CLASSIC ELENA RUZ SANDWICHES

8 Cuban sweet sandwich rolls or brioche rolls, split
8 ounces cream cheese, softened
8 ounces strawberry preserves
2 pounds sliced fresh roast turkey
8 tablespoons mayonnaise

Steps:

  • Preheat a griddle over medium-high heat.
  • Spread the bottoms of the rolls with approximately 1 tablespoon cream cheese each and the tops with approximately 1 tablespoon strawberry preserves each. Top the cream cheese side of each sandwich with 4 ounces turkey.
  • Close the sandwiches. Coat the outsides of the rolls with mayonnaise on both the bottom and the top. Place on the hot griddle and press down with a heavy pot to flatten the sandwiches.
  • Cook until golden brown on both sides, about 2 minutes per side. Slice the sandwiches and serve.

2 bread slices or buns
cream cheese to taste
strawberry jam or preserves to taste
fresh roasted turkey slices or even leftover turkey
1 Tbsp butter or margarine
OPTIONAL: YOU CAN SUBSTITUTE THE STRAWBERRY JAM/PRESERVES FOR CRANBERRY RELISH, TASTES DELICIOUS AS WELL.

Steps:

  • 1. Smear a generous amount of cream cheese on one slice and the strawberry jam or preserves on the other.
  • 2. Place the turkey slices in the middle and close.
  • 3. Warm a skillet on the stove.
  • 4. Smear the outsides of the bread with butter.
  • 5. Toast the buttered sandwich until golden on both sides.
  • 6. Serve and enjoy!

This is a sweet and savory afternoon tea sandwich.

1 pkg small dinner rolls, (12)
1/2 lb sliced turkey
4-5 oz guava (jelly, preserves, etc)
1/2 c whipped cream cheese
1/4 c butter, melted
2 Tbsp sesame seeds

Steps:

  • 1. Preheat oven to 350° degrees. Cut the bread rolls in half horizontally, keeping the halves connected. Set tops aside.
  • 2. Spread the turkey over the bread. Spoon the guava over the turkey.
  • 3. Spread the cream cheese over the guava. Replace the tops of the buns.
  • 4. Brush the melted butter over the tops of the buns. Sprinkle with sesame seeds.
  • 5. Bake in 350° oven for about 8 minutes or just until the cream cheese is melty and the tops are glistening.
  • 6. Remove from oven and cut each slider individually and serve.

This is a strange combination, but trust me, it is very good! The story goes that Elena Ruz, a society young socialite for which the sandwich is named, would stop at this little all-night restaurant, El Carmelo, in Vedado neighborhood in Havana Cuba, after leaving the dance with her group of friends. She asked the waiter if he could fix her this sandwich after she told them how to make it. After that she would always ask for the Elena Ruz Sandwich and to this day that is how the sandwich is known. This recipe has been printed on many of the Cuban Food web sites. It is great for leftover turkey. Update 03/13/2006 you can also use sweet rolls(the kind you use for a media noche). However, the real McCoy is white bread without crusts and lightly toasted and then the cream cheese would be spread, then the turkey and strawberry jelly on the other slice and voila!

During the late 1920s or early 1930s, the Cuban socialite Elena Ruz Valdés-Fauli asked for a sandwich with turkey, strawberry preserves and cream cheese in a soft medianoche roll at El Carmelo restaurant in Havana. The sandwich was an original request - it didn't yet exist on menus in Cuba - but it eventually became something of a beloved national dish. Like other popular Cuban dishes, it combines the sweet and the salty. Some Cuban chefs say that it lends itself to adaptation and experimentation with other jams and sandwich meats. It's best enjoyed with plantain chips and a Cuban soda, such as Materva or Ironbeer.

