Steps:
- In a medium soup pot over medium heat, saute the garlic with the potatoes and olive oil for approximately 5 minutes or until the garlic is slightly golden.
- Add the chicken stock and salt and pepper to taste.
- Turn the heat to high and bring to a boil and reduce to a simmer for approximately 20 minutes or until the potatoes are very soft.
- Remove the soup and puree in a food processor or blender until smooth.
- Transfer back into the sauce pot and stir in the scallions and serve.

YUKON GOLD POTATO GRATIN
There was Gold to be found in the Yukon...now we have the Yukon Gold potato. Delicious. Try this gratin using them and you won't be disappointed.

Steps:
- Heat oven to 400 degrees F. Butter a 9-inch round or oval baking dish.
- Slice potatoes 1/8-inch thick and combine thoroughly in a mixing bowl with 1/2 cup cheddar cheese, the sour cream, olive oil, garlic, thyme, salt, and pepper.
- Arrange potatoes in a neat overlapping pattern in the baking dish. Pour chicken broth over potatoes.
- Bake 35 minutes, until potatoes are nearly-tender and the cheese and potatoes are starting to brown. Sprinkle with remaining cheese and bake another 10-15 minutes.
- Garnish with thyme sprigs.
ELEPHANT GARLIC CHICKEN
This is a lot of garlic a whole bulb goes into this. For that reason it is sliced not minced. Eating the garlic is up to the individual. I sure would. This is a take of of the 40 clove chicken recipe but made stove top and uses elephant garlic (milder) not the regular garlic.

Steps:
- Mix first 4 ingredients together. Coat chicken with flour mixture.
- Heat the oil and butter in a frying pan. Add chicken and cook, covered, over medium to high heat until browned, about 5-7 minutes. Turn chicken and continue cooking until browned on the other side, 5-7 minutes longer.
- Add broth, wine and garlic. Cover and simmer for about 15 minutes. Turn chicken and continue simmering until chicken is done, about 15 minutes longer or until chicken is no longer pink at the bone. Transfer chicken to platter and boil juices over high heat until about 1/3 cup remains. Spoon juices over meat, salt and pepper to taste and garnish with parsley.

GRILLED ELEPHANT GARLIC
A simple delish garnish to any grilled dish. Elephant garlic - allium ampeloprasum - is more closely related to the leek than ordinary garlic. It is much less intense and sweeter then regular garlic. Use this as a garnish ,condiment to any soup stew, or add to salads.

- Slice peeled elephant garlic into 1/4 inch sliced.rub with oil and sprinkle with salt, pepper and sugar.
- Place on a preheated grill for about 3 minutes each side.
- Remove and cover with foil to continue cooking and keep warm.
- Place on fresh crisp bread, garnish any grilled meat or veggies.
- Or if you want eat it straight up!
