MOM'S UNCOOKED COOKIES

Mom's Uncooked Cookies is my mom's classic, easy recipe for delicious, no-bake cookies using, cocoa powder, oatmeal and coconut.

Number Of Ingredients 8

2 cups Granulated Sugar
1/2 cup Margarine (or butter)
1/2 cup Evaporated Milk
1/2 cup Baking Cocoa Powder
1 teaspoon Vanilla
3 cups Rolled Oats
1/2 cup Shredded Coconut
1/2 cup Nuts (optional)

Steps:

  • Melt butter in pan over medium-low to medium heat.
  • Add the evaporated milk, cocoa powder, and sugar to the melted butter. Stir and cook until the mixture comes to a complete boil.
  • Cook for one minute.
  • Remove the pan from the heat and add the vanilla, rolled oats, nuts if using, and coconut. Stir until completely mixed.
  • Scoop mixture onto a cookie sheet that has been lined with wax paper.
  • Let the cookies set until firmed up.

Number Of Ingredients 11

1 cup packed light brown sugar
1 cup sour cream
1/2 cup dark corn syrup
1/2 cup dark molasses
2 large eggs, room temperature, lightly beaten
1/4 cup 2% milk
2 tablespoons all-purpose flour
1/4 teaspoon baking soda
1-1/2 cups sweetened shredded coconut
1 frozen deep-dish pie crust (9 inches)
Whipped cream, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 8 ingredients. Stir in coconut. Pour into crust; cover edge loosely with foil. Bake until center is set, 45-55 minutes. Remove foil; cool on a wire rack. If desired, serve with whipped cream.

1/2 c butter, softened
1 1/2 c sugar
2 large eggs
1 c sour cream
1 tsp vanilla extract
3 c all-purpose flour
1 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/3 c cinnamon sugar (to sprinkle on top)
1/3 c green and/or red sugar for christmas (instead of cinnamon sugar)

Steps:

  • 1. Heat oven to 350 degrees F. Line a cookie sheet with parchment cooking paper. Set aside.
  • 2. In a large bowl, combine the butter and sugar. Mix well.
  • 3. Add the eggs and beat by hand until well combined.
  • 4. Add the sour cream and vanilla and mix well. (Mixture will be very runny.)
  • 5. Add the flour, salt, baking soda, and baking powder.
  • 6. Mix well by hand.
  • 7. Drop by teaspoonfuls onto prepared cookie sheet, about 1 1/2 inches apart.
  • 8. Sprinkle GENEROUSLY with cinnamon sugar or colored sugar for holiday preparation.
  • 9. Bake for 10-15 minutes or until cookies are browned around the edges.
  • 10. Transfer to a wire rack to cool. Store in an airtight container.
  • 11. HINT: These cookies rise a lot!! Make sure to sprinkle generously with sugar and leave enough space between on cookie sheet. Amount of sugar called for in the recipe for decoration is approximate.

These chocolate cookies with cocoa powder are perfect to stop your chocolate craving! They are moist in the middle, crispy at the edges.

140 g (1 cup) all-purpose flour ((dip and sweep)*)
50 g (1/2 cup) cocoa powder
½ teaspoon baking soda
150 g (2/3 cup) unsalted butter
175 g (1/2 cup and 1/3 cup) granulated sugar
1 teaspoon pure vanilla extract
1 large egg

Steps:

  • Preheat the oven to 350°F(177C°). Line baking sheet with parchment paper or silicone baking mat. Set aside.
  • Put the flour, cocoa powder and baking soda in a small bowl and mix well. Set aside.
  • Melt the butter in a small pan over medium heat until it is halfway melted. Take it from the heat and stir until it is all melted. Set aside to cool.
  • Place the sugar in a big bowl and add the butter, mix well. Then add in the egg and vanilla, stir until combined.
  • Add the flour mixture in 2 batches and stir until all combined well.
  • Roll the dough into 52-53 gram (2 and ½ tablespoon) balls and place them on the baking sheet. Alternatively, you can divide the dough equally into 10 pieces and roll each into a ball.
  • Bake for 8-11 minutes or until the cookies are slightly set. The top of the cookies shouldn't be wet but soft. They will be too soft to handle. Remove the cookies from the oven so that they can keep their moistness. Let them cool on the baking sheet for 10 minutes or until the bottom of the cookies are firm enough. The cookies will be a little bit puffy. You can slightly press the cookies with the back of a spoon.

These soft cookies are almost like little cakes. I like to make them very small, but you can make them larger if you wish. Very good with chocolate icing on top. Note: This is one of the recipes I adopted in the Great 'Zaar Ophan Adoption of 2005. I hope you enjoy it.

1/2 cup butter or 1/2 cup margarine
1 cup brown sugar, packed
1/2 cup cocoa
1 large egg
2/3 cup milk
1/4 teaspoon salt
1 1/2 cups flour
3 teaspoons baking powder
1 teaspoon vanilla

Steps:

  • Cream butter and brown sugar;add egg.
  • Sift dry ingredients and add to butter/sugar mixture alternately with milk.
  • Add vanilla.
  • Drop by spoonfuls on ungreased cookie sheet.
  • Bake 8-12 minutes at 400°F; do not overbake.
  • Ice with chocolate icing, if desired.
