EGGS IN HEAVEN

Eggs in Heaven image

Provided by Michael Symon : Food Network

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 12

3 tablespoons unsalted butter
1 small yellow onion, small diced
Kosher salt and freshly ground black pepper
1 red bell pepper, seeded and small diced
3 tablespoons all-purpose flour
2 cups whole milk
1 cup shredded Cheddar
1/2 cup cream cheese
1 cup diced ham
1/2 teaspoon freshly grated nutmeg
8 large eggs
1/2 teaspoon chili flakes

Steps:

  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to reach 350 degrees F.
  • Place a heavy-bottomed saucepan over the direct-heat side of the grill. Add the butter and allow it to melt. Add the onions with a pinch of salt and cook until beginning to soften, 2 to 3 minutes. Add the peppers and cook until slightly softened, 2 more minutes. Add the flour and stir to coat the vegetables. Stir in a third of the milk at a time, smoothing out any lumps, and bring to a simmer. Simmer for 30 minutes, allowing the raw flour flavor to cook out.
  • Whisk in the Cheddar and cream cheese and bring back to a simmer. Season with salt and pepper, then stir in the ham and nutmeg. Crack the eggs into the sauce, leaving spacing in between them. Move the pan to the indirect heat side of the grill and cover the grill with a lid. Cook until the eggs are set, 10 to 12 minutes. Sprinkle all over with the chili flakes and serve.

EGGS IN PURGATORY

Eggs in Purgatory image

It's unclear whether "purgatory" refers to the bubbling red tomato sauce used to poach the eggs in this easy skillet meal or the fire of the red-pepper flakes that the sauce is spiked with. In either case, this speedy Southern Italian dish, whipped up from pantry staples, makes for a heavenly brunch, lunch or light supper. Note that the anchovies are not traditional, but they add a subtle fishy richness to the tomatoes. However, feel free to leave them out.

Time 30m

Yield 3 to 4 servings

Number Of Ingredients 13

2 tablespoons extra-virgin olive oil, more for drizzling on toast
2 large cloves garlic, 1 thinly sliced and 1 halved
3 anchovy fillets, minced (optional)
Pinch of red-pepper flakes, more to taste and for serving
1 (28-ounce) can diced tomatoes
1/2 teaspoon fine sea salt, more to taste
1/4 teaspoon black pepper
1 large sprig fresh basil or rosemary, or a pinch of dried rosemary
2 tablespoons grated Parmesan, more for serving
1 tablespoon unsalted butter, more to taste
6 eggs
Sliced crusty bread, for serving
Small handful chopped basil or parsley, for garnish

Steps:

  • In a large skillet with a lid, heat oil over medium heat. Add the sliced garlic, anchovies and red-pepper flakes and cook just until the garlic turns golden brown at the edges, about 1 minute. Stir in tomatoes, salt, pepper and basil sprig, and turn the heat to medium-low.
  • Simmer, squashing tomato pieces with a wooden spoon or a potato masher, until the tomatoes break down and thicken into a sauce, 20 to 25 minutes. Stir in Parmesan, butter, salt and red-pepper flakes to taste.
  • Using the back of a spoon, make 6 divots into the tomato sauce, then crack an egg into each divot. Cover the pan and let cook until the eggs are set to taste, about 2 to 3 minutes for runny yolks. (If the pan is not covered, the eggs won't cook through, so don't skip that step.)
  • While the eggs are cooking, toast bread in a toaster or under the broiler. Rub warm toast with the cut garlic clove, drizzle with oil, and sprinkle with salt.
  • To serve, sprinkle eggs with more Parmesan and chopped herbs, then spoon onto plates or into shallow bowls. Serve with garlic toast and pass pepper flakes at the table.

EGGS IN HELL

Eggs in Hell image

Great, simple brunch dish. My husband asks for it all the time, sometimes even for dinner. This is an adaptation of a recipe from M.F.K. Fisher's "How to Cook a Wolf".

