MATCHA ALMOND CAKE

Matcha Almond Cake image

Provided by Danielle Sepsy

Categories     dessert

Time 1h20m

Yield Makes 1 loaf

Number Of Ingredients 14

1/2 cup unsalted butter, plus more to grease the pan
1 cup all-purpose flour, plus more for dusting the pan
1 1/2 teaspoons baking powder
1/4 teaspoon fine table salt
5 ounces cream cheese, softened
3/4 cup granulated sugar
2 large eggs
2 1/2 teaspoons matcha green tea powder
3/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1/3 cup sliced almonds, optional
1/2 cup confectioners' sugar
2 teaspoons fresh lemon juice
1/8 teaspoon almond extract

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Butter and flour a 9-by-5-inch loaf pan.
  • Combine the flour, baking powder and salt in a medium bowl.
  • Combine the butter, cream cheese and sugar in a large bowl until light and fluffy. Beat in the eggs one at a time, then stir in the matcha, almond extract and vanilla. Gently stir in the flour mixture with a wooden spoon until it's just incorporated, being careful not to overmix.
  • Pour the batter into the prepared pan and sprinkle the almonds evenly over the top, if desired. You can put as many or as few of the almonds as you like or none at all! I think it adds a wonderful crunch to the top of the cake.
  • Bake until a toothpick inserted in the center of the cake comes out clean, 40 to 55 minutes.
  • Let cool in the pan for 10 minutes, then turn it out onto a wire rack. Meanwhile, quickly put together the glaze while the cake is still pretty hot.
  • For the glaze: Whisk together the confectioners' sugar, lemon juice and almond extract in a small bowl. Whisk in some water, 1 tablespoon at a time, until the mixture is smooth and loose. Drizzle the glaze over the top of the cake with a spoon and brush the sides using a pastry brush. Cool until the glaze creates nice sugary crust on the outside.
  • Enjoy!

JEWISH COFFEE CAKE I

Jewish Coffee Cake I image

Provided by Suzanne

Categories     Desserts     Cakes     Coffee Cake Recipes

Time 2h50m

Yield 20

Number Of Ingredients 12

2 ½ cups all-purpose flour
1 ¼ teaspoons baking powder
1 ¼ teaspoons baking soda
¾ cup butter, softened
1 ¼ cups white sugar
3 eggs
1 teaspoon vanilla extract
1 ¼ cups sour cream
¼ cup butter, softened
½ cup all-purpose flour
¼ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish. Combine 2 1/2 cups of flour, baking powder, and baking soda in a bowl.
  • Beat the 3/4 cup of butter and 1 1/4 cups of sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in the vanilla with the last egg. Pour in the flour mixture alternately with the sour cream, mixing until just incorporated. Batter will be thick. Pour the batter into prepared pan.
  • Mix 1/4 cup of butter, 1/2 cup of flour, 1/4 cup of sugar, and cinnamon in a small bowl until it resembles a coarse crumble. Sprinkle over the cake batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

  • For the jelly, break the jelly into pieces and place in a small bowl. Pour over the boiling water and stir until the jelly is completely dissolved. Add the orange zest, then pour into a shallow 12x8in tray.
  • Meanwhile, preheat the oven to 350F and grease a 12-hole, shallow bun tin with butter.
  • For the sponge, whisk the egg and sugar together for 4-5 minutes until pale and fluffy, then gently fold in the flour. Fill each well in the bun tin three-quarters full (about a dessert spoonful per hole) and smooth the tops.
  • To assemble, break the chocolate into pieces then melt in a bowl set over a pan of gently simmering water. Remove the bowl from the heat and leave to cool and thicken slightly.
  • Turn the jelly out onto a sheet of non-stick baking parchment. Cut 12 discs from the orange jelly using a 2in round cutter. Sit one jelly disc on top of each sponge.
  • Spoon the melted chocolate over the jelly discs. Using the tips of the tines of a fork or a skewer, lightly press to create a criss-cross pattern on top of the chocolate, then leave to set completely.
