EMERGENCY SPREAD
I have included how to make toast points because that's what I like this stuff on. It got it's name from pulling me out of many rough situations when I needed to bring something to some function and had forgotten.

Steps:
- Mix these ingredients and spread on toast points and run under the broiler for about 15 seconds.
- Be careful not to burn.
- I prefer to use it on toasted bread, which I make by trimming the crusts from day old (that's using the term loosely, it's usually many days old).
- Cut the bread slices into triangles or squares, up to you.
- Place bread on cookie sheet at 350 degrees for 10 minutes.
- Turn oven to 200 degrees or warm and leave in oven for 1-2 hours or until as crisp as you like them.

- Grilled Lemon Chicken with Feta Rice. This is one of my favorite easy dinners for a number of reasons, but mostly because I almost always have everything I need for it on hand.
- Chickpea and Chorizo Tostadas. For these you will need canned chickpeas, frozen chorizo, yogurt, limes, and tostadas. Cilantro optional. If you've got masa harina on hand to make homemade tortillas you can make your own tostadas if you'd rather not buy the premade ones.
- Spaghetti & Meatballs For Days. Almost all the ingredients for this spaghetti sauce are canned or dried. There's some fresh basil and fresh parsley, but in a pinch you can replace them with their dried counterparts.
- Basic Dal. Not gonna lie, this is the recipe from Indian-ish (Amazon, Bookshop.org) is the number one thing I'm prepared to make in pretty much any situation where emergency recipes are required.
- Samosa Pot Pie. You will need: Frozen peas, frozen puff pastry, frozen pie shells, lemon juice, and potatoes. You will also need a handful of spices, optional fresh cilantro, and an optional fresh serrano or jalapeño pepper.
