5 egg roll wrappers
10 sticks string cheese
water
oil, for frying
marinara sauce

Steps:

  • Slice the egg roll wrappers in half.
  • Place a stick of string cheese on the edge of the egg roll wrapper, then fold the sides of the wrapper over the ends of the cheese.
  • Wet the other edge of the wrapper with water, then roll it up tightly, pressing the edge to make sure it's sealed.
  • Repeat with the remaining wrappers and cheese.
  • Heat oil in a pot.
  • Fry the sticks until golden brown, then drain on a paper towel.
  • Serve with marinara.
  • Enjoy!

1 cup flour
2 large eggs, beaten
1 cup seasoned breadcrumbs
nonstick cooking spray, as needed
scallion, sliced, to taste
marinara sauce, for dipping

Steps:

  • Preheat a waffle maker to medium heat.
  • Cut the mozzarella into four equal slices, then cut each slice in half into square chunks, making eight chunks total.
  • Place the flour, beaten eggs, and bread crumbs into three separate bowls.
  • Dredge a mozzarella square in the flour, shaking off the excess, then dip into the beaten egg. Roll it in the bread crumbs, making sure that it is completely coated. Put the breaded mozzarella on a plate; repeat with the remaining mozzarella chunks.
  • Spray the waffle iron on both sides with cooking spray.
  • Cook the mozzarella squares in the waffle iron for about two minutes, until the bread crumbs are golden brown and the cheese is starting to bubble.
  • Garnish with scallions and serve with marinara!

12 large egg roll wrappers (see note)
Oil for deep-fat frying
Marinara or spaghetti sauce

Steps:

  • Place a piece of string cheese near the bottom corner of one egg roll wrapper (keep remaining wrappers covered with a damp paper towel until ready to use). Fold bottom corner over cheese. Roll up halfway; fold sides toward center over cheese. Moisten remaining corner with water; roll up tightly to seal. Repeat with remaining wrappers and cheese., In an electric skillet, heat 1/2 in. of oil to 375°., Fry sticks, a few at a time, for 30-60 seconds on each side or until golden brown. 2 eggs
2 cups milk
1 ½ cups Italian seasoned bread crumbs
10 egg roll wrappers
10 mozzarella string cheese sticks
1 quart vegetable oil for frying

Steps:

  • Beat the eggs in a mixing bowl. Whisk in the milk, then set aside. Place the bread crumbs into a plastic bag, and set aside.
  • Separate and place an egg roll wrapper onto your work surface with one of the tips pointed towards you. Moisten the two far edges of the wrapper with water. Place a string cheese stick onto the corner nearest you, and roll it in 1/3 of the way, fold over the right and left corners, then continue rolling to the end, pressing to seal. Repeat with the remaining string cheese sticks and egg roll wrappers.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Dip the mozzarella sticks into the egg wash, then toss in the bread crumbs. Cook in batches in the hot oil until crisp and golden brown, 3 to 4 minutes.

2 lb russet potato, peeled and quartered
2 cloves garlic, minced
2 tablespoons fresh flat-leaf parsley, finely chopped
½ cup grated parmesan cheese, plus more for garnish
4 large eggs, beaten, divided
salt, to taste
black pepper, to taste
12 sticks mozzarella cheese, halved crosswise
1 cup all-purpose flour
1 cup plain breadcrumbs
oil, for frying
marinara sauce, for serving
fresh parsley, chopped, for garnish

Steps:

  • Add the potatoes to a large pot with enough cold water to cover them. Bring to a boil over high heat and cook until tender when pierced with a fork, about 30 minutes.
  • Drain the potatoes and transfer to a large bowl. Use a potato masher to mash the potatoes until there are no large chunks left.
  • Add the garlic, parsley, Parmesan cheese, 1 beaten egg, salt, and pepper. Mix well.
  • Take a spoonful of potatoes and form into a patty.
  • Place a cheese stick in the middle and wrap the potato around the cheese until it is evenly covered.
  • Arrange the formed croquettes on a parchment-lined baking sheet and freeze for 30 minutes.
  • Place the flour, 3 remaining eggs, and bread crumbs in 3 separate shallow bowls. Dredge the croquettes in the flour, shaking off any excess; then dredge in the egg and the bread crumbs.
  • Heat the oil in a large pot until it reaches 350°F (180°C). Fry the croquettes for 3 minutes, or until golden brown.
  • Transfer the croquettes to a wire rack set over paper towels to drain the excess oil.

1 cup dry bread crumbs
2-1/2 teaspoons Italian seasoning

Steps:

Steps:

  • Lay the egg roll wrappers flat. Lay a piece of the thinly sliced cheese on top of the egg roll wrapper. From the corner of the wrapper, take your cheese stick and roll towards opposite corner tightly and cut off the extra material of the wrapper on the ends.
  • Heat your skillet with oil to medium/high heat.

1/4 cup flour
1 cup Italian style breadcrumbs
2 eggs
1 tablespoon milk
1 lb mozzarella cheese, cut into 3/4 inch x 3/4 inch strips (or you can use string cheese and cut each in half)
1 cup vegetable oil
1 cup jarred pizza sauce or 1 cup marinara sauce

Steps:

  • Whisk eggs and milk together.
  • Coat each piece of cheese with flour, then dip in egg and then roll in bread crumbs.
  • Dip in egg and crumbs again.
  • Freeze before frying.
  • Heat oil in skillet and cook sticks for about a minute on each side, or until golden and before cheese starts to leak.
  • Drain on paper towels.
  • Serve with sauce for dipping.

  • In a bowl, whisk the eggs, milk, salt, and pepper until smooth.
