EMERALD GREEN SEAWEED SALAD
I have been searching for this recipe for years. I finally found one but changed some of the ingredients so that it was healthier. The end results was perfect, it tasted just like the salad I've eaten in Asian restaurants. You can get the sea weed ingredients for this salad at most Asian supermarkets, that's where I got mine. I went to Whole Foods for the Coconut Aminos, Coconut Vinegar and Coconut Nectar. These are made by Coconut Secret.

Steps:
- Soak the wood ear mushrooms in 140'F water for 30 minutes. Drain and rinse in cold water, squeeze out the excess water. Set aside.
- Soak the cut agar strands in 100'F water for 30 minutes. Drain, rinse in cold water, drain and set aside.
- Soak the Wakame in cold water for 5-6 minutes. Drain. Rinse in a bowl of clean water. It should turn green. Squeeze out the excess water. Set aside.
- Make your sauce and then mix everything together. You can leave this sit overnight in a non-reactive bowl. It needs that time so the flavors can go through the sea weed. NOTE: You could also make the sauce ahead of time and set it aside until the sea weed is complete. It's up to you.

- Add thinly sliced cucumbers to a medium bowl. Sprinkle 1/2 tsp salt and mix with hands, scrunching the cucumbers a little. Set aside.
- In a large bowl, place dried wakame. Add 2 cups hot water (I use water from the tea kettle) and soak for 10 minutes. The wakame will swell and rehydrate until soft enough to eat.
- After the wakame rehydrates, drain and gently squeeze out excess water. Do not rinse the wakame! Add cucumbers, squeezing out excess liquid. Add fresno chili pepper, if using. Add rice vinegar, sugar, and sesame oil. Gently mix together until well combined.
- Transfer to a serving bowl, leaving behind any excess liquid. Serve room temperature or chilled. The salad should last 4-5 days, refrigerated.

- Bring a pot of water to a boil. Add the kelp, and simmer over medium heat for 5 minutes. Drain and rinse thoroughly in cold water. Drain completely and set aside. (You can also run it through a salad spinner to dry it even more.)
- Next, make the sauce / dressing. In a large heat-proof bowl, arrange the minced garlic, minced ginger, Thai chilies, and the white parts of the scallions so they’re next to each other at the bottom of the bowl. Don’t pile them on top of each other, as you’ll be pouring hot oil over everything, and you want it in an even layer.
- Add 3 tablespoons of oil to a small pot or saucepan. Add the Sichuan peppercorns and let them infuse the oil over low heat for 10 minutes until fragrant. Take care not to burn the peppercorns.
- Scoop out the peppercorns, and turn up the heat on the oil until it’s just smoking. Then, immediately turn off the heat and pour the oil over the aromatics in your heat-proof bowl. The oil should be hot enough that the aromatics sizzle on contact.
