Ingredients

1 package (17.3 ounces) frozen puff pastry, thawed
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
4 ounces cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup crumbled feta cheese
2 large eggs, divided
2 garlic cloves, minced
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

Preheat oven to 400°. Unfold puff pastry; cut each sheet into 12 sections. Place in greased mini muffin cups, pressing gently onto bottoms and up sides, allowing corners to point up., In a large bowl, stir together spinach, cream cheese, mozzarella, feta, 1 egg, garlic, pepper and salt. Spoon 1 tablespoon into each cup. Bring pastry corners together and pinch to seal. In a small bowl, beat remaining egg. Brush over pastry edges. Bake until puffed and golden brown, about 20 minutes.

Preparation: Boil the potato, peel and chop into small pieces. Also, boil the peas and carrot. I have cooked them together in the microwave for 5 minutes.
Make the stuffing: Heat the oil in a pan on medium heat. Once hot add onion, ginger and green chili. Sprinkle little salt and mix. Cook till onions become soft and light pink in color.
Then add carrot, peas, potatoes, all the spice powders (turmeric, red chili powder, coriander powder, cumin powder, garam masala) and salt.
Mix well and mash few potatoes while mixing. It should be the semi-chunky mixture. Cook for 1-2 minutes.

Grab a box grater and using the largest side, shred the frozen vegan butter onto a plate. Place in the freezer while you make the dough.
In a large bowl, combine the flour and salt. Then add the softened vegan butter, mixing with a fork until it resembles breadcrumbs.
Gradually stir in the water and continue mixing until all the flour starts to come together. You can use your hands at this point to help form the dough. It will look dry at first but keep pressing the dough together until the bowl looks fairly clean.
Lightly flour a clean surface and knead the dough, using your hands, for about 4 minutes until it is soft and smooth. Shape into a ball and cover with plastic wrap. Rest in the refrigerator for 15 minutes.
