cinnamon, mix with a spoon to combine. Remove 3 tbsp and sprinkle over the apples. Set aside the remaining cinnamon sugar mixture. And set aside the apples.
  • In a large mixing bowl, combine the sour cream, vegetable oil, eggs, and vanilla extract, beat with an electric mixer for 1 minute or until combined. Add in the cake mix, gently mixing with the beater. Add in the apples and mix by hand until incorporated. Pour the cake mixture into the 9x13 inch pan, smooth with a spatula.
  • Sprinkle the remaining cinnamon sugar mixture all over the cake. Use a butter knife or spatula to swirl this mixture into the cake batter.
  • Bake for 32-35 minutes or until a toothpick inserted in the center comes out clean. Remove the cake from the oven and allow it to cool while you make the glaze.
  • In a mixing bowl combine the powdered sugar, milk and vanilla extract. Use a whisk to stir the mixture until it's smooth.
  • YOUR CHOICE: pour the glaze over the warm cake or let the cake cool completely then add the glaze. Serve right away or cover the cake pan with a lid and store on the counter until serving.

1 1/2 cups chopped apples
1/3 cup packed brown sugar
1 tablespoon flour
2 tablespoons butter
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1/2 cup finely chopped nuts (I use walnuts)
1 1/2 cups sugar
3/4 cup butter, softened
1 1/2 teaspoons vanilla
3 eggs
3 cups flour (all purpose or whole wheat)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1 1/2 cups sour cream
1/2 cup powdered sugar
1/4 teaspoon vanilla
1 -2 teaspoon milk

Steps:

  • Preheat oven to 325°F; grease a 12-cup Bundt pan or a 10x4-inch tube pan.
  • Prepare apple-nut filling: Cook all ingredients, except nuts, over medium heat, stirring constantly. Cook until apples are tender. This will take approximately 3 to 4 minutes. Stir in nuts. Set aside.
  • Combine sugar, butter, vanilla and eggs in a large mixing bowl. Beat at medium speed, 2 minutes, scraping bowl occasionally.
  • Alternately add the dry ingredients and the sour cream, beginning and ending with the dry ingredients. Beat well between each addition on low speed.
  • Spread 1/3 of the batter (about 2 cups) in the baking pan. Top with 1/3 of the filling. Repeat this pattern 2 more times, until all batter and filling have been used.
  • Bake at 325°F for 1 hour, until a toothpick inserted near the center comes out clean. Cool in the pan for 20 minutes, then turnout onto a serving plate and cool completely.
  • To prepare glaze: Mix all ingredients until smooth, then drizzle over cooled coffee cake.

  • For Cake: Preheat oven to 350F.
  • Butter 13 x 9 x 2 inch glass baking dish.
  • In a small bowl, whisk sour cream and buttermilk to blend.
  • In a medium bowl, sift flour, baking powder, baking soda, and salt.
  • In a large bowl, beat butter and both sugars until creamy.
  • Add eggs, one at a time, beating well after each addition.
  • Mix in lemon juice and vanilla extract.
  • Beat in dry ingredients alternately with sour cream mixture in 3 additions each, mixing just until smooth.
  • Spread half of batter in prepared pan.
  • Spoon apple filling on top of batter.
  • Spread remaining batter over filling.
  • Sprinkle with topping.
  • Bake cake until tester inserted into center comes out clean, about 45 minutes.
  • If the top starts browning too quickly, cover with foil.

Apple Cream Coffee Cake is always on my menu for brunch, and good for snacking at any time of day!

1-1/2 cups sugar, divided
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1 cup sour cream
1/2 cup chopped walnuts
2 teaspoons ground cinnamon
1 medium apple, peeled and thinly sliced

Steps:

  • In a large bowl, cream butter and 1 cup sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream, beating well after each addition. In a small bowl, combine the nuts, cinnamon and remaining sugar., Spread half of the batter in a well-greased 10-in. tube pan with a removable bottom. Top with apple slices; sprinkle with half of the nut mixture. Top with remaining batter, then with remaining nut mixture. , Bake at 375° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 30 minutes. 1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
1 cup sour cream
½ cup vegetable oil
6 apples - peeled, cored and sliced
½ cup white sugar
2 teaspoons ground cinnamon
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
  • In a large bowl, stir together the cake mix and instant pudding mix. Add the eggs, sour cream and oil, mix until well blended. In a small bowl combine the sugar, cinnamon and walnuts.
  • Pour half of the batter into the prepared pan, then place a layer of sliced apples over the batter and sprinkle with half of the cinnamon walnut mixture. Pour the remaining batter over the top and repeat with the remaining apples and cinnamon walnut mixture.
