RESTAURANT STYLE SALSA
Recipe video above. Just like what you get at your favourite restaurant and those jars sold alongside corn chips at the grocery store.... but it's better, healthier and cheaper! The fresh flavour is so, so good. Make it chunkier or smoother, to your taste.

Steps:
- Place onion and jalapeno in the food processor first, then add remaining ingredients (start with 1/2 tbsp lime juice).
- Blitz to desired consistency - I like mine pretty smooth because you get better flavour out of the onion etc.
- Taste test with corn chip for salt and lime. Adjust if necessary.
- Refrigerate 1 hour before serving with corn chips, or other dippers (see in post for suggestions).

- 1. Mix all ingredients together and refrigerate several hours, preferably overnight. Serve with tortilla chips, refried beans and salsa (see note). Use leftovers to spice up plain bean and cheese burritos.
- 2. Alternate Recipe: Makes yummy cheesy enchiladas! Fill flour or corn tortillas with cheese dip, roll up, and lay in baking dish sprayed with non-stick cooking spray. Cover with verde enchilada sauce and queso cheese. Cover dish with foil and bake at 350° for 20-30 minutes. Serve with rice and/or refried beans.
- 3. Play with the ingredients and amounts until you get the flavor and consistency you like. You can also lighten this dish by using low fat (not fat free) sour cream, cottage cheese, etc.

When I was first introduced to El Azteco's Topopo Salad, it was more than 20 years ago in their original underground restaurant location just off the MSU campus in East Lansing. - 1. Mix salad ingredients together in a large bowl.
- 2. In a small bowl, mix vinaigrette dressing.
- 3. Add a small amount of vinaigrette, no more than 1/4 cup, to salad mixture. Use just enough to hold it together and mix to coat.
- 4. Make a salad base! On a large plate, place a hearty layer of tortilla chips. Warm refried beans and layer evenly over chips. Top with cheddar or Monterey Jack cheese and set under the broiler to melt. Top melted cheese with guacamole and spread evenly, and then spread a cup of salsa on top.
- 5. Time to put the salad together! A true Topopo is presented with the salad on top of the nacho base in a pyramid, like a volcano. Begin piling your salad mixture on top of the nachos to cover completely, gradually adding less and less as you build upwards to form a pyramid.
- 6. Serve with additional chips and salsa on the side.

Steps:
- Toss shredded cheeses together, and set aside.
- In a medium saucepan, combine butter and flour over medium heat.
- Cook, stirring frequently, until bubbly.
- Whisk in milk and chicken broth, and continue whisking until smooth.
- Add spices and half of the mixed cheeses, and stir until cheese is melted and sauce is smooth.
- Continue cooking, stirring frequently, until thickened.
- Add chicken, olives, tomato, onions, and green chiles, adjust seasonings to taste, and set aside to cool.
- Dip each tortilla in hot oil to soften.
- Place about one third cup of chicken mixture on each tortilla, and roll up tightly.
- Place seam side down in a lightly oiled 9"x13" baking dish.
- Top with remaining cheese, and bake at 350 degrees F for 25-30 minutes or until heated through and cheese is bubbly.
- Enchiladas can be frozen before final topping with cheese.
- Thaw completely before topping with cheese and baking.
