ROCKY MOUNTAIN ELK STEW

Obviously this can be a deer, pronghorn, bison, beef, sheep, etc. stew. You could even use pork if you wanted to. Also note that there are a lot of optional ingredients, which I like a lot, but you can skip if you'd like.

Number Of Ingredients 17

4 tablespoons butter, canola oil or sunflower oil
2 to 3 pounds elk stew meat
Salt
1/2 cup flour
1 large yellow onion, (chopped)
4 cloves garlic, (minced)
1 ounce dried porcini, crushed ((or some other dried mushroom))
5 Hatch, Anaheim poblano peppers, (roasted, seeded, and chopped)
1 quart elk, venison or beef stock
1 pint Belgian beer ((anything malty))
2 large carrots, (peeled and cut unto chunks)
1 tablespoon fresh sage, (minced)
1 parsnip, (peeled and cut into chunks )
1 cup corn kernels
1 cup cooked barley or wheat berries
1 15-ounce can, Great Northern beans
1 cup chopped cooked greens, (like spinach, nettles, or chard)

Steps:

  • Heat 2 tablespoons of the butter or oil in a large soup pot with a lid over medium-high heat. Salt the stew meat well, then dust in the flour. Brown the meat in batches, making sure they do not touch each other. Remove the meat to a bowl as it browns and reserve.
  • When all the meat is nicely browned, add the remaining oil and the chopped onion. Stir well, and brown this well, too.
  • While this is happening, put 2 of the roasted chiles into a blender with the stock and puree.
  • Add the garlic and stir to combine. Return the meat to the pot, along with any juices that have collected in the bowl. Pour the contents of the blender into the pot. Crush the dried mushrooms in your hands and add to the pot. Fill the blender bowl again with water and pour that into the pot. Finally, add the beer. Bring all this to a simmer, add salt to taste, partially cover the pot, and let this cook gently.
  • If you are using dried beans, wheat berries or barley and greens, now is the time to cook them. If you are using canned beans, wait.
  • After about 2 hours, add the carrots and the sage, as well as the parsnip, if using. When they are tender, about 40 minutes or so later, add the remaining green chiles, and any of the other optional ingredients you happen to be using. Taste for salt and black pepper and serve.

"CARIBOU" STEW

1 pound lean caribou, diced medium (can be replaced by or combined with beef or venison)
4 large carrots, peeled and diced medium
2 large onions, peeled and diced medium
3 stalks celery, well scrubbed and diced medium
2 potatoes, peeled and diced medium
3 large tomatoes, diced medium
3 cloves garlic, chopped fine
1 bay leaf
1 quart beef stock
1 1/2 cups red wine (or beef stock)
1/2 cup all-purpose flour
4 ounces (1 stick) melted butter
2 tablespoons finely chopped fresh thyme leaves
1 teaspoon finely chopped fresh rosemary leaves
Salt and pepper

Steps:

  • In a large pot, place meat, carrots, onions, celery, potatoes, tomatoes, garlic, and bay leaf, and add beef stock and wine. Bring to a boil, then reduce heat to low and simmer for about 45 minutes. Mix flour and melted butter in a small bowl and add to stew to thicken. Add thyme, rosemary, and salt and pepper, and continue to simmer until meat is fork tender, about 30 minutes.

ELK OR CARIBOU STEW

1 lb elk roast
4 medium potatoes, cubed
1 lb fresh mushrooms (halved )
2 large carrots, - 1 inch slices
1 quart low sodium beef broth
2 cups water
1/4 cup cornstarch
1 teaspoon granulated garlic
1 teaspoon oregano
salt & pepper (optional)

Steps:

  • In a lightly oiled pan, Fry elk and onion until the outside of the meat is seared.
  • Place all ingredients (except corn starch) into your stew pot or crock pot. and cook until tender. (4-5 hours in a crock pot, 2-3 hours in oven at 350F).
  • Thicken with a slurry of corn starch and water prior to serving.
  • Consider using corn starch as a thickening agent whenever possible, especially if you have (or are serving guests) with gluten intolerance.

TRADITIONAL BANNOCK AND BERRIES RECIPE

This fast and easy bannock and berries recipes is one of the easiest and most delicious ways to experience a traditional indigenous recipe at home. It's also a perfect treat for the camp site.

Bannock
3 cups flour
1 1/2 cups water
3 tbsp baking powder
1/2 cup sugar
1 tsp salt
Vegetable oil for frying
2 cups raspberries
1/2 cup white sugar
1/2 lemon. Juiced and rind
1 pinch salt

Steps:

  • Preheat vegetable oil in a deep frying pan to 350 degrees Fahrenheit. (It's also possible to bake or cook the bannock over an open flame).
  • Mix flour, sugar, baking powder, and salt together in a medium-sized bowl.
  • Add water and mix until dough becomes thick and sticky. Do not over mix or the dough will become tough.
  • Roll the dough into a large ball and slice into 12 equal pieces.
  • Flatten each ball of dough with your hands.
  • Drop dough into the oil and fry until it is golden brown on both sides and soft, but cooked inside.
  • For the raspberry compote cook the berries in a saucepan over medium heat until soft.
  • Add sugar, lemon juice, rind, and salt.
  • Continue cooking until the sugar is dissolved.
  • Serve bannock drizzled with compote.

