BEST Homemade Mexican Chorizo image

Simple and quick to make and bursting with flavor, you can have have this delicious chorizo on hand any time you need it - just grab some from the freezer!

1 lb coarsely ground lean pork
6 oz coarsely ground pork fat ((ask your butcher))
5 cloves garlic (,minced)
2 tablespoons ancho chile powder
1 tablespoon sweet paprika
1 teaspoon smoked paprika
1 1/2 teaspoons salt
2 teaspoons dried Mexican oregano
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
4 tablespoons cider vinegar

Steps:

  • Place the meat in a large bowl and all all remaining ingredients. Use your hands to thoroughly combine the mixture. Place the chorizo in a colander or sieve over a bowl, cover the top with plastic wrap, and refrigerate for 3 days, daily squeezing out and discarding any liquid (this isn't absolutely necessary but it will more closely resemble the texture of store-bought chorizo). After 3 days, divide the meat up into 6 little 4 oz loaves, wrap each one in plastic wrap and place the loaves in a freezer bag or wrap again in aluminum foil. You can also use wax or freezer paper.
  • The chorizo will keep in the freezer for up to 4 months. Storing it longer doesn't really pose a safety concern, but the taste will suffer.
  • Makes 1 1/2 pounds, divided into six 4 oz. servings.

How to make your own low fat, high protein Mexican chorizo using ground pork tenderloin.

1 pound Ground Pork Tenderloin*
1/4 cup Chorizo Seasoning (or a homemade blend)**
1/2 tsp Kosher Salt
3 Tablespoons (45g) Vinegar
3 Tablespoons (45g) Water

Steps:

  • Mix the chorizo seasoning, salt, vinegar, and water together before adding to the ground pork. Mix together, making sure the seasoning is evenly incorporated. Refrigerate in an airtight container, ideally overnight, before cooking.
  • To cook the chorizo, heat a skillet over medium-high heat with 1-2 teaspoons of oil before adding the chorizo. Break apart and fully cook.
  • For the tacos pictured here, I cooked half (8oz) of the chorizo, pushed to one side of the pan, and scrambled 4 eggs on the other side. I served it over guacamole on warmed tortillas and topped with jack cheese, diced onion and cilantro, and salsa.

In college, I spent some summers in New Mexico, where I fell in love with authentic Mexican chorizo. But having become very health-conscious, my husband and I have been trying to replicate that chorizo flavor in extra lean ground turkey. This recipe tastes just like the pork chorizo from our favorite taco trucks. Serve in tacos, burritos, quesadillas, omelets, or breakfast burritos. I suggest serving on corn tortillas, with chopped onion and cilantro garnish, and a squeeze of lime.

3 dried red chile peppers, or more to taste
2 tablespoons apple cider vinegar
2 tablespoons red chile powder
1 tablespoon water
1 tablespoon crushed dried oregano
2 teaspoons salt
2 large cloves garlic, minced
1 teaspoon cumin seeds
¾ teaspoon white sugar
½ teaspoon freshly ground black pepper
1 ¼ pounds extra-lean ground turkey breast
2 teaspoons olive oil
½ lime, juiced
¼ orange, juiced

Steps:

  • Pulse dried red chile peppers in a spice grinder until coarsely ground.
  • Combine ground chile peppers, apple cider vinegar, red chile powder, water, oregano, salt, garlic, cumin, sugar, and black pepper in a large bowl; mix well. Add turkey; mix until seasonings are well-incorporated.
  • Heat olive oil in a large skillet over medium-high heat. Add seasoned turkey; cook, stirring frequently to break up clumps, until no longer pink, 3 to 5 minutes. Stir in lime juice and orange juice. Continue cooking until browned, about 5 minutes more.

A mildly hot, and very delicious, Mexican sausage. Excellent for breakfast, lunch, or dinner. Can be made into patties and cooked in a skillet, or stuffed into natural hog or collagen casings and grilled at your next family gathering.

2 pounds boneless pork butt (shoulder), cut into 3/4-inch pieces
1 ½ tablespoons crushed Aleppo peppers
1 ½ tablespoons chili powder
4 cloves garlic, minced
2 teaspoons salt
1 teaspoon freshly ground black pepper
½ teaspoon dried oregano
½ teaspoon ground cumin
¼ teaspoon ground cloves
¼ teaspoon ground coriander
½ cup distilled white vinegar
2 tablespoons water
1 teaspoon vegetable oil

Steps:

  • Place the pork, Aleppo pepper, chili powder, garlic, salt, black pepper, oregano, cumin, cloves, and coriander into a bowl, and lightly toss the pork with the seasonings until thoroughly blended. Cover the bowl, and refrigerate the meat, your meat grinder's head assembly, and grinder hopper for 1 hour.
  • Fill a large mixing bowl with ice cubes, and place a smaller metal bowl in the ice cubes to catch the ground meat. Assemble the chilled meat grinder, and grind the pork and seasonings using a coarse cutting plate. Return ground meat to refrigerator for 30 minutes. Lightly stir the ground pork with the vinegar and water until thoroughly mixed, form into patties, and refrigerate overnight, covered, to let flavors develop.
  • Heat vegetable oil in a heavy skillet over medium-low heat, and pan-fry the patties until browned and no longer pink in the middle, 5 to 8 minutes per side.

1 lb ground beef, 80% lean
1 teaspoon salt
1 tablespoon chili powder
⅓ lb ground chorizo
1 tablespoon oil
3 hamburger buns
3 oz manchego cheese, sliced
½ cup guacamole
⅓ cup pico de gallo
⅓ cup cotija cheese
¼ cup sour cream

Steps:

  • Mix together the patty ingredients until combined.
  • Form the beef mixture into 3 round patties.
  • Heat oil in a pan over medium heat.
  • Cook the burgers for 3 minutes on the first side, flip, and place a slice of manchego cheese on top.
  • Cook for 6 more minutes until the cheese is melted.
  • Assemble the burgers on the buns with guacamole, cotija, pico de gallo, and sour cream.
  • Enjoy!
