EGYPTIAN SPINACH PIE WITH HAZELNUT DUKKAH



Egyptian Spinach Pie with Hazelnut Dukkah image

1/4 cup hazelnuts
1 tablespoon coriander seeds
2 teaspoons cumin seeds
2 tablespoons sesame seeds
4 cloves garlic, minced
4 medium shallots, finely diced
4 tablespoons (1/2 stick) unsalted butter
4 pounds fresh spinach leaves (not baby), stemmed and sliced
1/4 cup minced fresh dill
Pinch freshly grated nutmeg
Salt and pepper
8 ounces freshly grated Cheddar
8 ounces freshly grated mozzarella
1 package puff pastry (2 sheets)
1 large egg, beaten with 1 tablespoon water, for egg wash
1 tablespoon sumac

Steps:

  • Preheat the oven to 350 degrees F.
  • For the hazelnut dukkah: Toast the hazelnuts in the oven for 12 minutes. Let cool. Raise the oven temperature to 400 degrees F.
  • Meanwhile, toast the coriander and cumin seeds in a saute pan over medium heat, about 1 minute.
  • Grind the coriander, cumin and hazelnuts in a spice grinder. Mix with the sesame seeds.
  • For the spinach pie: In a large skillet, saute the garlic and shallots in the butter over medium heat until softened. Add the spinach and cook until wilted. Add the dill, nutmeg and some salt and pepper. Let cool slightly, then stir in the Cheddar and mozzarella.
  • Lay one sheet of puff pastry in a 9-by-13-inch baking dish. Spread with the spinach stuffing. Lay the other sheet on top, pinch the edges closed, and cut into six pieces. Sprinkle with dukkah and brush the edges with egg wash. Set the baking dish on a baking sheet and bake until the pie is golden brown, about 30 minutes.
  • Sprinkle with the sumac and serve.

1/4 cup raw hazelnuts
1 tablespoon coriander seeds
2 teaspoons cumin seeds
2 tablespoons sesame seeds
4 tablespoons unsalted butter
4 medium shallots, finely diced
4 cloves garlic, minced
4 pounds fresh spinach (not baby), stemmed and sliced
1/4 cup minced fresh dill
Pinch of freshly grated nutmeg
Kosher salt and freshly ground pepper
8 ounces mozzarella cheese, freshly grated
8 ounces cheddar cheese, freshly grated
1 17-ounce package frozen puff pastry (2 sheets), thawed
1 large egg, beaten with 1 tablespoon water
1 tablespoon sumac

Steps:

  • Make the dukkah: Preheat the oven to 350˚ F. Pour the hazelnuts onto a baking sheet, then slip into the oven and toast until golden brown and fragrant, about 12 minutes. Pour the nuts onto one half of a clean kitchen towel, then fold over the other half. Rub gently to remove the skins. Pour the nuts onto a cutting board, finely chop and set aside.
  • Set a cast-iron skillet over medium heat. Add the coriander seeds and toast, 1 to 2 minutes. Add the cumin seeds and sesame seeds and cook, stirring often, until fragrant and slightly darker in color but not burned, 2 to 3 minutes. Stir the seeds with the hazelnuts, then coarsely grind with a mortar and pestle. Set aside.
  • Make the pie: Increase the oven temperature to 400˚ F. Set a large skillet over medium heat. Add the butter and cook until melted and browned just a little. Add the shallots and garlic; cook, stirring, until softened, about 3 minutes.
  • Rinse the spinach. Drain, but don't worry about getting all the water off. Add the spinach to the shallot-garlic mixture in batches, stirring, until all of the spinach is wilted, 7 to 8 minutes. Stir in the dill and nutmeg; season with salt and pepper. Drain off any excess liquid. Remove from the heat and let cool slightly.
  • Add the mozzarella and cheddar to the spinach. Stir well and let cool. (You can pop it into the fridge to hurry this along!)
  • Place one puff pastry sheet in the bottom of an 8-inch square baking dish or 9-inch pie plate. Spoon in the spinach filling, using the back of a spatula to level it out. Layer the other puff pastry sheet on top, and then crimp the edges, cutting off any excess. Brush the beaten egg on the puff pastry and sprinkle with the dukkah spice blend. Put the pie on a baking sheet and bake until deep golden brown, 30 to 40 minutes. Sprinkle with the sumac. Let cool 10 minutes before cutting into the pie.

