2 cinnamon sticks
1 inch fresh ginger (peeled and thinly sliced)
3 whole allspice berries
4 whole cloves
1/2 teaspoon fresh nutmeg (grated )
1 gallon apple cider
2 cups pineapple juice
1 cup fresh cranberries
1 orange (thinly sliced)

Steps:

  • Using an unfiltered coffee filter or piece of cheesecloth, place cinnamon sticks, allspice, cloves, and ginger. Tie off with butcher twine. Be sure to use cheesecloth if preparing in Instant Pot.
  • Place juice/cider, pineapple juice, orange slices, cranberries, grated nutmeg, and mulling spices in the slow cooker.
  • Cook on low for 4-6 hours or on high for 2-3 hours. Remove the bundle of spices and serve.
  • Place juice/cider, pineapple juice, orange slices, cranberries, grated nutmeg, and mulling spices in the instant pot. Be sure to either place spices directly in the inner pot or use a cheesecloth bundle if preparing in Instant Pot.
  • Cook on HIGH pressure for 15 minutes. Once cook time has elapsed, let the pressure release naturally. Once pressure has been released, strain and serve.
  • Place juice/cider, pineapple juice, orange slices, cranberries, grated nutmeg, and mulling spices in heavy-bottomed stock pan.
  • Bring to a boil then reduce heat to low. Simmer for 1-2 hours, watching closely. Remove spices and serve.

This homemade cider couldn't be easier: Cut a dozen of your favorite apples into wedges -- skins, seeds, stems and all -- and add to a slow cooker with some spices and water. A bonus: your house will smell delicious too!

6 large tart apples, such as Granny Smith (about 2 pounds)
6 large sweet apples, such as Gala (about 2 pounds)
12 whole cloves
6 cinnamon sticks
1/2 to 1 cup packed light brown sugar

Steps:

  • Thoroughly wash and dry the apples. Cut each apple into 8 wedges (skins, seeds and stems included) and transfer to a 7-quart slow cooker. Add the cloves, cinnamon sticks and 12 cups water. Cook on high, covered, for 4 hours.
  • Remove the lid and carefully crush the apples with a potato masher. Cover again and cook on high for another 2 hours.
  • Set a large, fine-mesh strainer over a large stockpot. In batches, ladle the apple mixture into the strainer and use the back of the ladle to press down on the apple pulp to extract the liquid. Discard the pulp. Stir in 1/2 cup of the brown sugar until completely dissolved. Taste and add additional sugar if needed.
  • Serve the apple cider hot or allow it to cool fully, then serve it chilled over ice.

  • Place cinnamon, cloves and allspice on a double thickness of cheesecloth; bring up corners of cloth and tie with a string to form a bag. , Place cider and brown sugar in a 3-qt. slow cooker; stir until sugar dissolves. Add spice bag. Place orange slices on top. Cover and cook on low for 2-3 hours or until heated through. Discard spice bag.

3 quarts apple cider or apple juice
1/4 cup orange juice
1/4 cup lemon juice
1 tablespoon grated orange zest
2 tablespoons brown sugar
Dash salt
1 to 1-1/2 cups brandy, optional

Steps:

  • Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag. Bring to a boil. Reduce heat to medium-low and simmer mixture for 30 minutes to blend flavors. Discard spice bag. Strain cider mixture and stir in brandy if desired. Serve immediately.

We've even used it for fundraisers. Hot spiced cider is a family tradition -- we just couldn't have Fall and Winter without it. In fact, I have a...

1 c brown sugar
2 tsp whole allspice
2 tsp whole cloves
1/2 tsp salt
1/4 tsp nutmeg
2 stick cinnamon
2 tsp orange peel or zest
1 gal apple cider -- not juice

Steps:

  • 1. Pour cider into pot. I use a party-sized coffee maker, but you could use a large dutch oven or stock pot.
  • 2. Mix the remaining ingredients together and place them in the basket of the coffee maker. If you're using a pot on the stove, you can stir in the sugar, then tie up the spices in a piece of cheesecloth. Or just let them float, and strain as you serve.
  • 3. Plug it in, and let it perk until it's done. The perking time varies from about 20-45 minutes, depending on the pot. Or heat to almost boiling, then reduce heat to simmer 30-60 min. Then reduce heat just to keep warm. It's ready to enjoy. The flavors get richer and deeper as it stays warm in the pot.
  • 4. NOTES: You can use either light or dark brown sugar, as you like -- the results are surprisingly different. Try it both ways! The recipe is easy to halve or multiply, to fit your needs. I make several spice recipes at once and just measure the ingredients right into zip-top sandwich bags. Then I just pop them into the deep freeze for quick prep later during the busy holiday season. The mix also makes wonderful home-made gifts -- for a teacher or colleague, for example -- in a decorative cello bag with a festive ribbon!

Reduce the heat before adding the rye whiskey so it maintains its kick. The toasted spices make the flavors so vibrant that the drink is delicious even without the whiskey. No slow cooker? This recipe is your stovetop option.

3 tablespoons green cardamom pods
2 teaspoons whole black peppercorns
2 (3- to 4-inch) cinnamon sticks, plus extra for garnish, if desired
1 teaspoon whole allspice berries
1 (4- to 5-inch) piece fresh ginger, peeled
1/2 lemon, scrubbed, thinly sliced and seeded, plus extra for garnish, if desired
1/2 small orange, scrubbed, thinly sliced and seeded, plus extra for garnish, if desired
Generous pinch of kosher salt
1 gallon apple cider, preferably unfiltered
1 (750-milliliter) bottle rye whiskey, plus more if desired (optional)
1 teaspoon vanilla extract

Steps:

  • Put the cardamom pods on a cutting board. Lay the flat of a chef's knife over them and gently smack the flat of the knife to lightly crush and crack the pods. Add the cardamom pods, peppercorns, cinnamon sticks and allspice berries to a medium skillet over medium-high heat. Toast the spices, shaking the pan often, until very fragrant, about 3 minutes.
  • Transfer the cinnamon sticks into a 6- to 8-quart slow cooker. Tie up the remaining spices into a cheesecloth bundle, and add that to the slow cooker as well. (If you don't have cheesecloth, you can use tea infusers or loose tea bags. You could also put the spices directly into the slow cooker, then strain the mixture as you serve.)
  • Cut the piece of peeled ginger in half lengthwise and smash each piece by laying the flat of the knife over it and smacking with the heel of your hand. (At this point, put the slow cooker in the spot where you'd like to serve it, because it will become difficult to move once you've added all of the liquid.) Add the ginger, lemon, orange, salt and apple cider to the slow cooker. Cover, and cook on high for 3 hours.
  • Reduce the heat to warm. Add the rye whiskey and vanilla and stir to combine. You can leave the cider on warm for several hours, allowing guests to serve themselves, adding additional citrus slices and cinnamon sticks to their mugs, as desired.
