I always fix this casserole ahead of time when overnight guests are visiting so I have more time to spend with them. Then I simply add some toast or biscuits and fresh fruit for a complete meal that everyone loves. This dish also reheats well. -Pamela Norris, Fenton, Missouri

Number Of Ingredients 6

1-1/2 pounds bulk pork sausage
3 cups frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese
8 large eggs, lightly beaten
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup evaporated milk

Steps:

  • Crumble sausage into a large skillet. Cook over medium heat until no longer pink; drain. Transfer to a greased 13x9-in. baking dish. Sprinkle with hash browns and cheese. , In a large bowl, whisk the remaining ingredients; pour over the top. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

1 tablespoon oil
1 lb bacon, cooked, drained, and diced
1 tomato, diced
1 cup broccoli floret, finely chopped
2 cups potato hash brown
2 cups shredded cheddar cheese
1 cup pancake mix
4 eggs
2 cups milk, of choice
½ teaspoon pepper
¼ teaspoon salt
scallion, thinly sliced, for serving

Steps:

  • Preheat oven to 400°F (200°C).
  • Place the bacon, tomato, and broccoli in greased casserole dish.
  • Sprinkle hash browns and cheese on top.
  • In a large bowl, whisk together pancake mix, eggs, milk, salt, and pepper.
  • Pour pancake mixture over ingredients in the casserole dish.
  • Bake for 45 minutes.
  • Let cool for 5 minutes before serving.
  • Top with scallions, and serve.
  • Enjoy!

1 slice bread
¼ tomato, diced
1 slice ham, diced
1 green onion, sliced
1 egg, beaten
salt, to taste
pepper, to taste
shredded mozzarella cheese, to taste

Steps:

  • Cut the middle of the bread from the slice leaving a ½-inch (1 cm) border of crust.
  • In a pan, place the tomato, ham, and green onion.
  • Cook over medium heat, stirring for about two minutes.
  • With a spatula or spoon arrange the toppings into the shape of the inside of the bread.
  • Place the crust over the toppings.
  • Carefully pour the egg into the hole on top of the toppings to make sure the egg does not spill over.
  • Season with salt and pepper and a sprinkle of mozzarella cheese.
  • Place the inside of the bread back on top and once the eggs are cooked and cheese is melted flip over, about two more minutes.
  • Enjoy!

Here's what you need: bread, butter, swiss cheese, ham, spinach, eggs, chive, butter, flour, milk, salt, pepper, ground nutmeg, gruyère cheese, grated parmesan cheese

18 slices bread, white sandwich bread
3 tablespoons butter, softened
18 slices swiss cheese
12 slices ham
4 cups spinach
6 eggs
chive, chopped, to serve
2 tablespoons butter
3 tablespoons flour
2 cups milk
1 teaspoon salt
½ teaspoon pepper
1 pinch ground nutmeg
2 cups gruyère cheese, grated
2 cups grated parmesan cheese

Steps:

  • Preheat the oven broiler to high. Line a baking sheet with parchment paper.
  • On a cutting board, butter all the sandwich bread and transfer to the prepared baking sheet.
  • Using a glass, cut out the centers of 6 slices of bread.
  • Toast the bread under the broiler for 5 minutes, or until toasted. Keep a close eye on it so it doesn't burn.
  • Reduce the oven temperature to 350˚F (180˚C).
  • Make the Béchamel sauce: Melt the butter in a small saucepan over medium heat. Add the flour and whisk until it darkens slightly.
  • Add the milk and whisk to combine. Reduce the heat to low and simmer until reduced by half.
  • Remove the pot from the heat and add the salt, pepper, nutmeg, Gruyère, and Parmesan and stir until fully incorporated.
  • Line a 9 x 13-inch baking dish with parchment paper.
  • Lay 6 pieces of toast in the bottom of the dish. Top with 9 slices of Swiss cheese, 6 slices of ham, and 2 cups of spinach. Repeat to make another layer and top with the hollow-centered toast.
  • Crack an egg into each hole. Carefully ladle the Béchamel sauce over the bake, leaving the yolks exposed.
  • Cover and bake for 35 minutes, then uncover and bake for 10 minutes more, until the eggs are cooked to your liking and the Béchamel is starting to brown in spots.
  • Slice and serve garnished with chives, if desired.
  • Enjoy!
