I'd lost my family recipe for lemon squares and spent a lot of time trying new ones that would measure up. None did, but thankfully I recently found the recipe again. Best lemon squares out there.

cooking spray
2 cups all-purpose flour
1 cup cold butter
½ cup confectioners' sugar
2 cups white sugar
4 eggs
¼ cup all-purpose flour
¼ cup lemon juice, or more to taste
1 teaspoon baking powder
1 teaspoon lemon zest, or to taste
confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Process 2 cups flour, butter, and 1/2 cup confectioners' sugar in a food processor until mixture resembles coarse crumbs; press into the prepared baking dish.
  • Bake in the preheated oven until the edges of the crust are golden brown, 18 to 22 minutes. Cool crust to room temperature.
  • Beat white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest together in a bowl using an electric mixer until light and fluffy; pour onto the cooled crust.
  • Bake in the oven until custard is set, 25 to 28 minutes. Cool lemon squares completely; dust the top with more confectioners' sugar.

2 cups Gold Medal™ all-purpose flour
1/2 cup powdered sugar
1/2 cup flaked coconut
1 cup butter or margarine, softened
4 eggs
2 cups granulated sugar
1/4 cup Gold Medal™ all-purpose flour
1 teaspoon baking powder
1 teaspoon grated lemon peel
2 tablespoons lemon juice
2 teaspoons grated lime peel
2 tablespoons lime juice
2 teaspoons powdered sugar

Steps:

  • Heat oven to 350°F (or 325°F for dark or nonstick pan). In large bowl, beat 2 cups flour, 1/2 cup powdered sugar, 1/4 cup of the coconut and the butter with electric mixer on low speed, or mix with spoon, until crumbly. Press in ungreased 13x9-inch pan. Bake 20 to 25 minutes or until light golden brown.
  • Meanwhile, in large bowl, beat remaining 1/4 cup coconut, eggs, granulated sugar, 1/4 cup flour, the baking powder, lemon peel, lemon juice, lime peel and lime juice with electric mixer on low speed, or mix with spoon. Pour over partially baked crust.
  • Bake 20 to 25 minutes longer or until light golden brown. Run sharp knife around edges of pan to loosen bars. Cool completely, about 1 hour. Sprinkle with 2 teaspoons powdered sugar. For bars, cut into 6 rows by 6 rows.

1 cup Gold Medal™ all-purpose flour
1/2 cup butter, softened
1/4 cup powdered sugar
2 eggs
1 cup granulated sugar
2 teaspoons grated lemon zest
2 tablespoons lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt
Powdered sugar

Steps:

  • Heat oven to 350°F. In medium bowl, mix flour, butter and 1/4 cup powdered sugar with spoon until well mixed. Press in ungreased 8- or 9-inch square pan, building up 1/2-inch edges.
  • Bake crust 20 minutes; remove from oven. In medium bowl, beat remaining ingredients except additional powdered sugar with electric mixer on high speed about 3 minutes or until light and fluffy. Pour over hot crust.
  • Bake 25 to 30 minutes or until no indentation remains when touched lightly in center. Cool completely in pan on cooling rack, about 1 hour. Sprinkle with powdered sugar. Cut into 5 rows by 5 rows.

1 cup (2 sticks) butter, at room temperature
2 cups all-purpose flour
1/2 cup confectioners' sugar, plus more for sprinkling
4 large eggs
5 tablespoons fresh lemon juice (from about 2 large lemons)
2 tablespoons grated lemon zest
2 cups granulated sugar
1 tablespoon all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • For the crust: Preheat the oven to 350 degrees F. In a medium saucepan, melt the butter. Mix the flour and confectioners' sugar in a bowl and add the melted butter, mixing until a dough forms. Press the mixture firmly into a 9- by 13- by 2-inch pan. Bake the crust for 25 minutes.
  • For the filling: While the crust is baking, with an electric mixer, combine the eggs, lemon juice and zest until smooth. Add the granulated sugar, flour, baking powder and salt, and beat until smooth. Pour the mixture over the baked crust. Bake for 20 minutes more.
  • Remove the pan from the oven and let it cool completely. Sprinkle the top with confectioners' sugar. Cut into squares and serve.

Tropical Lemon Squares image

Addictively good lemon squares with a brown sugar-cashew crust and moist lemony coconut topping full of bits of yummy fruit. The lemon and fruit flavour develops as the squares are cooling so these squares are better after they are out of the oven for several hours. I have no idea how long these squares will keep because they are always gone within a day or so! Note: Golden raisins are a lot softer than other types of raisins and don't leave hard chewy bits in the squares, substituting other types of raisins in this recipe would likely not have the same outcome. Submitted for Ready Set Cook Winter 2005.

