POTATO BROCCOLI SOUP
Steps:
- Melt butter in a saucepan over medium heat. Add onion & celery. Cook until softened, 3-4 minutes. Stir in garlic and cook just until fragrant, about 30 seconds.
- Add potatoes and chicken broth. Cover and simmer 8 minutes.
- Add broccoli and cook until softened, about 5-6 minutes.
- Remove 1 cup of broccoli and potatoes and slightly chop. Set aside.
- Using a hand blender, blend remaining soup in the pot until smooth. Add cream and simmer 1 minute. Stir in reserved broccoli, potatoes, and cheeses.
- Garnish with additional cheese if desired.

ELLEN'S ELEGANT POTATO-BROCCOLI SOUP
I started out to make someone else's soup today but found I didn't have all the right ingredients and couldn't go shopping because of the weather--snowed in! So I improvised and came up with a totally different soup which is SO YUMMY! It is so filling you don't really need anything to go with it. Hope you'll give it a try!

Steps:
- Cook potatoes and onions in boiling water, covered, for about 10 minutes; drain.
- Add cream cheese and broccoli soup; mix well.
- Stir in 3/4 of the crumbled bacon and 3/4 of the shredded cheese. Add garlic powder, chicken broth, and half and half. Stir until well combined.
- Add the butter, salt and pepper, and cover over low to medium heat until butter has melted.
- Stir again to combine all ingredients; simmer until hot. Serve immediately with the remaining bacon and cheese as garnish.

- 1. In separate saucepans, cook the potatoes and broccoli in boiling salted water, covered, until tender, about 10 minutes for each; drain and set aside.
- 2. Meanwhile, saute the onion in butter until tender, then add the garlic. When the garlic becomes aromatic, after about 1 to 2 minutes, stir in the flour and blend well. Gradually add the chicken broth and half and half, stirring constantly until it begins to get thick. If it gets too thick, add a little more liquid. Remember, the cheese will add thickness as well.
- 3. Stir in seasonings and the cheese, heating over low heat. When the cheese is melted, add the potatoes and broccoli.
- 4. Cook the bacon in a large skillet until crisp; drain and crumble. Add bacon to the soup and stir thoroughly.
- 5. Ladle the soup into bowls; garnish with croutons and bacon bits.