1 Cuban medianoche roll or a brioche hot dog roll (5 to 6 inches long)
2 tablespoons cream cheese, softened, plus more as needed
3 1/2 ounces sliced turkey breast
1 1/2 tablespoons strawberry preserves, plus more as needed (see Tip)
1/2 teaspoon unsalted butter

Steps:

  • Slice or split the bread roll in half to fill as a sandwich. Spread a 1/3-inch-thick layer of cream cheese on the bottom half. Lay turkey neatly on top of the cream cheese. Do not overfill the sandwich. Evenly spread jam on the top half of the bread and sandwich with the bottom.
  • In a pan over medium-low heat, melt butter, swirling to evenly coat the pan. Place the sandwich bottom side down in the pan and press it with a spatula or a cast-iron skillet. Heat to warm the sandwich, until the bottom is lightly toasted but not burned, 30 seconds to 1 minute. Flip the sandwich and repeat with the other side. Remove from the heat, cut the sandwich in half at an angle and serve immediately.

TURKEY CUBANO

Two heated baking pans topped by a cast-iron skillet stand in for a sandwich press in this easy Cubano recipe. It also substitutes sliced turkey for the usual roast pork, but retains the melted cheese, sliced ham and slivers of pickle that makes the traditional sandwich so incredibly compelling. Deli ham is the go-to choice here, but prosciutto gives a deeper, saltier flavor; use whichever you like.

4 tablespoons mayonnaise
Hot sauce or mustard, to taste
2 (12-inch) soft hero rolls or semolina loaves, split in half horizontally
3 to 4 ounces cooked turkey breast, thinly sliced
8 slices deli ham or prosciutto
8 slices Swiss cheese
1/3 cup sliced pepperoncini peppers or other pickled hot peppers (optional)
1 large dill pickle, sliced
2 tablespoons unsalted butter, melted

Steps:

  • Place a rack in the center of the oven and another rack directly below it. Place a rimmed baking sheet on each rack. Once the pans are inside, heat oven to 350 degrees.
  • In a small bowl, add the mayonnaise and stir in hot sauce or mustard to taste - it should have a kick. Spread mayonnaise mixture inside the rolls, coating both the top and bottom halves. Layer rolls with turkey, ham, cheese, pepperoncini (if using) and pickle slices.
  • Using your hands, press the sandwiches down and make sure nothing slides out. (If it does, poke it back in.) Then, use a brush to butter the top and bottom halves of the rolls.
  • Remove a hot baking sheet from the oven and place the sandwiches on top. Layer the other hot baking sheet on top of the sandwiches. Place a small pot cast-iron skillet or other heavy heatproof item on top of that second hot baking sheet to create a press.
  • Carefully return to oven and bake until sandwiches are warm, toasted and golden brown and the cheese is melted, 8 to 13 minutes. (You'll have to lift off the second pan to check on the sandwiches.) Cut sandwiches in half and serve immediately.

I love to watch the Food Network and I saw this sandwich on one of their programs. I did not catch the name of the restaurant, but the story behind this sandwich was interesting. It said that this sandwich was created for "fussy eater" A father used to take his daughter to lunch on Saturdays at this popular restaurant in Havana, Cuba (before Castro) and the daughter was a fussy eater so there were very few things she liked. She loved strawberry jam, so the father asked the waiter to come up with a sandwich for her and so the Elena Ruth sandwich was born. I have not tried it, but when I saw the recipe, I knew it was something that I would like, however, I am not a fussy eater! The amounts of each ingredient are really to your own taste. I have estimated for the sake of the recipe format. I believe the cuban bread would be Midnight sandwich bread or any sweet bread that you like. If you try this, I hope you enjoy it! Addendum: I am adding an explanation of the difference between jam and jelly for our International members. Jam vs. jelly and then there are preserves too! All are made with fruit mixed with sugar and pectin The difference comes from the form the fruit takes. In jelly, the fruit is in the form of fruit juice, so the product is set and is smooth and sometimes slightly opaque. In jam, the fruit is in the form of fruit pulp or crushed fruit. The product is not as stiff as jelly. Preserves are made of chunks of fruit set in a syrup (made of fruit juices) or in a jam. As for the recipe, I believe it is stated to use the jam so the recipe would be true to the original way it was prepared.
