- Preheat oven to 350 degrees. Spray a whoopie pie pan with nonstick cooking spray.
- Break eggs, one at a time, into a bowl and transfer to pan slots.
- Pierce each yolk with a knife to allow yolk to spread. Then season with salt and pepper. Use a butter knife or rubber spatula to run around each egg.
- Toast English Muffins. Add slice of cheese, meat of choice and egg circle.

EGG MCMUFFIN PIE/CAMP IRONS
After trying Pamela's frozen breakfast bagels and tweaking that recipe to my family's taste, I decided to give the idea of pre-cooked and frozen eggs a try on a recent camping trip. The result, I decided, was post-worthy. For those of you familiar with camp irons or pie irons, if you've tried doing bacon and eggs sandwiched between two slices of bread, the result may have been rather messy, since the bread is usually toasted to perfection long before the egg is cooked. This recipe will fix that.

- Coat a muffin tin thoroughly with cooking spray.
- Break each egg into a muffin cup and add crumbled bacon or cubed ham to each. If using onion and green pepper, add as well.
- Bake at 400F for approximately 12 minutes, or until eggs are set.
- Let cool a few minutes and then remove egg 'patties' to a wire rack to finish cooling.
- Once eggs are completely cooled, place in large plastic freezer bag, removing as much air as possible. Freeze until ready to use -- or ready to pack into camping cooler. As long as they're kept nice and cool, they should last a week.
- Once you're ready to make your pie irons, pre-heat the irons in the campfire and then give them a good coating of cooking spray.
- Place a slice of bread on one side and place an egg 'patty' in the center. Top with half a cheese slice (folded in half to make a nice neat square on top of the egg) and a bit of salsa, if desired.
- Cover with another slice of bread, close your pie iron, place in campfire and cook until done -- approximately 5 minutes.
- Enjoy!

Developed by a McDonald's franchisee in Santa Barbara to have a breakfast sandwich that emulated an "eggs benedict." The McMuffin has become the standard breakfast sandwich. These are so quick n' easy to make with minimum clean up.

- You will also need an Egg Ring, or a tuna can with the top and bottom off.
- Pre-heat an electric griddle to 275 degrees.
- Toast your English muffin by laying both sides face down on the griddle and applying pressure with spatula.
- This takes 1 to 1-1/2 minutes.
- (they should be medium brown) Set aside.
- Lay your egg ring/can on the pre-heated grill.
- Spray with cooking spray or a pat of butter to prevent sticking.
- Crack the egg and pour into ring on the grill.
- Break the yolk with a sharp instrument so it flows.
- Butter both toasted halves of the English muffin with melted butter.
- Put a slice of American cheese on the bottom half.
- 2 to 2½ minutes after you started cooking the egg, the whites should firm up, and the yolk should still be a bit "liquidly".
- Carefully remove the ring, leaving the egg on the griddle. You may have to "slice" around the edges if it sticks.
- Very carefully turn the egg over, and lay one slice of Canadian bacon on the griddle.
- Cook the egg 45-60 seconds after turning, after about 30-45 seconds, "flip" the Canadian bacon, and remove the egg, placing it on the bottom half (cheesed half) of the English muffin.
- 20-30 seconds after flipping the Canadian bacon, remove.
- Place the Canadian bacon on top of the cooked egg, and cover with the top of the toasted English muffin.

- Meanwhile, coat a ramekin with cooking spray and crack your egg into it. Sprinkle with salt and pepper and scramble it up. Put the ramekin in the microwave and microwave for 40-55 seconds. Start with 40 and see if your egg is cooked and not too jiggly. Add another 5 seconds at a time if you need it cooked a bit more.