CARIBOU STEW

This is a favorite from the days when my father would take trips to Labrador hunting and fishing. Very simple and straight forward. I've never measured for this dish, its kind of to your personal liking. I've only made this in a slow cooker, but experiment, its well worth it.

1 -2 lb caribou, cubed
3 large potatoes, diced (or quartered)
3 -4 medium carrots, sliced thickly
1 celery (cut diagonaly)
1 large onion, chopped
1 bay leaf
2 tablespoons paprika
2 garlic cloves, minced
2 tablespoons soya sauce
2 -3 cups beef broth
1 cup water
1 (14 ounce) can tomato soup (optional to replace 1 cup of water)
1 tablespoon fresh ground pepper (to taste)
1/4 cup cornstarch, and water mixture for thickening (to your liking)

Steps:

  • combine all ingredients except corn starch and water mixture for thickening, in slow cooker or dutch oven.
  • Stir favorably.
  • cook on high for 5 hours.
  • cook on low for 3 hours.
  • last half hour when desired texture is reached add corn starch and water mixture to thicken.
  • continue on low for 1 hour.
  • The flavor is amazing, and its not a gamey tasting dish.

ELK STEW BOURGUIGNON

This is a delicious rich-tasting stew that can also be made with beef, venison or a combination of meats. The juniper berries really enhance the flavour so it is worth trying to find them. I found my dried juniper berries at a health food store. They are very strong so it's best to discard them (along with the bay leaf) as you find them in the finished dish. This tastes even better cooked a day or two in advance and re-heated. It also freezes well. I adapted this from a recipe on a pamphlet I picked up from an elk farmer near Ottawa. Elk is very lean and also very tender when cooked slowly on low heat (or quickly on high heat). It is very low in calories, fat and cholesterol and high in protein. Hints: I cook a batch of bacon in advance and keep in the freezer to add at the end. Browning the meat is key to the rich flavour.

2 lbs farm-raised elk meat
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
3 slices bacon
1 tablespoon olive oil
1 large onion, chopped
3 medium carrots, cut in 1-inch chunks
2 stalks celery, cut in 1-inch chunks
3 small potatoes, skin on, cubed
2 tablespoons tomato paste
5 juniper berries
1 teaspoon dried thyme
1 bay leaf
1 cup dry red wine
2 tablespoons red wine vinegar
1 1/2 cups beef stock

Steps:

  • Cut meat into 1" cubes and pat dry. Mix flour, salt and pepper in a bowl or plastic bag. Add meat cubes, a few at a time to coat. Shake off excess flour and reserve.
  • Heat a large heavy pot over medium-high heat and fry bacon until crisp. Remove, blot excess fat, chop and reserve. Note; this can be done in advance.
  • Heat olive oil in the same pot and quickly brown meat in batches on all sides. Transfer to a large bowl and reserve.
  • Reduce heat to medium, add onions, carrots, celery and potatoes. Cook, stirring until onions are softened.
  • Stir in tomato paste, juniper, thyme and bay leaf, then add wine and wine vinegar. Bring to a boil, scraping up browned bits from the bottom.
  • Add stock and reserved meat with juices to the pot. Return to a boil, then reduce heat, cover and simmer for 2 hours, stirring occasionally until meat is tender. Add additional flour to thicken or water to thin to desired gravy consistency. Stir in bacon.

A very flavorful stew with elk meat (can substitute beef or other game meat you wish to use). My husband inhaled it, went back for seconds the first time I made it. He doesn't do that unless he REALLY likes the dish. I've had to make this in triple batches when friends come over because they have to take some home with them. I would let you know if it freezes well but never enough left over to find out.

3 teaspoons instant beef bouillon (or 3 cubes)
3 teaspoons instant chicken bouillon (or 3 cubes)

1/3 cup cilantro, chopped (or more to your taste)
1 tablespoon dried basil
1 cup anaheim pepper
1 1/2 lbs elk meat, cut into 1-inch pieces (or meat of your choosing)
1 medium onion, cut into 1/2-inch pieces
2 stalks celery, chopped into 1/8-inch to 1/4-inch slices
5 medium potatoes, peeled and diced into 1/2-inch cubes
2 carrots, peeled and cut into 1/8-inch slices
2 cups sliced mushrooms (fresh is best)

Steps:

  • In 6 quart pan, pour water and turn burner on high. Add the beef boullion, instant chicken boullion, garlic, black pepper, cilantro, basil, and anaheim pepper into the water and bring to a boil.
  • Turn burner down to medium and add the meat to the water. Cook for 10 minutes.
  • Add the onion, celery, potatoes, carrots and mushrooms. Cook for 2 hours on low.
  • Enjoy. Excellent with a crusty bread.
