Time 35m

Yield 10 serving(s)

Number Of Ingredients 9

1 1/4 cups all-purpose white flour
2 tablespoons sugar
1/2 cup margarine (1 stick) or 1/2 cup butter (1 stick)
1 large egg
1/4 cup all-purpose white flour
2 tablespoons light brown sugar
2 tablespoons margarine (1/4 stick) or 2 tablespoons butter (1/4 stick)
1 (20 1/2-28 ounce) jar ready to use mincemeat
1 (16 ounce) can pear halves in natural juice

Steps:

  • PREPARE PASTRY DOUGH: In medium bowl, with fork, stir flour and sugar. With pastry blender or two knives used scissor fashion, cut margarine or butter into flour mixture until mixture resembles coarse crumbs. Add egg; mix lightly with fork until dough is just moist enough to hold together. (Or, in food processor with knife blade attached, blend flour, margarine or butter, cut into 8 pieces, and sugar until mixture resembles coarse crumbs, about 10 seconds. Add egg through feed tube; blend 15 seconds more or until dough holds together and leaves side of bowl.) With hands, shape dough into ball. Wrap with plastic wrap and refrigerate 1 hour; trim edge. With fork, prick tart shell in many places to prevent puffing and shrinkage during baking.
  • Line tart shell with foil; bake 10 minutes. Remove foil; again prick dough. Bake 10 minutes longer. Remove tart shell from oven; turn oven control to 425°F.
  • PREPARE STREUSEL TOPPING: In small bowl, combine flour and lightly brow sugar. With pastry blender or two knives used scissor fashion, cut margarine or butter into flour mixture until mixture resembles coarse crumbs. Refrigerate.
  • Preheat oven to 350°F On lightly floured surface, with floured rolling pin, roll out dough into round about 1 inch larger all around than 10inch tart pan with removable bottom.
  • Ease dough into tart pan to line evenly.
  • Drain pears; pat dry with paper towels. Cut each pear half lengthwise into ¼ inch thick slices, being careful to keep slices from each half together. Arrange pears on mincemeat, fanning slices slightly.
  • With spoon, evenly sprinkle Streusel Topping over sliced pears in tart shell.
  • Bake tart 15 to 20 minutes until filling is heated through and crust and topping are lightly browned. Cool tart slightly in pan on wire rack.
  • Remove side of pan. Serve tart warm or cool completely to serve later. 10 servings. Begin about 2 hours before serving or early in day.
  • Good Housekeeping.

CARAMELIZED PEAR TART

Caramelized Pear Tart image

This caramelized pear tart recipe is from a grocery store flyer. For the short crust pastry use recipe #140957 #140597 or no-roll short crust recipe #95116 #95116, or your favorite short crust pastry. I think this recipe would be equally good with caramelized apples or other fresh fruit. Serve with rich custard or vanilla ice cream.

CHRISTMAS PEAR TART

Christmas pear tart image

Gary Rhodes' pear and mincemeat tart is based on an Eccles cake, the pastry they say has been with us for 300 years or more

Provided by Gary Rhodes

Categories     Dessert, Dinner, Treat

Time 1h5m

Yield Serves 2, with enough for seconds

Number Of Ingredients 18

1 sheet ready-rolled puff pastry , thawed if frozen (from a 425g packet of 2 sheets)
flour , for dusting
1 egg white
granulated sugar , for dusting
holly sprigs and icing sugar , to decorate
custard , cream or ice cream, to serve
2 small pear , peeled, cored and cut into 1cm dice
25g each currant and sultanas
25g light muscovado sugar
25g butter , softened
pinch freshly grated cinnamon
zest 1 orange or lemon (optional)
1 medium pear , peeled, cored and cut into 1cm dice
50g each currant and sultanas
25g light muscovado sugar
25g butter , softened
pinch freshly grated cinnamon
zest 1 orange or lemon (optional)

Steps:

  • To make the syrup, place all the ingredients in a pan with 150ml water, then bring to a simmer. Cook for 10 mins until the fruit is softened, then remove the vanilla pod and blend to a smooth purée with a hand-held blender. Strain through a sieve. Allow to cool.
  • Extend the pastry by rolling out on a lightly floured surface, so it is big enough to cut out a 30cm circle. Lay the pastry circle on a baking tray. Mix all the filling ingredients together. Spoon the mincemeat filling into the centre of the pastry (no more than 10cm diameter), creating a dome shape. Brush the edges of the pastry with water and gather all together to create a 'bag' effect. Press the pastry lightly together to seal well, keeping it fairly loose.
  • Lay a greased baking tray on top, then turn the two trays over. Remove the top tray, and lightly roll the 'bag' with a rolling pin to create a flat round pastry disc, about 18cm across. Brush the pastry with the egg white, then sprinkle with the granulated sugar. Score 3-4 lines with a sharp knife in the centre, then chill for 15-20 mins. The tart can be made ahead and chilled for up to 2 hrs. Heat oven to 200C/fan 180C/gas 6. Bake for 25-30 mins until golden brown and crispy.
  • Now finish it in style: Sit the tart on a plate and decorate with sprigs of holly sifted with icing sugar. Serve warm, in slices, with a little custard, cream or ice cream and the pear and raisin syrup.

