1 lb ground beef
1 tablespoon minced onion
1/2 teaspoon garlic salt
2 (8 ounce) cans tomato sauce
1 cup chopped black olives
1 cup small curd cottage cheese
1 cup sour cream
3 -4 green chilies, chopped (canned)
1 (6 1/2 ounce) package tortilla chips
2 cups grated monterey jack cheese

Steps:

  • Fry beef until crumbly.
  • Drain off fat.
  • Add onions, garlic salt, tomato sauce and olives to beef.
  • Combine sour cream and cottage cheese with green chilies.
  • Crush tortilla chips slightly.
  • Reserve a few whole ones for the top.
  • Place half of the chips in bottom of well-greased 2 and 1/2 quart casserole.
  • Add half the meat mixture;.
  • cover with half sour cream mixture.
  • Sprinkle with half the grated cheese.
  • Repeat layers.
  • Bake uncovered in 350 oven 30-35 minutes until bubbly hot.
  • Garnish with reserved tortilla chips.

2 lbs lean ground beef
1 medium onion, chopped
1 teaspoon salt
pepper
1 teaspoon garlic salt
1 teaspoon garlic powder
1 (15 ounce) can tomato sauce
3/4 cup catsup
1 (3 ounce) can ripe olives, sliced
1 pint sour cream
2 cups cottage cheese
1 (4 ounce) can green chilies, chopped
1 (8 ounce) package tortilla chips, crushed
1 (16 ounce) package monterey jack cheese, grated

Steps:

  • Brown ground beef in large skillet, stirring until crumbly.
  • Add onion, salt, pepper, garlic salt and powder, tomato sauce, catsup and olives, mixing well.
  • Simmer until onions are tender, stirring frequently.
  • Combine sour cream, cottage cheese and chili pepper in small bowl.
  • Layer tortilla chips, ground beef mixture, sour cream mixture and Monterey Jack cheese alternately in large greased casserole, ending with grated Monterey Jack cheese.
  • Bake at 350 degrees for 30 minutes.
  • Serve with picante sauce.

I got this recipe from the local news program. It sounds really good and I think it could even be OAMC. I think it would be a great way to use all those crushed tortilla chips that I try to save but always end up throwing away.

1/2 lb ground beef
1 medium onion, chopped
2 (8 ounce) cans tomato sauce
1 cup water
1/4 teaspoon chili powder
1/2 teaspoon garlic powder
1 (9 ounce) package tortilla chips, coarsely crushed
1 cup sour cream
1 cup shredded monterey jack cheese

Steps:

  • Preheat the oven to 375 degrees. Spray a 1 1/2 quart casserole dish with non-stick cooking spray.
  • In a large skillet, brown the ground beef and onion over medium high heat until no longer pink, about 5 minutes. Add the tomato sauce, water, chili and garlic powders, mix well. Reduce the heat to medium low and simmer for 2-3 minutes, or until thickened.
  • Spread one third of the beef mixture in the casserole dish and then top with 1/3 of the crushed tortilla chips, 1/3 of the sour cream and 1/3 of the cheese. Repeat 2 more times, ending with a cheese layer.
  • Bake for 25 to 30 minutes or until bubbly and the top is golden brown.
