1/4 cup extra-virgin olive oil
2 tablespoons fresh lime juice
1 tablespoon freshly grated gingerroot
Salt and freshly ground black pepper
6 cups mixed greens
2 tomatoes diced
1 cup peeled and diced cucumber
1 cup sliced red onion
1/8 cup chopped fresh mint leaves
3/4 cup fresh picked cilantro leaves

Steps:

  • Whisk all the vinaigrette ingredients together in a small bowl. Season, to taste, with salt and freshly ground black pepper.
  • In a salad bowl, combine all the salad ingredients. Add a little bit of the vinaigrette and toss to coat. Serve the remaining vinaigrette on the side.

I created this salad to replicate one I tried on a cruise several years ago. It goes over very well at family gatherings and potlucks year-round. 2 medium limes
1 bunch fresh cilantro leaves, stems removed (about 2 cups)
1 cup sugar
1 Thai red chile pepper, seeded and chopped
2 garlic cloves, halved
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups canola oil
1 head Chinese or napa cabbage, finely shredded
1 small head red cabbage, finely shredded
1 English cucumber, chopped
1 package (10 ounces) frozen shelled edamame, thawed
2 medium ripe avocados, peeled and cubed
1 cup shredded carrots
3 green onions, sliced

Steps:

  • Finely grate enough zest from limes to measure 1 tablespoon. Cut limes crosswise in half; squeeze juice from limes. Place zest and juice in a blender; add cilantro, sugar, red chile pepper, garlic, salt and pepper. While processing, gradually add oil in a steady stream., In a large bowl, combine cabbages, cucumber, edamame, avocados, carrots and green onions. Drizzle with dressing; toss to coat.

  • Place all ingredients in a blender; cover and process until blended. Refrigerate, covered, until serving.

Delicious for a quick summery dinner. Grilled boneless chicken breasts served over a hearty green salad, and this dressing, voila!

1 jalapeno pepper, seeded and coarsely chopped
1 clove garlic
¾ teaspoon minced fresh ginger root
¼ cup lime juice
⅓ cup honey
2 teaspoons balsamic vinegar
½ teaspoon salt, or to taste
¼ cup packed cilantro leaves
½ cup extra-virgin olive oil

Steps:

  • Place the jalapeno pepper, garlic clove, and ginger into a food processor or blender; pulse until the jalapeno and garlic are finely chopped. Pour in the lime juice, honey, balsamic vinegar, and salt, add the cilantro leaves; pulse a few times to blend. Turn the food processor or blender on, and slowly drizzle in the olive oil until incorporated into the dressing. Season to taste with salt before serving.

1 1/2 large garlic cloves
3 yellow chilies, seeded (chilies with a low Scoville Unit score)
1 bunch green onion (6 - 7, white and green parts)
1 cup of loosely packed fresh cilantro leaves
1 tablespoon Mexican oregano
1 tablespoon ground cumin
1/2 teaspoon red pepper flakes
1/2 teaspoon granulated white sugar
1/2 teaspoon salt
1/3 cup white balsamic vinegar
1 cup grape seed oil (or olive oil)

Steps:

  • Coarsely chop the garlic, seeded, chilies and green onions. Place in the food processor. Add the remaining ingredients except for the oil. Pulse the vegetables, spices, and vinegar in the food processor for 15 to 30 seconds.
  • Add the oil, and pulse until well blended and a smooth consistency is achieved. Taste the dressing, and season for heat, sweet, and salt. Make ahead to allow flavors to marry.
  • The dressing is only temporarily emulsified and will separate. Dress your salad just before serving, or enable guests to personally ladle the dressing on their own. Yield is about 1 ½ cups.

Steps:

  • Put all ingredients in blender/food proccessor and process until smooth.
  • You could also chop a small amount of cilantro and put it in after your dressing has been blended for"chunks" of cilantro.
  • Store in the refrigerator.
  • This is one of those things that gets better as the flavors are allowed to blend, so you probably want to make ahead of time.

This is my best take on the dressing that is used in the El Torito restaurants in southern California. Be sure to toss some roasted pepitas and crumbled Cotija or Manchengo cheese on top of your salad for the full effect!

1 ½ cups mayonnaise
¾ cup canola oil
⅓ cup toasted pumpkin seeds
¼ cup distilled water
¼ cup red wine vinegar
¼ cup crumbled Cotija cheese
2 roasted Anaheim chile peppers
2 cloves garlic, crushed
½ teaspoon salt
¼ teaspoon freshly ground black pepper
2 bunches fresh cilantro, rinsed and stemmed

Steps:

  • Blend mayonnaise, canola oil, pumpkin seeds, water, vinegar, Cotija cheese, roasted chile peppers, garlic, salt, and pepper in a blender until smooth, about 1 minutes. Add cilantro in batches, blending each to incorporate completely before adding the next, 30 to 60 seconds per batch.
  • Pour dressing into an air-tight container and refrigerate at least 1 hour before serving.

1 teaspoon salt
1 cup cilantro, packed
1 cup parsley, packed
1/4 cup sherry wine vinegar (you can substitute either red wine or cider vinegar)
3/4 cup olive oil (I use lite)
1/2 teaspoon hot pepper sauce
1 pinch sugar

Steps:

  • Using your steel knife in the food processor mix garlic and salt; process until it is a paste.
  • Add cilantro and parsley; process to a fine mince.
  • Add vinegar; process for 10 seconds.
  • Add oil in a slow steady stream with the processor on.
  • Add hot pepper sauce (to match your taste) and a pinch of sugar.
  • Chill the dressing for several hours in a glass jar; shake to combine before using.
