Thai Chicken and Noodle Salad image

This one-bowl Asian meal is spicy, salty, sour, and sweet-all at once. The secret's in the sauce, made from fragrant kitchen standbys. The salad has terrific texture, with crisp carrots and cucumber, tender noodles, and (if you like) crunchy peanuts.

1 1/4 pounds boneless, skinless chicken breasts, thinly sliced crosswise
Spicy Asian Dressing for Thai Chicken and Noodle Salad
Coarse salt
3 1/2 ounces Chinese rice noodles, broken in half if long
1 tablespoon vegetable oil, such as safflower
2 carrots, sliced into ribbons with a vegetable peeler
1 English cucumber, halved lengthwise and thinly sliced crosswise
1/4 cup fresh basil, torn
Bean sprouts, chopped peanuts, fresh mint leaves, red-pepper flakes, and sliced scallion greens, for garnish (optional)

Steps:

  • Place chicken and half of dressing in a resealable plastic bag (reserve remaining dressing). Marinate at room temperature for 30 minutes (or refrigerate up to overnight).
  • In a large pot of boiling salted water, cook noodles until tender. Drain, and rinse under cold water to stop the cooking. Transfer to a platter.
  • In a large skillet, heat oil over medium-high. Working in batches, cook chicken (do not crowd skillet) until cooked through, 1 to 2 minutes; transfer to platter on top of noodles.
  • Top with carrots, cucumber, and basil. Drizzle with reserved dressing, and sprinkle with garnishes, if desired.

Dressing
3 tablespoon lime juice
1 tablespoon fish sauce (nuoc mam)
1 tablespoon orange juice
1 large clove garlic, minced
1 1/2 teaspoons chile paste
1 tablespoon light brown sugar
1/2 teaspoon sesame oil
2 tablespoon neutral flavored oil (like canola or grapeseed)
Whisk everything together and let set at room temprature while you prepare the rest of the ingredients.
Salad
1/2 pound skirt steak, flank steak, or a similar thin cut
1 ounce dried rice noodles, soaked until soft in boiling water, cut into pieces if very long, and chilled
1 large handful mesclun or chopped lettuce
1 large handful shredded cabbage
1 carrot, julienned
1 avocado, cubed
1 cucumber, diced
1 mango, cubed
1 beefsteak tomato, cubed
2 scallions, thinly-sliced
2-3 tablespoons toasted, crushed peanuts
1/2 cup chopped cilantro, mint, basil combination

Steps:

  • Season the beef with salt and pepper and sear in a hot skillet (preferably cast iron) for 2-3 minutes per side, or until medium rare. Let the meat rest for a few minutes, then slice on the bias and toss with 2-3 tablespoons of the dressing. Mix the remaining salad ingredients (except the peanuts) in a large bowl, and add dressing until everything is well coated. Divide the salad between two plates, mound the beef on top and sprinkle with the chopped peanuts.

For the salad:
1 small head (about 2 cups) romaine lettuce
1/4 head (about 2 cups) red cabbage
1 large red bell pepper
1 large carrot (about 1/2 cup), shredded
1 mango
1/4 cup cilantro leaves, plus more for garnish
1/4 cup green onions, plus more for garnish
1/4 cup roasted peanuts, roughly chopped, plus more for garnish
8 ounces (227 grams) pad Thai rice noodles
For the peanut dressing (makes 3/4 cup):
1/3 cup creamy peanut butter
3 tablespoons lime juice
3 tablespoons water
3 tablespoons brown sugar
4 teaspoons rice wine vinegar
4 teaspoons soy sauce
1 teaspoon sesame oil
1/4 teaspoon fish sauce
1/2 teaspoon sriracha or chili paste
1/2 teaspoon minced ginger
1/2 teaspoon minced garlic

Steps:

  • Drain and cool the noodles: Transfer to a colander, drain, and rinse with cool water until noodles are cold. Allow to drain well until ready to add to the salad. If noodles stick together, rinse them in cool water to separate.
  • Combine the salad: Add the rice noodles to the bowl with the vegetables, herbs, and peanuts. Pour half of the dressing over the salad.
  • Serve: Garnish salad with additional cilantro leaves, green onions, and chopped peanuts. Serve the remaining dressing on the side.