1 pound fresh spinach, rinsed, stemmed and chopped
1 cup dried bread crumbs
1 cup grated Parmesan
1/2 stick unsalted butter, softened
3 eggs
1 1/2 cups ricotta cheese
1/4 cup sour cream
1 tablespoon dried basil
Fresh nutmeg
Salt and pepper

Steps:

  • Preheat oven to 350 degrees. Over medium high heat, place spinach in a large skillet and pour in 1/2 cup of water. Cover and steam until wilted. Drain spinach and reserve.
  • In a medium bowl, Stir together bread crumbs., 1/4 cup Parmesan and butter. Press crumb mixture into even layer in a 9 inch pie plate and chill for 15 minutes.
  • In a large bowl, beat together the eggs, ricotta cheese, sour cream, 1/2 cup Parmesan, basil, nutmeg and salt and pepper. Stir in the spinach and mix until well combined. Pour into chilled crust. Top with remaining Parmesan and bake for 45 minutes or until firm. Cool to room temperature before serving.

DEEP DISH CHERRY PIE WITH HAZELNUT CRUST



Deep Dish Cherry Pie with Hazelnut Crust image

1 1/4 cups (2 1/2 sticks) cold unsalted butter, cut into pieces
1 1/2 cups confectioners' sugar
2 eggs
3 1/4 cups flour
1/2 cup finely ground peeled and toasted hazelnuts
2 1/2 pounds fresh or thawed frozen cherries or 2 (16-ounce) cans pie cherries
6 tablespoons cornstarch
1 1/2 cup granulated sugar
1/2 teaspoon freshly grated ginger, optional
2 teaspoons freshly squeezed lemon juice
6 large ramekins or oven proof individual baking dishes, 8 to 12-ounce capacity
Rolling pin
Large round cutter, (diameter of outside of ramekins, can use ramekins as guide)

Steps:

  • In a mixer fitted with a paddle attachment (or using a hand mixer), cream the butter until smooth. Add the confectioners' sugar and mix. Add the eggs and mix. Add the flour and mix until almost incorporated. Add the hazelnuts and mix just until smooth, being careful not to over mix the dough.
  • Form the dough into 2 disks and wrap in plastic wrap. Chill at least 2 hours or overnight. If the dough is refrigerated overnight, remove it from the refrigerator 30 minutes before using. Roll out both disks, cut them out a little bigger than the size of your individual baking dishes, and chill while you make the filling.
  • Preheat the oven to 375 degrees F. Drain the cherry juices into a medium saucepan; you should have about a cup of juice. Add the cornstarch, sugar, ginger, if using, and lemon juice, and bring to a simmer over medium heat, stirring to dissolve the cornstarch. When thickened, turn off the heat, stir in the cherries, and set aside to cool slightly.
  • Divide the cherry filling among the baking dishes. Carefully place the rolled-out crusts on top. To decorate them, brush the surface of the crust with milk, sprinkle lightly with sugar and use a sharp small knife to make a cross hatching pattern, cutting one vent hole in the center. You may also cut out strips from the leftover dough, and make designs or cherries from it, and adhere them to the top with a little water. Then wash with milk and sprinkle with sugar.
  • Place the pies on a sheet pan to catch any juices that boil over. Bake until the crust is golden brown and the juices are bubbling at the vents, 25 to 30 minutes. Let cool to room temperature. Serve at room temperature.

1 medium onion, chopped
1 cup chopped hazelnuts
1 cup Brazil nuts
1 cup dry bread crumbs
2 teaspoons dried parsley
1 teaspoon dried oregano
½ teaspoon dried sage
salt and ground black pepper to taste
1 tablespoon tahini
1 teaspoon soy sauce
1 ¼ cups vegetable broth, or as needed
2 (8 ounce) packages frozen chopped spinach, thawed and drained
⅔ cup frozen corn
3 cups all-purpose flour
1 teaspoon baking powder
1 pinch salt
¾ cup water
½ cup shortening
1 large egg white, beaten

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat oil in a skillet over medium-high heat. Add onion and saute until soft, 5 to 7 minutes. Remove from heat.
  • Mix hazelnuts, Brazil nuts, bread crumbs, parsley, oregano, sage, salt, and pepper together in a bowl. Add tahini and soy sauce; add enough broth to give it a moist, stuck-together texture. Add sauteed onions, spinach, and corn; mix well.
  • Mix flour, baking soda, and salt for crust together in a bowl.
  • Heat 3/4 cup water in a small pot and melt in shortening until almost boiling. Add to the flour mixture a little at a time, until combined, mixing well. Add extra boiling water if the mixture is too dry.
  • Put 2/3 of the dough into a 7-inch springform pan and push into a crust shape. Add filling, pushing down well.
  • Roll out remaining dough to make a pie lid. Press onto pie. Glaze top with beaten egg white and cut a small "x" in the center to allow steam to exit.
  • Bake in the preheated oven for 20 minutes. Reduce heat to 375 degrees F (190 degrees C). Continue to bake until golden brown, about 50 minutes.