Provided by P48422

Categories     Breakfast

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 14

4 tablespoons olive oil
1 onion, chopped
1 green pepper, diced
2 garlic cloves, minced
1 (20 ounce) can tomatoes, with their juice, broken up a bit
4 tablespoons tomato paste
1 teaspoon dried basil or 2 teaspoons fresh basil
1/2 teaspoon dried marjoram or 1 teaspoon fresh marjoram
1/4 teaspoon chopped fresh rosemary
1 bay leaf
1 teaspoon honey
4 -6 large eggs
toasted English muffins or waffle
grated parmesan cheese

Steps:

  • Saute the onion, pepper and garlic in the olive oil in a large, deep skillet.
  • When they are softened, stir in the tomatoes, tomato paste, herbs and honey.
  • Simmer for about 10 minutes, then make indentations in the sauce (as much as possible) with a spoon, and break an egg into each indentation.
  • Spoon the sauce around and over the eggs, put a lid on the sauce and simmer gently until the eggs are poached.
  • Lift each egg out onto the toast/muffin/waffle, then spoon the sauce over top.
  • Sprinkle each with grated Parmesan cheese and serve.
  • MEXICAN STYLE: To change this dish to a more Mexican flavor, saute 2 tsp cumin seed with the onions and bell pepper.
  • Cut the basil and marjoram by half, add a pinch of chili powder and a dash of Tabasco sauce.
  • Before the eggs are finished poaching, sprinkle them with grated cheddar cheese.
  • Serve them with tortillas and your favorite Mexican toppings: diced avocado, sour cream, chopped onion, etc.

EGGS IN HELL

EGGS IN HELL image

Categories     Tomato

Yield 2-4 servings

Number Of Ingredients 14

1 Whole Onion, Chopped
6 Cloves Garlic, Minced
2 Pounds Tomatoes, either fresh paste tomatoes such as Roma, or canned, if you use canned I use 2 28 oz cans for this recipe for fresh I use 12 Roma tomatoes
Olive Oil
Butter
Good Bread (for toast)
Chives (or other herb for the toast)
Salt
Pepper
Oregano
5 Eggs
1 cup red wine
Mushrooms (optional)
1&1/2 TSP Ground Bhut Jolokia Pepper (or other hot pepper of your choice)

Steps:

  • To start, sweat your onions with plenty of salt and pepper, then add the garlic as soon as the onions become translucent. Once you add the garlic you can go ahead and add the tomato, more salt and pepper ( i use about 4 big pinches of salt on both the onions and the tomatoes, and about 40 grinds of pepper on both steps as well), wine, oregano, and ground hot pepper. Stir to combine and simmer for at least 2 hours, use the conisistency of the sauce as a guide to time, should be a little more liquid than spaghetti sauce but not much.once the sauce is within 20 minutes add chopped mushrooms if desired, and toast your bread with butter, salt, pepper, garlic (either fresh rubbed on the bread or powder) and your herb I used chives. Toast the bread in a broiler or toaster oven (i used broiler at 350 for 15 min), then place the finished tomato sauce in an oven safe pan, (i used a cast iron skillet), and crack 5 eggs into it. (the number of eggs depends on the size of the pan more than anything) Bake at 350 for 20 minutes, then serve over the toast.

  • Pour the olive oil into a deep pan (with a lid) and warm over medium-high heat. Add the chopped onion, garlic, jalapeños and chilli flakes to the hot oil; cook until softened and light brown, about 10 minutes.
  • Once the sauce is boiling, immediately lower the heat to a simmer. With the sauce at a gentle simmer, carefully crack an egg, first into a small saucer or ramekin. Using a spoon or ladle, press out a place for the egg to rest, then gently pour it out of the bowl into the sauce. Repeat with each egg, one by one into the tomato sauce. Season with salt and pepper, to taste.
  • Cover with a lid and cook until eggs are set as desired. I like it when the whites set but the yolks are still quite runny; about 3 to 5 minutes.

  • Pour the olive oil into a skillet, then add the garlic, scatter in the red pepper flakes, and heat the skillet over medium, stirring, for 1 minute.
  • Crack 1 egg at a time into a small dish and pick out any shell fragments before you slip it into the tomato mixture. Sprinkle the Parmesan over the egg whites, leaving the yolks exposed if you like them runny or spooning the tomato sauce completely over the eggs if you like your yolks hard-cooked. (Conversely, if you’re obsessive about the whites of your eggs being set, maybe sprinkle the yolks with the Parmesan, seeing as it’s hard to tell when they’re covered with cheese.) Partially cover the skillet with a lid. Let the tomato sauce bubble for about 5 minutes, by which time the white should be set but the yolk, if left uncovered, still runny. Keep an eye on the eggs, as the timing will vary somewhat.
  • Remove the skillet from the heat and serve, if so wished, sprinkled with a little (or a lot) more Parmesan and some chile oil or hot sauce, and accompanied by bread for dunking, if so desired.