MINCE TART WITH CRUMBLE TOPPING

Mince tart with crumble topping image

A different use for your Christmas mince meat. Make this delectable festive tart with buttery pastry and crumble topping and serve with clotted cream or custard

Provided by Tom Kerridge

Categories     Dessert

Time 1h35m

Number Of Ingredients 20

200g butter , softened
100g golden caster sugar
2 egg yolks
350g plain flour , sifted
100g butter
100g golden caster sugar
1 orange , zested
2 Bramley apples , peeled, cored and diced
1 cinnamon stick
150g raisins
150g sultanas
40g dried cranberries
70g cut mixed peel
70ml brandy
80g shredded beef or vegetable suet
100g plain flour
30g golden caster sugar
50g butter , softened
50g quick frosted walnuts , roughly chopped (see goes well with)
custard or clotted cream

Steps:

  • First, make the pastry. Using a tabletop mixer or an electric hand whisk, cream together the butter and sugar with a pinch of salt until soft and fluffy. Add the yolks, then fold in the flour until the pastry just comes together, being careful not to overwork. Wrap in cling film and leave to rest in the fridge for 1 hr.
  • Meanwhile, make the filling. Cook the butter, sugar, orange zest, apple and cinnamon over a medium heat for 15 mins or until you have a thick purée. Add the dried fruit and mixed peel for the final 1-2 mins, then remove from the heat. Once cool, remove the cinnamon stick, and stir in the brandy and suet.
  • On a lightly floured surface, roll out the pastry to the thickness of a £1 coin, then use to line a 25cm loose-bottomed tart case. Return to the fridge for 30 mins until well chilled.
  • Heat oven to 180C/160C fan/gas 4. Prick the base of the tart case with a fork, line with baking parchment and fill with baking beans or uncooked rice. Bake for 12 mins, then remove the baking beans and parchment and cook for 3 mins more.
  • Meanwhile, put the flour, sugar and butter for the crumble in a bowl. Rub together with your fingertips until it resembles coarse breadcrumbs, then mix in the frosted walnuts.
  • Spoon the mincemeat filling into the pastry case and cover with the crumble. Return to the oven for 30 mins until bubbling at the edges and the topping is golden and gooey. Serve warm or cool with custard or clotted cream.

MINCE PIES

Mince Pies image

Learn to make British mince pies, which are basically rich tarts filled with dried fruits and spices soaked in alcohol, a Christmas specialty.

Provided by Regula Ysewijn

Number Of Ingredients 25

1¼ cup (175g) currants
1¼ cup (175g) large dark raisins
6 oz (175g) stewing apple, in small pieces
⅓ cup (50 g) candied orange peel
2 oz (50 g) prunes, pitted and chopped
½ cup (115g) butter, frozen and grated
½ cup (115g) soft brown sugar
½ tsp. ground cinnamon
½ tsp. ground mace
½ tsp. ground cloves
¼ tsp. ground nutmeg
¼ tsp. ground ginger
Pinch of sea salt
½ lemon or Seville orange, zest, and juice
1 cup brandy or rum (or half sherry, half rum) or as needed
1½ cups (180g) all-purpose flour
2 Tbsp. (20g) confectioners' sugar
Pinch of sea salt
7 Tbsp. (100g) chilled butter, diced
1 Tbsp. cold water
1 egg yolk
Butter, for greasing
Flour, for dusting
1 egg yolk
1 Tbsp. milk

Steps:

  • Put all the ingredients for the mincemeat in a bowl and add brandy or rum to cover the fruit. Stir well, then let it rest overnight. The next day, stir again and then divide among sterilized preserving jars.
  • To make the pastry, mix the flour, sugar, and salt in a large bowl. Rub the butter into the mixture until it is the consistency of fine breadcrumbs. Add the water and egg yolk and knead until the mixture comes together into a smooth dough. Alternatively, use a food processor to make the pastry. Wrap the dough in plastic wrap and let it rest for 30 minutes in the refrigerator.
  • Preheat your oven to 350° F. Grease the tart molds with butter and cover the base of each with a small circle of parchment paper. Dust with flour.
  • Briefly knead the pastry until smooth, then pat it into a rectangle and roll it out to a thickness of ⅛ inch. Use a round cutter with a diameter of 2¾ - 3¼ inches to cut out pastry circles. Gently push the pastry rounds into the tart molds. Prick the base or each tart shell three times with a fork.
  • Knead the remaining dough back together and roll it out to cut out the lids-you can choose whichever shape you like, but stars are the most traditional.
  • Divide the 8 ounces of filling among the tarts and press down gently. Place the lids on top and brush with the egg wash.
  • Bake in the middle of the oven for 20-25 minutes until golden brown. Serve warm or cold.
