Steps:
- In a large bowl, combine cabbage and carrots. In a smaller bowl, make dressing by combining mayonnaise, vinegar, celery seed, sugar, salt and pepper. Toss dressing into cabbage mixture and let chill. Serve in a family style bowl.

Steps:
- Gather the ingredients.
- In a large jar or medium bowl, combine the mayonnaise, 5 to 6 tablespoons of the sugar, the vinegar, celery seed, Creole seasoning, and black pepper. Whisk to blend or cover the jar and shake it until well blended.
- Toss with shredded or chopped cabbage and refrigerate for an hour or two before serving for best flavor.
- This dressing makes enough for about 1 medium head of cabbage . We like to add some grated carrot and onion or onion powder to the mixture, or you could use green cabbage with some shredded red cabbage (see the note about red cabbage and red onion in the Tips and Variations, below).
- Serve coleslaw with any summer meal, barbecued ribs, grilled chicken, burgers, or pulled pork, or use it to top shredded beef or chicken sandwiches. It is, of course, an essential side to serve with fried catfish or fish and chips.

CREAMY COLESLAW DRESSING
Coleslaw is one of my all-time favorite foods if it has a nice, creamy dressing. After doing some research, making dozens of different dressings, and trying to find the flavor that I like, I came up with this dressing for coleslaw that became a hit. I'm always asked for this recipe. What surprised me was at a potluck when a culinary chef asked me for my recipe. He told me that it was one of the best he had ever tasted since he had left the southern part of the USA.

EXCELLENT, EASY COLESLAW
I usually fix this slaw when we have fresh fish. My mom always fixed this coleslaw for all the fish fries we went to. Mine is just sweeter, which is how my husband likes it! Prep time includes chilling time.

Steps:
- Place shredded cabbage and grated carrots in salad bowl.
- Mix together mayonnaise, vegetable oil, sugar, and vinegar.
- Mix dressing with cabbage and carrots being careful not to add too much as the cabbage will wilt down. Refrigerate and at serving time, add more a bit more dressing if needed.
- I have made this with Splenda instead of sugar and it works very well.