1 teaspoon fresh ginger, minced
1 teaspoon fresh garlic, minced
1/2 teaspoon lemon grass paste
1/4 cup Thai fish sauce
1 tablespoon soy sauce, add more if you wish
1 to 2 tablespoon red curry paste, to your taste.
1 teaspoon cornstarch
1/2 teaspoon chicken bouillon
1 can coconut milk
1/2 teaspoon sugar
1/4 teaspoon Red Hunan chile sauce, optional
Rice noodles
1 sweet yellow onion, sliced in 2" slender pieces
3 boneless skinless chicken breasts, or tender beef, cooked
1 lime
1 cup mushrooms sliced
1 red pepper, sliced in 2" slender pieces
1 cup sweet peas
1 cup broccoli, cut into small florets
1 can corn or baby ear corn

Steps:

  • Combine first 11 ingredients into small pot and simmer to keep warm. Add as much or as little of the curry to desired taste. I typically measure nothing. Just add until I get my desired taste. Prepare rice noodles according to directions on package. Sauté onions and and sliced chicken in pan with extra virgin olive oil, salt, pepper and lime juice to taste. Slice and prepare all vegetables. Sauté mushrooms until desired tenderness in a little oil, add all the rest of the vegetables. Sauté. Keep them crunchy. Do not over cook them. 2 minutes before you are ready to serve, add the chicken or beef to the veggies. Stir to warm. Place desired noodle in bowl. Add veggies and chicken. Pour sauce over top. Note: I had to double the sauce ingredients in order to make enough sauce for my liking, this fed a family of 4 with plenty leftovers. Note: Skip the hassle of all fresh vegetable prep and save time with two bags of frozen stir fry or thai veggies of your liking.

Coarse salt
12 ounces soba (Japanese buckwheat noodles)
2 tablespoons soy sauce
2 tablespoons fresh lime juice
1 tablespoon vegetable oil, such as safflower
2 scallions, trimmed and thinly sliced
1/2 English cucumber, halved lengthwise and thinly sliced
1/4 cup unsalted peanuts, coarsely chopped
1/4 cup fresh mint leaves, plus more for garnish

Steps:

  • In a large pot of boiling salted water, cook noodles until tender according to package instructions. Drain, then rinse under cold water to stop the cooking. Drain well.
  • In a small bowl, whisk together soy sauce, lime juice, and oil. In a large bowl combine noodles, scallions, cucumber, peanuts, and mint. Toss noodle mixture with sauce, garnish with additional mint, and serve.

RICE NOODLE SALAD

You can use Southeast Asian rice sticks or Chinese cellophane noodles (made from bean starch) for this Thai salad. It makes a satisfying lunch, or serve it as a starter or side dish (it will serve up to 6 as a side).

1/4 cup fresh lime juice
2 tablespoons Thai fish sauce or 1 tablespoon soy sauce
1 teaspoon sugar
2 to 3 teaspoons finely minced ginger (to taste)
1/2 teaspoon red pepper flakes, or a pinch of cayenne
2 tablespoons Chinese sesame oil
2 tablespoons canola oil
3 ounces dried rice noodles (rice sticks) or cellophane noodles
1/2 small Napa cabbage or 1 romaine heart
3 scallions, cleaned and thinly sliced on the diagonal (optional)
1 cup coarsely chopped cilantro
1 medium carrot, grated or cut in fine julienne
Lettuce leaves for the bowl or platter

Steps:

  • Mix together the dressing ingredients. Taste and adjust seasonings. Place the rice or cellophane noodles in a bowl and cover with warm water. Soak for 20 minutes, and drain.
  • Bring a large pot of water to a boil and add the noodles. Cook about 1 minute, or until tender. Drain well and coarsely chop using scissors. Toss with all but 2 tablespoons of the dressing.
  • If using Napa cabbage, cut the halved cabbage in half again, cut out the core, then slice crosswise into thin strips. If using romaine, cut in half, then slice crosswise into thin strips. Toss with the noodles, along with the scallions, cilantro, and carrot.
  • Line a platter or bowl with lettuce leaves and pile on the salad. Spoon on the remaining dressing, and serve.

