Chocolate-Glazed Fingers image

Enjoy a chocolate-glazed version of our Basic Shortbread Wedges, which are buttery and delicious. Drizzle with melted chocolate for a rich and indulgent finishing touch.

8 ounces (2 sticks) unsalted butter, room temperature, plus more for pan
2 cups all-purpose flour
3/4 teaspoon coarse salt
1/2 cup confectioners' or granulated sugar
1 teaspoon pure vanilla extract (optional)

Steps:

  • Butter an 8 1/2-inch cake or springform pan; set aside. Sift together flour and salt into a small bowl; set aside. Place butter in bowl of electric mixer fitted with paddle attachment. Cream until fluffy, 3 to 5 minutes. Add sugar, and continue to beat until very light in color and fluffy, occasionally scraping down the sides of the bowl with a spatula, about 2 minutes more. Add vanilla, if using. Add flour mixture, and combine on low speed, scraping with spatula if necessary, until flour is just incorporated and dough sticks together when squeezed with fingers.
  • Pat dough into prepared pan. If rolling out dough to cut into shapes, form into a flat disk; wrap in plastic. Chill until firm, at least 1 hour.
  • Roll out basic dough 1/2 inch thick. Cut into 1-by-3-inch rectangles; chill. Bake until firm and just starting to color, 20 to 25 minutes. When completely cool, drizzle with chocolate glaze.

Use this chocolate glaze with our Chocolate-Glazed Fingers. Chocolate glaze is also delicious poured over a big bowl of ice cream.

9 ounces semisweet chocolate, roughly chopped
2 tablespoons sugar
1 tablespoon light corn syrup
1/2 teaspoon pure vanilla extract

Steps:

  • Place half the chocolate in top of double boiler, or in a bowl, over a pan of hot but not boiling water. Stir chocolate with a wooden spoon until it is melted. Gradually add remaining half of chocolate, stirring occasionally until smooth. Remove from heat.
  • Meanwhile, combine the sugar, corn syrup, and 1/4 cup water in a small saucepan. Bring mixture to a boil, and stir until sugar is dissolved. Remove pan from heat. Whisk the sugar syrup into the melted chocolate until smooth. Stir in the vanilla extract. Keep the glaze warm by setting over a pot of warm water. The glaze will keep up to 2 days in the refrigerator; it can be rewarmed in a hot-water bath before drizzling.

The combination of cocoa and ground cinnamon is commonly found in Mexican chocolate and hot drinks; we've used it here to flavor a traditional Scottish cookie.

3 sticks (1 1/2 cups) unsalted butter, room temperature, plus more for pan
2 1/2 cups plus 2 tablespoons all-purpose flour
4 1/2 tablespoons Dutch-process cocoa powder
Heaping 1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup superfine sugar
Granulated sugar, for sprinkling

Steps:

  • Preheat the oven to 325°F. Butter a 12-by-8-inch rimmed baking sheet, and line with parchment paper, leaving a 1-inch overhang on long sides; set aside. In a medium bowl, whisk together flour, cocoa, cinnamon, salt, and baking soda until combined.
  • In an electric mixer fitted with the paddle attachment, beat the butter and superfine sugar on medium-high speed until light and fluffy, 3 to 4 minutes, scraping down the sides of the bowl. Add flour mixture, and beat on medium speed until just combined.
  • Using a small offset spatula, evenly spread dough in prepared baking sheet. Chill in the freezer or refrigerator until dough is firm, about 15 minutes. Prick dough all over with a fork; bake until just firm to the touch, about 20 minutes. Transfer to a wire rack. While still hot, use a large knife to cut shortbread into 4-by-1-inch pieces. Sprinkle with granulated sugar. Cool completely in the pan. Shortbread can be kept in an airtight container at room temperature for up to 1 week.

1 cup butter or margarine, softened
3/4 cup powdered sugar
1 teaspoon vanilla
2 1/2 cups Gold Medal™ all-purpose flour
1 cup semisweet chocolate chips
2 teaspoons shortening

Steps:

  • Heat oven to 350°F. In large bowl, beat butter, powdered sugar and vanilla with spoon. Stir in flour. (If dough is crumbly, mix in 1 to 2 tablespoons butter or margarine, softened.)
  • Roll dough 1/2 inch thick on lightly floured surface. Cut into small shapes by hand or use cookie cutters. Place 1/2 inch apart on ungreased cookie sheet.
  • Bake 14 to 16 minutes or until set and bottoms are light golden brown. Immediately remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • In small microwavable bowl, microwave chocolate chips and shortening uncovered on High 1 to 1 1/2 minutes or until melted; stir until smooth. Dip half of each cooled cookie into melted chocolate. Place on waxed paper until chocolate is set.

Extra-virgin olive oil, for dish
2 cups ricotta or small-curd cottage cheese
4 large eggs
1 1/2 cups half-and-half
1 1/4 cups grated Parmesan (about 4 ounces)
1 teaspoon finely grated lemon zest, plus 1 tablespoon juice
Pinch of freshly grated nutmeg (optional)
Coarse salt and freshly ground pepper
1 pound chopped frozen spinach, thawed and squeezed of excess moisture
4 sheets matzo

Steps:

  • Preheat oven to 400 degrees. Brush bottom and sides of an 8-by-8-inch baking dish with oil.
  • Whisk together ricotta, eggs, half-and-half, 3/4 cup Parmesan, zest, and nutmeg. Season generously with salt and pepper. In another bowl, toss spinach with lemon juice; season with salt and pepper.
  • Place 1 matzo sheet in bottom of prepared baking dish. Pour 1 cup cheese mixture over matzo. Sprinkle evenly with one-third of spinach mixture. Repeat layers 2 more times. Top with remaining matzo and drizzle with remaining cheese mixture. Sprinkle with remaining 1/2 cup Parmesan. Bake, uncovered, until puffed and golden brown on top, 35 to 40 minutes (cover with foil if browning too quickly). Let cool 15 minutes, then serve.

  • Sift the plain flour (200g) and rice flour (100g) into the butter and sugar mixture and add in the vanilla extract (1 tsp). Mix together until combined - You don't want to work the mixture too hard, if you have an electric mixer then use a low to medium setting for about 1 minute. If you are using your hands then squeeze the mixture together before kneading lightly until you have a soft dough.
  • Roll out the dough to a depth of about 2cm and place onto baking parchment in a baking tray. I found that a rectangle shape of about 16cm long and 12.5 cm wide meant that I could cut the dough into 10 fingers, however make whatever shape you want! To roll the dough I found it easier to first lay out some clingfilm on the work surface, put the dough on top of that and roll it flat a little, and then put baking parchment on top of the dough. I then rolled out the mixture to the proper dimensions with the baking parchment still on top. This meant I could then easily flip the dough onto the baking tray with the baking parchment now at the bottom and cling film covering the top.
  • Put the baking tray in the fridge for at least 30 minutes to help the mixture keep its shape in the oven.