2 cups flour
1 cup brown sugar
3/4 cup butter, melted (no substitutions)
1/2 cup salted cashews, finely chopped
1 (300 ml) can sweetened condensed milk
1 1/2 cups flaked coconut
2 eggs
3/4 cup lemon juice
1/2 cup golden seedless raisins, chopped
1/2 cup dried apricot, chopped

Steps:

  • Preheat oven to 350°F and spray a 9x13-inch pan with cooking spray.
  • Mix the flour and brown sugar until smooth and lump free, add the melted butter and chopped cashews and mix until well combined (should look like fine crumbs).
  • Press mixture into a 9x13-inch pan and bake for 10 minutes.
  • Mix the eggs and condensed milk (I use the same bowl) until smooth and well combined, then mix in the lemon juice until smooth and well integrated.
  • Add the coconut, chopped raisins and chopped apricots and mix well.
  • Spread the coconut mixture evenly over the partially baked crust and return to the oven for 30 minutes until a light golden in colour (note the coconut in these squares is supposed to be slightly moist rather than dry so the top may look very slightly moist at this point).
  • Run a knife around the edge of the pan while still warm to prevent sides from sticking, wait until the squares are completely cool before cutting into 35.

2 cups graham cracker crumbs (or chocolate, or vanilla)
1/2 cup butter, melted
1 (250 g) package philadelphia brick cream cheese, softened
1/4 cup granulated sugar
1 cup crushed fruit (strawberries, raspberries, or canned crushed pineapple)
1 (12 ounce) container Cool Whip Topping
2 (85 g) packages jell-o orange pineapple jelly powder
1 (10 ounce) can mandarin oranges, drained
1 banana, sliced
1 (14 ounce) can pineapple chunks in juice, drained

Steps:

  • Combine prepared crumbs with butter.
  • Press mixture on bottom of 13x9-inch baking dish.
  • Beat cream cheese and sugar with an electric mixer until smooth. Stir in crushed fruit.
  • Fold in whipped topping. Spread cream cheese filling over crust.
  • Prepare jelly powder according to 30 minute set method. Stir mandarin oranges, banana slices, and pineapple tidbits in juice.
  • Pour jelly mixture over cream cheese filling and chill for 3 hours.

2 1/4 cups all-purpose flour
1 cup chilled unsalted butter, cut into small pieces
1/2 cup powdered sugar
1/2 cup sweetened flaked coconut
2 cups sugar
4 large eggs
1/2 cup fresh lemon juice
1 teaspoon baking powder
powdered sugar

Steps:

  • Preheat oven to 350°F degrees.
  • Butter 13x9x2-inch baking pan.
  • In food processor combine 2 cups flour, butter pieces, 1/2 cup powdered sugar and the coconut.
  • Process until moist clumps form.
  • Press onto the bottom of the prepared pan.
  • Bake about 20 minutes, until edges are golden.
  • In a large bowl, whisk together 2 cups sugar, eggs, lemon juice, baking powder and the remaining 1/4 cup flour until well blended.
  • Pour over hot crust.
  • Bake until topping is set and light brown, about 25 minutes.
  • Cool in the pan on a wire rack.
  • Cut into squares and dust tops with powdered sugar.
  • Can be made 1 day ahead.
  • Cover with plastic wrap.
  • Makes 36 squares.

  • Preheat the oven to 325°F (163°C). Line the bottom and sides of a 9×13 baking pan* with parchment paper, leaving an overhang on the sides to lift the finished bars out (makes cutting easier!). Set aside.
  • Mix the melted butter, sugar, vanilla extract, and salt together in a medium bowl. Add the flour and stir to completely combine. The dough will be thick. Press firmly into prepared pan, making sure the layer of crust is nice and even. Bake for 20-22 minutes or until the edges are lightly browned. Remove from the oven. Using a fork, poke holes all over the top of the warm crust (not all the way through the crust). A new step I swear by, this helps the filling stick and holds the crust in place. Set aside until step 4.
  • Sift the sugar and flour together in a large bowl. Whisk in the eggs, then the lemon juice until completely combined.
  • Pour filling over warm crust. Bake the bars for 22-26 minutes or until the center is relatively set and no longer jiggles. (Give the pan a light tap with an oven mitt to test.) Remove bars from the oven and cool completely at room temperature. I usually cool them for about 2 hours at room temperature, then stick in the refrigerator for 1-2 more hours until pretty chilled. I recommend serving chilled.