1/2 pound dried flat rice noodles, 1/8 inch thick
1/4 cup light-brown sugar
3 tablespoons white vinegar
3 tablespoons Asian fish sauce (nam pla)
1 tablespoon tamarind paste, mixed with 1 tablespoon water, or 2 tablespoons molasses
1/4 teaspoon coarsely ground dried red chiles, or to taste
1 tablespoon dried shrimp, minced
2 tablespoons canola oil
2 shallots, minced
2 large cloves garlic, minced
Salt
1/4 pound string beans, trimmed and thinly sliced lengthwise
1/4 pound sugar-snap peas, cut in half
12 medium shrimp (1/2 pound), peeled and deveined
1 cup fresh bean sprouts
3 scallions (green parts only), very thinly sliced on the diagonal
1 tablespoon roasted peanuts, coarsely chopped, for garnish
1 lime, quartered lengthwise, for garnish
Fresh cilantro sprigs, for garnish

Steps:

  • Soak noodles in warm water for 20 minutes, or until softened; drain well. Meanwhile, combine 1/4 cup water, sugar, vinegar, fish sauce, tamarind mixture, and dried chiles in a small saucepan. Simmer, stirring, for 5 minutes. Remove from heat, add dried shrimp, and set aside.
  • Heat oil in a large nonstick skillet or wok over medium heat. Add shallots and garlic, and stir-fry for 2 minutes. Stir in sugar mixture, and reduce heat to lowest possible setting. Bring a medium saucepan of salted water to a boil. Add string beans, and cook for 1 1/2 minutes. Add sugar-snap peas, and continue cooking for 30 seconds. Drain, and set aside.
  • In another large nonstick skillet, cook shrimp over medium-high heat, 3 minutes per side. Meanwhile, add noodles, a quarter of the bean sprouts, and half the scallions to the shallot mixture. Raise heat to high, and boil, stirring, for 2 minutes. Add shrimp, string beans, and sugar-snap peas, and stir for 1 minute more. Turn out noodles onto a platter, sprinkle with peanuts and remaining scallions, and arrange lime quarters, coriander sprigs, and remaining bean sprouts beside them.

½ a pack fine vermicelli rice noodles
200g bag beansprouts
zest and juice 2 limes
2-3 tbsp fish or soy sauce , to taste
1 tsp muscovado sugar or soft brown sugar
1 red onion , halved and thinly sliced
2 Little Gem lettuce hearts, leaves separated and roughly torn
500g minced pork
small knob grated ginger
pinch cayenne pepper
1 tsp sunflower oil
2 tbsp sesame seeds
1 tsp oil
4 x sirloin steaks
1 deseeded and shredded red chilli

Steps:

  • Place the noodles and beansprouts in a heatproof bowl and cover with boiling water. Leave for 4 mins, or until the noodles are tender. Drain, then cool under cold running water and drain again. Return to the bowl.
  • Stir together the lime zest and juice, fish or soy sauce and sugar. Stir into the noodles with the red onion and lettuce.
  • To make with mince, heat a little oil in a non-stick frying pan and stir-fry 500g minced pork, a small knob of grated ginger and pinch cayenne pepper or chilli powder for 10 mins, until the mince is browned and cooked through. Mix into the noodles, divide between four bowls and serve warm.
  • To make with steak, make the rice noodle salad. Heat 1 tsp sunflower oil in a frying pan. Tip 2 tbsp sesame seeds onto a plate. Rub 1 tsp oil into 4 x 175g sirloin steaks and press into sesame seeds. Fry for 5 mins for medium rare, turning halfway. Leave to rest for 5 mins, then thinly slice. Toss 1 deseeded and shredded red chilli, and a handful mint leaves into noodles. Top with steak to serve.
